Pinecroft, the popular potter and tearoom southof Almer.
Oriinall the sessions rew slowl around the repit in the evenins of the summer of 2008 and asthe weather ot cooler moved into a cabin on thepropert across from the potter studio. Now one of
the rst cabins on the propert has a new lease onlife thanks to the roup that has resurrected a pulsein the tin room.
The current core of the roup is made up of PaulSmith, Jason youcke, Cheri Feruson, Brian Lorch,Mark Minor, Shelle Rice, Tom Kalman and a bassplaer known onl as Clde. At times there can be
a jammin an of 25 lined up all the wa outsidethe door of the cabin.
The roup has rown in popularit because of themusic, stae presence and their abilit to wrap amusical journe of jo around the entire audience.Folks from far and wide, of all aes, come to sit

CORONATION GRAPESThis spectacular, refreshin white wine punch has
succulent summer fruit to enjo in the coolin sips. For apart, double the recipe and serve in a lare punch bowl.
Preparation Time: 20 minutes | Serves 12
Ingredients:
2 bottles (750 mL each) Quai du VinPinot gris or other dr white wine
1 cups peach schnapps or orane-
avoured liqueur cup ranulated suar 6 Ontario nectarines, pitted & sliced 2 cups Ontario Blue Coronation rapes
or blueberries Soda or sparklin water (optional)
Instructions:
Into lare pitcher, pour wine and peach schnapps. Stir in suaruntil dissolved. Add nectarines and rapes/blueberries. Chillfor several hours before servin. Pour over ice in lass, alon
with some of the fruit. If desired, top with soda water.For Non-alcoholic Punch:
Use 6 cups (1.5 L) white cranberr or white rape juice in placeof wine. Replace schnapps with peach nectar. Omit suar.

Drew Pelc, Sales Manaer at gCW Custom Kitchensrst met Smith throuh the 2008 Bethans HopeFundraisin Dinner where Smith was a uest
speaker. In subsequent ears, their relationshiphas rown as Smith jumped in to help row theBethans Hope Fundraisin Dinners (this earservin 560 people), featurin a full donated gCWdemo kitchen which was later auctioned o to thehihest bidder raisin $14,500 for the charit. Morerecentl, gCW took on the creation of his dream
home/TV kitchen and its installation in PrinceEdward Island. Throuhout, Drew has appreciatedSmiths enuine, down-to-earth manner. Therelationship has been so positive that, Chef Smith isnow a spokes person for gCW Custom Kitchens andfull endorses the compan.

When Linde McIntre of Bethans Hope Founda-tion mentioned to Drew that Smith would be doina new show for the Food Network, he was quick toask Does Michael need a new kitchen? As it hap-pened, the answer was es, and the wheels wereset in motion for the match-up of master chef withmaster kitchen builder.
Surprisinl, it turned out Smiths present kitchenwas somewhat make-shift. He had never owneda home kitchen built to his own specications. HisChef At Home kitchen was actuall in a rentedhome. Do ou think I would actuall build a home
where I have to duck to et into the pantr? hesaid jokinl. He was lookin forward to the op-portunit to create his dream kitchen, the heart ofhis home, suited to both his personal cookin stleand to TV tapin. As ou can imaine there were afew details to work out in order to build the kitchenin St. Thomas, on a tiht timeline, almost entirelo-line in the custom department, eective as both
comfortable home kitchen and TV set, for probablthe best-known chef in the countr, located almost2,000 kilometres awa.
Pelc notes ood-naturedl that kitchen desinersand chefs will enerall dier in desin preferences.Desiners tend to hide most items behind cabinetdoors; whereas chefs tend to prefer them out in theopen for accessibilit. It is important to know thestle of the person who will be usin the kitchenwhen desinin it and to incorporate their specicwants, needs and stlin preferences.
The desin process started with Ron and Drews tripto Prince Edward Island, and a full-da consultationwith Smith. At the end of the da Drew came upwith the basic desin incorporatin solutions for
each of Smiths unique challenes.Back when Smith was tapin Chef at Home acamera in the pantr had been tried on one episodeand thereafter became an interal part of the show.Incorporation of the pantr concept in his newkitchen was a priorit for Smith. However, there
was no wa one would t in his home. Drews solu-tion was a modied corner nook with the look of apantr and perfect for TV tapin.
Another important request was for a spice librar.
Smith loves this simple, accessible storae sstemfor spices, built around a collection of mason jars.Drew measured up the jars on the visit to P.E.I. andgCW built custom recessed shelvin to t them.
Back home in St. Thomas, Drew received a call oneda Smith was sendin a box of wine crates anda request to see how ou can incorporate them.In the completed kitchen, the appear as frame to
the corner pantr. One was sined b an instruc-tor Smith admired at culinar school on the da ofhis own raduation. Drew manaed to work thatspecial crate into a place of prominence, a touchthat Smith reatl appreciated.
Other surprises included a customized drawer insertfor storae bins, and a speciall fabricated pan rack
(shin new pans included).Most clients under-oin a major renovation willthink of further chanes until the timeline crunchkicks in, and Michael was no dierent. He told Drew,Just tell me when I have to stop makin chanes.Drew lauhs, I responded with Michael, stop mak-in chanes, but he made more. The were down toa 4-week lead-time on a kitchen with man special
order items and details, and a client who was oftenon the road and unavailable for consultation.
Drew credits gCWs exactin standards and team-focused desin philosoph with ettin the kitchendone on time and incorporatin man of the specialinnovations that delihted the chef. Im rateful tohave an incredible desin sta to work with, theare of the ver best in the industr and I couldnthave done it without them said Drew. It reall wasa collaborative eort as it so often is here at gCW.Smith wrote to Ron & Drew, The kitchen is a rockstar! and praised the impeccable desin, outstand-in care and professionalism which exceeded hisexpectations.

What are the must-haves to include in anoneskitchen makeover? Drew recommends at least onebutcher block top. Smiths counters are entirelbutcher-block or stainless. Sas Drew, I think mostpeople like some ranite but its reat to work inat least one wood top. He also suests as mandrawers as ou can et. The standard used to be 2pot drawers but the can hold just about anthinfrom canned oods to cereal boxes. In various
sizes, the are more functional than cupboards,increase storae space and make everthin moreaccessible.

McSmiths McQuiche
Pastry Crust:5 cups all purpose our1 tsp salt1 lb cold butter, cubed
1 McSmiths e2 Tbsp freshl squeezed lemon juice (preventsluten from over developin, creatintender crust)cold water
1. Mix our and salt in food processor. Cut in butter.2. In separate bowl, whisk toether e and
lemon juice. With processor oin, add e and
lemon to our. Add enouh cold water to brindouh toether. Do not over mix as the crustwill become touh and chew. Wrap douh ballwith plastic wrap and hdrate in fride for 30minutes.
3. Preheat oven to 350F.4. Cut a 10 oz portion of douh and roll to a ener-
ous 1/8 of an inch on oured surface. Mold intobuttered quiche shell and poke base of shell witha fork. Remainin douh can be wrapped andfrozen for future use.
5. Line the crust with parchment and weih crustdown with blind bakin beans. Blind bake crustfor 10 to 12 minutes or until it looks par-baked(no loner raw).
Note: Depending upon pan size, pastry will makeabout 4 shells. Half the amounts for a smaller food
processor.
Filling: McSmiths chicken breast, sliced as for

1 leaf McSmiths Swiss chard, sliced1 lare McSmiths bab onion, halved and thinl
sliced usin mandoline or awesome chefskills
3 McSmiths bab beets, halved and thinlsliced usin mandoline or awesome chefskills (if oun and fresh ou dont needto peel)Kosher or sea salt and freshl roundpepper, to taste
1. Heat 1 Tbsp of ood extra virin olive oil in laresaut pan over mid-hih heat. Once oil is rip-plin add sliced chicken and saut until cooked
throuh. Optional: delaze pan with white wineof choice (see Wine Pairin). Allow liquid to cooko almost completel.
2. Add sliced onion and Swiss chard to the pan andsaut until Swiss chard is slihtl wilted. Removefrom heat and toss raw beets with sauted inre-dients. Season with salt and pepper to taste.
3. After the custard is prepared, evenl spread as
much of the llin as desired in the tart shell,leavin sucient room for the custard to do itsjob.

the es and cream toether. Tr not to incorpo-rate too much air as this will result in air pocketsin our quiche.
2. Pour enouh custard over inredients in tartshell to ll full. Carefull place in oven andbake for 25 minutes.

TURKEY MARINADE Its the simplicity of this recipe thats the key to perfection!
2 parts sauterne wine (or apple juice)1 part soy sauce1 part peanut oil
garlic powder
Combine ingredients and marinade meat for at least twohours before barbecuing. Baste meat at each turning
with the same marinade, and if you find your guestsarriving late, put the cooked meat in the marinade andlet simmer (this keeps it warm and moist). The meat
will appear white upon cutting when its done.
Tip: For smaller portions, marinade in a zip lock bag.
