METHOD FOR PREPARlNG FROZEN SPINACH IN PORTIONS.
1.- Slightly oil a dish.
2.- Place the spinach portions without defrosting them (if you are
going to use them as an accompaniment to a main dísh, keep the
portions separate from each other for individual presentation).
3.- Cook in the oven till they reach the desired point
4.- If as an accompaniment, arrange the portions carefully on the
plates so that they do not fall to pieces, in that way keeping a good
presentation.
5.- If as filling, prepare your favorite filling.

• Are fresh vegetables more nutritious than frozen ones?
According to the lnternational Council of lnformation on Food, the nutri -
tious value of frozen vegetables is practically identical to that of fresh
ones. The complete book on Nutrition of the Mount Sinai School of Medi -
cine agrees with this. The book explains that fresh products that remain
in the fridge too long lose savor and nutritious value. lt also says that
frozen vegetables afford the same health benefits as fresh ones and they
offer a convenient and nutritious alternative.
• Do frozen vegetables contain additives or chemicals?
We do not use artificial conservatives. Instead, we employ a speedy
freezing technique. This process preserves their texture and nutritious
value and ensures that they will last for a long time. This freezing pro -
cess also guarantees that the vegetables will keep fresh without the
need of conservatives.
• Once a product has been cooked and frozen, may I freeze it again?
We do not recommend freezing the product again because it makes it
susceptible to cold burns.
• Is the cold burn harmful?
The cold burn - the dry, white stains which are found in frozen food stuff,
not properly kept - are not damaging to your health, but they cause
changes in the color and texture of the product.
• Which is the best way to store frozen food?
Keep the products frozen until you are ready to use them. Keep them
in their original containers. Organize your freezer so that the older
products are in front to be used first
• Can the vegetables be eaten just as they are taken out of the container?
In order to maintain the same flavor and texture, we recommend that
you first prepare the product according to the instructions on the
packet, before they are eaten.

IQF is an abbreviation of lndividually Quick Frozen.

• 3/4 a glass of Torrontes Monteza Wine
• 180 grs. soft goat’s cheese
• Salt, pepper and nutmeg
Method:
In a hot frying pan, place olive oil and sauté the finely
chopped garlic, the mushrooms and then add the spinach
and sauté a few minutes more. Add salt and pepper and
the wine and allow it to reduce itself. Finally, incorporate
the nutmeg.
Place the preparation in a ring, spread goat’s cheese over
the top and cook au gratin.
Then place it on a dish and take away the ring.
To accompany and decorate, put caramalised tomatoes
and pea sprouts.
“Tape Nade” OiI:
Process all the following ingredients: 200grs black
olives (well drained) with 200cc olive oil, 40cc white
vinegar, 1 clove of garlic, 1 anchovy fillet. Then pass
through a fine sieve.

Method:
In a hot frying pan cook the two salmon portions in olive oil
and put aside. Separately, sauté in butter and olive oil the
cherry tomatoes, the asparagus (peeled and cut in two)
and the baby corn, add salt and pepper and the white wine
and let reduce. Fry the “rosti” potatoes and serve.
Caviar Vinaigrette:
• 150 cc. olive oil
• 30 cc sherry vinegar
• 2 tbsp TradeLink black caviar
• 2 tbsp TradeLink red caviar
• 1 tbsp dry Martini
• 1 tbsp mustard.
Method:
Mix the oil, vinegar, Martini, salt & pepper & mustard,
then add the caviar.
Pink Salmon with “rosti” potatoes.
Sauté vegetables and Caviar vinaigrette
Ingredients: (For 6 portions)
• 220 grs. pink salmon
• 3 TradeLink “rosti” potatoes
• 4 cherry tomatoes
• 3 TradeLink asparagus
• 4 TradeLink baby corn on the cob
• 1 tbsp olive oil
• 2 tbsp white wine
• 1 tbsp butter
• Salt and pepper. “Penne Rigatti” wI Mushroom sauce
and cherry tomatoes
Ingredients:
• 4 tbsp. of TradeLink forest mushroom mix.
• 2 tbsp. of olive oil.
• 2 tbsp. of butter.
• 3 tbsp. of finely chopped spring onion.
• 8 cherry tomatoes (cut in half)
• 1 clove of garlic.
• 1/4 of a glass of white wine.
• 100 grs. “penne rigatti” (dry pasta)
• Salt and pepper.
• Coarse salt.
• Water.
Method:
Sauté in a frying pan with olive oil the finely chopped
garlic, spring onion and mushrooms, then add the
wine and allow it to reduce. Add the cherry tomatoes,
the salt and pepper, and blend in the butter. Cook
the pasta in plenty of water with coarse salt. When
the pasta is ready, put it into the sauce and
serve. Decorate with ciboulette and purple basil.
