QUESTIONS
1. What effect did temperature have on the perceived sweetness of the ice
cream? As the temperature rises in food the sweetness increases (Heller,
2005). My taster thought that the warmest sample was sickeningly sweet
and could only take a small taste.

2. Where is the sweetness sensation found on the tongue? The tip of the
tongue is most sensitive to sweetness (Mann, 2011).
3. What other sensory characteristic of ice cream is affected by sugar? Not
only does sugar add sweetness, but the texture and body of ice cream is also
affected by the sugar content. Sugar also lowers the freezing point of the mix
(Ice Cream Nation, 2013). When I have eaten low sugar ice cream the texture
was different than the full sugar variety.
