While the stylish new Ubud Adventure Centre only openedits doors in July 2013, the real story begins back in the 1980swhen an English man named Nigel Mason fell in love with theisland, and a Balinese woman named Yanie. The couple soonopened Yanies, a buzzing, much loved restaurant in Kuta, before going on to set up Bali Adventure tours in 1989 andthe Elephant Safari Park in 1997. The original Yanies closedsometime ago, but has been reborn as a semi ne diningrestaurant at the new centre.
Mason has always been actively involved in every aspect ofthe family business, whether staging the dramatic rescue ofelephants from Sumatra; creating a world class white waterrafting experience on the Ayung River; personally collectingthe Japanese artwork that adorns the Ubud Adventure Centre,or collaborating with the chef to create the menu for the new
Yanies.

S et on the dramatic Sayan road on the outskirts ofUbud, the centre is a vast, multi functional space.Rafting tours include an international buffet lunchserved under the roof top canopy fringed by tropicalforest. The elegant gift shop offers interesting souvenirs, while the bakery sells European-style breads and cakes, and the atmospheric Blu Bar offers cocktails of theclassic persuasion. Breakfast and light bites are servedat The Coffee Shop and Art Space, where a fascinatingexhibition of paintings are the result of an unusual, yetinspired collaboration between Tokyo street artist JunInoue, and elephants from the Elephant Safari Park. Those looking for pampering can head to Shinto Spa,the rst dedicated Japanese spa on the island, a zen-likehaven of tranquillity, specialising in Japanese-inspiredbathing rituals, with well priced packages that combine a
buffet lunch or dinner at Yanies.Built with dark wood, stone and Japanese aesthetics,
Yanies is a soothing space offering an extensive rangeof Japanese dishes, from beautifully presented sushi andsashimi sets, to ramen and yakiniku, plus Indonesian and
international favourites including barbecue. Chef Tiwihails from Lombok and unleashes her inner artist on platesswirled with vibrant sauces and sprinkled with brightly hued
ower petals. The Caesar Salad is an excellent example, and arrives deconstructed, with a salmon llet draped inhoney streaked bacon, and cob lettuce split in half anddrizzled in tangy dressing and parmesan shavings. TheSpicy Duck Breast is a house specialty, proffering tenderslices of duck with a rich red wine reduction, creamymashed potato, baby carrots, and crispy lo parcels lledwith wild mushrooms and vegetables.
Masons favourite, the Chateaubriand , is prepared withAustralian Black Angus Mulwarra Tenderloin, while hisbeloved Vanilla Slices are faithfully rendered, with crisp, powdery lo pastry encasing wobbly vanilla custard. The Flourless Chocolate Cake is light, super moist, and
very chocolaty, and nished with a brandy snap, whitechocolate curl and fresh raspberries.
Whether looking for adventure, a lush spa treatment, fascinating art work, or a great meal, you will nd it atUbud Adventure Centre. Alison

One was born in Bali and the other in Germany, but these two chefs share a love offood, and of Bali. Talking to them about their passion, their plans for Christmas and
their wishes for next year was a wonderful way to spend the day.

A: We will have unique and excitingproducts coming into the market over
the next few years but I cant disclosethe details of course! Unilever FoodSolutions is constantly expanding anddeveloping new products, ideas andconcepts for our customers. As themarket evolves and develops so arewe...hopefully we are leading the way.
Q: What do you think about 2014 andhow will it affect the food scene?
A: I think 2014 will be a challengingyear. The global economy remains quiteweak and Indonesia is not immunefrom this, though it is still much betterpositioned than many other economiesto deliver growth. 2014 may turn outto be a bit of a transitional grind. Chefsand their restaurants will need to bemore creative in terms of the productthey serve and the costs within theirbusiness. My experience through other
crises, and my best advice is: Whentimes are tough, dont look for cheaperingredients. Compromising the qualityof your dish is a killer. Look elsewhere ttrim costs if you need to, or raise prices
Q: Do you have a favouriterestaurant that you love to visit herein Bali?
A: I love Metis and Sarong and I visi
them almost every time I am here.Christmas will be spent with my familwe are not sure where but we willde nitely celebrating New Year in Bali

A: Ill usually start my day bycatching up with my e-mails inthe car. It takes about 45 minutesto reach the of ce and thankfullyI have a driver. The best thingabout my days is that they arenever the same; I never knowwhat Im going to get. Therewill be meetings, working withmy sales team, tasting newproducts, basically just a diverseset of things that needs to bedone. I really enjoy workingwith my team and watching
Indonesia develop through a veryinteresting period of growth.
Q: Despite the traffic, how doyou like living in Jakarta?
A: Its a very exciting city. Imcoping with the traf c as muchas everybody else, but I likeJakarta. The food scene is great. My favourite Indonesian food isPadang and I love eating it forlunch; Beef Rendang, Perkedel, etc. The Jakarta food scene hasalso changed dramatically andis slowly catching up with otherbig cities around the world interms of diversity. The bestthing about Jakarta, I wouldsay is the people. ...Indonesianpeople are great!

A Continental ChristmasITS CHRISTMAS TIME, AND IF YOU ARE FEELING A LITTLE HOMESICK AND CRAVING
TRADITIONAL FESTIVE FOODS, A VISIT TO CASA DANGELOS IS DEFINITELY IN ORDER.
Stepping into CasaDAngelo, my rst thought is of aquaint continental bakery, and the shop is so lled withcakes and pastries that I dont know where to look rst.The front window is heaving with gorgeous Christmas fare, from a cute ginger bread house, to glistening chocolatelogs, sugar dusted mince pies and iced buns sprinkledwith almonds.
A central table is dedicated to savoury items like Ricottaand Spinach, Chicken Crepes, sandwiches and tarts, anda whole wall is lined with European style loaves, includingdark rye, corn bread and crusty baguettes. I spottiered cake stands laden with pretty chocolate-topped
muf ns, baskets of Polish Croissants , shelves heavinwith homemade jams, gourmet coffee and cellophanewrapped biscotti bound with satin ribbons.
Polish-born Robert has lived on the island for the las15 years and describes how he wanted to create aFamily store with a little bit of everything, a place tbuy daily necessities, like milk, bread, pate, home curedmeats, pastries, coffee and wine. He has succeeded, and CasaDAngelos de nitely has that welcomingneighbourhood vibe that comes from being in aresidential area.

I choose a Baked Ricotta Cheesecake that turns out to bequite exceptional. The ricotta is made on the premises andhas a slightly sour taste combining with bitter dark chocolatebase, and a sprinkle of icing sugar on the top to sweetenthings up. The fridge also proffers Tiramisu, a bulging CarrotCake with thick cream cheese icing, and a glistening BlackForest Cake , alongside fresh homemade soups, pates, humus, and cream cheese. A continental-style Christmas isassured with everything from English fruit puddings, to ItalianPanettone and Polish poppy seed cake available for order. The nishing touches are being applied to the smoke roomwhen we visit, so you will also be able to stock up on homecured mackerel, bacon and hams.
Left over pastries at the end of the day are sold off half price, or go to Seeds of Hope Childrens home local orphanage. You can also support their Christmshoe box project. Its easy, get hold of a shoe box andecide whether your gift is for a girl or boy and what agthen label it accordingly and ll it with school supplieclothing, toiletries toys or art gear, and perhaps a personanote. Most of the children will have never received a gbefore, so its a great opportunity to spread the Christmacheer, while stocking up on your essentials for the festiseason. Happy Christmas! Alison
