Raspberry Muffins

Ingredients • 4 Large Eggs • Stevia powder (to equivalent of 2/3

cup of sugar sweetness. eg ½ tsp NuNaturals Nustevia pure stevia extract)

• 3 tbsp coconut oil, melted • ½ cup coconut flour • ¾ cup almond milk • 1 tsp vanilla powder • ½ tsp Bicarbonate of Soda • ¼ tsp Cream of Tartar • ¼ tsp salt • 1 cup of fresh or frozen Raspberries Method • Pre-heat the oven to 180°C (170°C fan-forced). • Grease a 12-cup muffin pan. (I use coconut oil). • Process the Stevia powder, eggs and melted coconut oil in a food

processor until combined. [For a thermomix process on speed 5 for 5 seconds, then scrape down the sides]

• Add the coconut flour, Almond milk, vanilla powder, Bicarbonate of Soda, Cream of Tartar, and salt. And process until combined. [For a thermomix process on speed 5 for 5 seconds, then scrape down the sides and process again on speed 5 for 5 seconds.

• Transfer the mixture to a bowl and stir through the fresh/frozen raspberries. • Spoon the mixture evenly between the 12 muffins. • Bake for 20- 25 minutes, or until cooked through. • Transfer to a wire rack to cool. Can be served warm, or cooled. Can be frozen for re-heating later.
