In this issue of Moms in the Know, we focus on our homes, keeping in mind the old
saying, “Home is where the heart it is.” We all want our homes to be where the heart
is -- places of comfort and rest-- but they often seem like Grand Central Station, with
everyone coming and going and barely slowing down to eat. Instead we just grab our
things and hurry on to our next destination! As with everything in life, we are striving
for a balance; we all want our homes to be a safe harbor and an efficient control center
from which we send our family members out into the world. This is one of the many
parenting task that has its difficulties, to say the least.
Moms in the Know is a resource to help you navigate these difficult parenting tasks.
Our goal is to provide you with helpful and fun information to make parenting easier.
We have a calendar to let you know about fun events to plan for, information on great
businesses that help in all areas in of your life, and some excellent tips from Moms. In
this issue, we debut a new column by Caroline Baxter Lambert, “Island View.” It will
address the many topics a family deals with, often while we gather around our kitchen
table or island. Make sure to check out “Real Estate 101, packed with with pointers to
help you to buy or sell a house.

Real Estate 101
Just the thought of real estate invokes many different feelings and
opinions. Excitement at finding a new home, dread of not being able
to sell your home, uncertainty because of the recent market. Here
are a few basic real estate dos and don’ts that will help when you start your home
search or put your house on the market.
F I R S T T I M E H O M E B U Y E R S
• Talk to mortgage brokers to see where your credit is and the housing price you
qualify for.
• Start your home search on the internet. Many realtors have their own websites,
but you can also use trulia.com, realtor.com, or Zillow.com.
• Find your realtor. An experienced agent who has lived in the area and knows it
well is helpful. (FYI – Your realtor is paid by the seller when you find a house
and buy it.)
• Once you find a home that you like, you put in an offer. Your agent will submit
it to the seller who will then have 24 hours to decline, accept, or come back
with a counter offer.
• A ratified contract means that everyone has agreed to all the terms on the
contract.
• You will then need to have a home inspection and a termite inspection. Home
inspections cost between $300 and $600 based on square footage and termite
bonds can be $100-$200. The home inspector will do a thorough, scary report
on the condition of the home. Inspectors are liable for anything not reported
so they are extremely careful to list it all. You then negotiate repairs with the
seller.

• Continue to communicate with your mortgage broker.
• Go to closing and walk out with keys to your new home.

• Clean it up. Fix dings on the walls, new paint, clean carpets, minor landscaping.
• You want your home to look or seem really big, bright and open so declutter!
Take out furniture, family photos off walls and cabinets, get rid of the
knickknacks. Rent a storage unit if you have a lot of stuff. People will be looking
in closets too so straighten those up.
• We know you love your pets, but potential buyers may not. If possible, remove
the pets from the home during showings. Also, be aware of pet odor.
• It’s a good idea to spend a few hundred dollars for a home inspection. That way
you are not surprised and can fix some of the repairs.
• Hire a reputable Realtor to list and market your home. You as the seller will pay
real estate commissions with typically 3% to the buyer’s agent and 3% to your
agent.

Island View
In this issue, we begin a new series, Island View. The title comes from
a couple of things. The first is my kitchen, which, like many kitchens,
has an island in the center. I sometimes feel I spend my whole life
standing at my “station” behind that island. I scramble the eggs and deal them out
in the mornings; I hand out snacks in the afternoons while supervising homework; I
prep salad for supper while stirring whatever pot is on the stove. I assemble lunches,
hollering out how many minutes before we have to roll out the door.
The island is the center of our kitchen and the kitchen is the heart of our house. This
is where we talk, debate, work, celebrate, and share. Over the years of parenting,
many different issues have washed up on our island-- concerns about breastfeeding
have been replaced by struggles to figure out how to monitor internet access. I
remember when alphabetizing the second grade spelling words was the hardest
homework assignment ever and took close to an hour, with erasing and rewriting.
Now there are math problems that I am only too happy to turn over to my husband
while I drill on the the parts of speech. The background noise in our kitchen is the
radio, bringing in the current news--tragedies, election results and discoveries. It’s
where we live a big percentage of our lives.
John Donne famously wrote, “ No man is an island/Entire of itself/ Every man is a
piece of the continent/ A part of the main.” That’s the other idea in the title-- that
it just makes sense to stay connected to other families, and share insights on what’s
working and what isn’t. In Island View, you will find links to websites, things I’ve
learned the hard way, and other moms’ insights to help with issues your family is
dealing with -- from potty training to figuring out how to figure out allowance. Of
course, since food is one of the main issues of every family’s life, I want to share
things like the blogs I am inspired by, recipes that work, new ideas for packing
healthy lunches, and what was a hit at my dinner table, among other things.

Island View
This time the postcard from my island is my “Way Better than Eggos” strategy. It
started with a recipe from Pam Anderson’s book, The Perfect Recipe for Losing Weight
and Eating Great. Her recipe for pancakes includes a small scoop each of rolled oats,
cornmeal, and whole wheat flour, along with the usual pancake ingredients. I tried
them out and my whole family loved them-- and were unaware of the whole grain/
high fiber action that was going on. Making pancakes on a weekend is one thing, but
they were not going to be a before school breakfast until I tried freezing a batch. I was
amazed by how well it worked. I put the frozen pancakes in skillet over low heat and
popped a lid on it while everything else was going on. When it was time for breakfast
there were hot, soft, fluffy pancakes ready to eat, with no effort on my part. This is
way cheaper and far healthier than frozen waffles-- and you’ll have something grownups
would like to eat, too.
P.S. Here’s another trick to take it a step further: when you put together the dry
ingredients, put out several ziplock bags and make four or five bags’ worth. Dump
one scoop of flour in to the bowl, and one into each of the bags, and so on with the
remaining ingredients. Now you have your own homemade pancake mix; just add the
oil, eggs and buttermilk. On a weekend morning, pull out your own homemade mix and
make a batch of pancakes, and then freeze the leftovers for the rest of the week. ( You
may want to make a double batch depending on the size of your family or the eagerness
of your pancake eaters.)
Try this, and you will have a summer morning breakfast that can easily be prepared by
most children (with a bit of training). This is so easy and such a hit in my family that I
always have a stockpile in my freezer.

Whole Grain Delicious Pancakes (adapted slightly from Pam Anderson)
1 cup unbleached all purpose flour
1/3 cup rolled oats (old fashioned oatmeal, not instant or quick)
1/3 cup cornmeal ( I use yellow cornmeal)
1/3 cup whole wheat flour
4 teaspoons sugar
1 teaspoon salt
1/2 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon cinnamon
1/2 cup low fat milk (I haven’t tried skim but it would probably be fine)
1 and 1/2 cups low fat buttermilk
2 large eggs
2 tablespoons vegetable oil
1 teaspoon vanilla (I use Penzeys)

batter. Whisk the dry ingredients together in a large bowl. In a microwavable bowl, add
buttermilk and milk, and warm in the microwave. I usually do 30 seconds and a time,
stir and test with my finger. You just want the mixture to be warm. I use the measuring
cup I used to measure the milk and buttermilk to whisk the eggs, then add the vanilla
and oil and whisk again. Add to the milk mixture and whisk to blend. Combine the wet
and dry ingredients, and stir until just mixed. Add a little more milk if you need to; you
want a thick but pourable batter.
Increase the heat on your skillet to medium and grease lightly with oil. Pour on batter
about 1/4 cup at a time. When the tops start to bubble (about 2 or 3 minutes) flip
pancakes and cook until golden brown.
They cook up nice and fluffy. I try to cook them a little less than perfectly golden brown
if I am going to freeze them to heat up later.
For eating later you (or the child who will be eating them) can warm them up in the
microwave, or warm them slowly on a skillet. Flip them a time or two when you pass by
the skillet if you think about it.
Served with heated syrup and soft butter for a delicious and fairly healthy pancake
breakfast. You can also vary the recipe-- we’ve added thinly sliced bananas to the
pancakes as they cook, and served them with peanut butter and honey. My husband likes
to add chopped toasted pecan to banana pancakes. Blueberries would be delicious, too.
