Induction cooking : is a completelydifferent method as it does not involve
generating heat which is then transferredto the cooking vessel, it makes thecooking vessel itself the original
generator of the cooking heat.Amazing fact : An induction cooker would be able to set 100ml water
boiling in just 5 seconds, while the gas cooker takes 2-3 minutes.

Working
Induction coil : When the power is turnedon, it forms its own magnetic field
Ceramic top plate : Faster induction ofmagnetic current and allows it to pass throughit. The cooking vessel rests on this plate
Electromagnetic Currents : Hit the base
of the metallic vessel, get converted into ainduction current which results in generationof heat on the base of the vessel

Induction cooker vessel : heats upand provides heat to the food in it.
Nothing outside the vessel is affectedby the field; as soon as the vessel isremoved from the device, or the deviceturned off, heat generation stops.
Food : will be quickly cooked due to thefast generation of heat of induction.

How is it SMART ?
Cook Top : A few millimeters thick ceramicplate acts as an insulator-cum-energy
transfer plate.Cook Vessels :Vessels with magnetic based
materials, such as iron and steel, allow aninduced current to flow within them. Complete
copper and aluminum vessels will not work.

Induction-efficient pans : There are specialcookware which should be used with an
induction cooker. They should be designed toabsorb maximum magnetic energy andspread the heat quickly and evenly : -
1st layer stainless-steel (non-reactive to
food, easy to clean)2nd, 3rd and 4th layer aluminum (even
distribution of heat)

Advantages
No Wasted Heat : Withinduction cooking, energy issupplied directly to thecooking vessel by themagnetic field; thus, almost allof the source energy getstransferred to that vessel.
Greater efficiency : Induction
cooking uses 90% of theenergy produced compared toonly 55% for a gas burner and65% for traditional electric
ranges.
There is boiling water in thevessel while the ice (also on the
stove) remains un-melted.
