Dr. Saleh Hussain Al-Aayed
Dr. Al-Aayed obtained the PhD degree in 1403 AH and participated in a number of scientific
Islamic regional and international forums, seminars and conferences. He is a member in
many councils and committees inside and outside Kingdom of Saudi Arabia such as: a
member of the Council of Imam Muhammad ibn Saud Islamic University; a member of the
Board of Trustees of the Faculty of Shariah and Islamic Studies in Kurdistan; Head of the
Curricula Committee in the Faculty of Islamic Studies in Sarajevo; a member of the Courses
Committee in the World Assembly of Muslim Youth Forum; a member of the advisory
Committee for the International Commission on Scientific Signs in the Qur'an and the
Sunnah of the Muslim World League; a member of the committee formed by virtue of a
formal decree for studying the articles of association of the Islamic and Arabic Sciences
institute in USA in cooperation with Department of Finance and Department of Higher
Education; a member of the team which was formed by virtue of a royal decree to be
responsible for the comprehensive evaluation of the Education in the Kingdom of Saudi
Arabia; a member of the Trustees Board of the Islamic Studies in Mombasa, Kenya. He is
also a member of the Trustees Board of the World Assembly of Muslim Youth; a member of
the Trustees Board of the Islamic Culture Center in Sidney, Australia; a member of the
executive committee for supporting the Jerusalem Uprising; a member of the constitutional
council of the Islamic Cultural Organization in Switzerland; a member of the Trustees Board
of Abdul Aziz Ibn baz Charity organization; a member of the Trustees Board of Makka Al
Mukaramah Charity Foundation; a member of the Trustees Board of Suleiman bin Abdul
Aziz Al Rajhi Charity; a member of the Trustees Board of the International Islamic Relief
Organization; a member of the team responsible for making the National Information
Technology Plan in Saudi Arabia; a member of the Trustees Board of the World Wide
Association for Introducing ISLAM. Dr. Saleh supervised the Prince Sultan Bin Abdul-Aziz
International Prize for Memorization of the Holy Qur'an and Prophet's Tradition for South
East Asia countries. He also chaired many boards in Saudi Arabia and worked as the General
Secretary for the Supreme Council for Islamic Affairs and he currently works as the General
Secretary for the International Islamic Halal Authority (IIHA).

Mariam binti Abdul Latif
Mariam Abdul Latif has obtained her Diploma in Agriculture from University Pertanian
Malaysia in 1977 and graduated in Nutrition (Hon) from King’s College, University of
London in 1990. She did her Post Graduate Diploma in Community Nutrition at University
Indonesia, Jakarta in 1992 and completed her Masters study in Food Service Management
specializing in Halal food management at University Putra, Malaysia in 2004. She began her
career in 1979 as a lecturer in agriculture and food processing at the Institute of Agriculture
Air Hitam, Johore and later at the Institute of Agriculture Serdang, Selangor (1990-1993).
She joined the Ministry of Health Malaysia (MOH) in 1994 as a Food Technologist in Negeri
Sembilan heading the state food safety programs. In 1996, she was transferred to the Food
Quality Control Division of MOH and established the office of Codex Contact Point
Malaysia taking over from SIRIM, after the latter was corporatized in 1995. Being the
country Liaison Officer (Codex Contact Point Malaysia), she had participated in many Codex
meetings, defending many issues related to food standards, including the adoption of the
General Guidelines for Use of the Term “Halal” in 1997. She was appointed as a Consultant
to Codex Secretariat at the Food and Agriculture Organization (FAO) of the United Nations
in Rome, Italy in 2001 and 2005. She headed the Halal Certification Program under the
Department of Islamic Development Malaysia (JAKIM) from 2004 to 2006, and was the Vice
President (Halal Integrity) of the Halal Industry Development Corporation (HDC) Malaysia
from 2007 until July 2010. She is currently serving the Ministry of Health Malaysia as the
Selangor State Deputy Director of Health (Food Safety) besides doing her PhD research on
Halal Nutrition.
Dr. Misfer Al-Qahtani
Dr. Al-Qahtani obtained the MA degree in the Islamic Politics and the PhD in the
Fundamentals of Islamic Fiqh. He held many posts such as: Associate Professor in the
Fundamentals of Islamic Fiqh at the Islamic and Arabic Studies Department, King Fahd
University for Petroleum and Minerals; an expert in the Fiqh Academy affiliated to the
Islamic Conference Organization; an expert in the international humanitarian law of the
International Red Crescent Authority which is affiliated to the Islamic Conference

Organization; a member of the executive committee in the Center of Research Excellence in
regard to banking studies and Islamic finance; a member in the Saudi Fiqh Association; a
member of the Committee for Advising on Extreme Issues and Terrorism in Western Region;
a member of the Appeals and Objections Committee in the first round of elections ran in the
Eastern Region, Kingdom of Saudi Arabia; a member of the Trustees Board of the
International Support Organization; a member of the Trustees Board of the International
Assembly of Islamic Youth; a member of the Trustees Board of the Center of the Prince of
Abdul Mohsen ibn Jalway for Islamic Research and Studies; a member of the advisory
Committee of Islamic Call Affairs and Mosques in Eastern Region in 1433 AH; a member of
the Shariah Committee of the International Assembly of Islamic Youth in the Eastern Region;
a member in the constitutional Committee of the Prince Mohammad ibn Fahd Prize for
employing the Disabled; a member of the 5th National Conference on the Intellectual
Dialogue; Vice President of the National Excellence and Creativity Prize for Youth;
supervisor of the Website named "Cultural Awareness" whose address on the internet is "
www.alwaai.net". Dr. Misfr participated in many local and international Islamic conferences
and wrote many researches and articles in a number of scientific and research magazines,
local and Arab newspapers and was hosted in a number of TV and Radio shows. He wrote
many books including: Methodology of extracting Rulings of Modern Juristic Issues; Fatwa
Methodologies in Modern Juristic issues; Fiqh of Affordability; Fiqh of Balances; Fiqh of
Realities; Women and Return to the Self; Words in Awareness; Impact of Fundamental
Methodology in rationalizing Islamic Works; Purpose Awareness; Cultural Awareness, a
Purpose Approach in the Fiqh of Islamic Urbanization.
Prof. Hassan Abdel Aziz Aidaros

Professor Hassan Abdel Aziz Aidaros spent 4 years in France, three years from it (1979-
1981) for taking his Ph.D. and one year as a Lecturer in PhD., UER de Medicine at St.
Etienne University, Lyon, France (1981-1982). He is currently teaching in Hygiene and
Preventive Medicine, Faculty of Veterinary Medicine, Banha University, Egypt. He was also
a professor Veterinary Medicine, Lyon, France; National Agricultural Research Institute
(INRA), France; St. Bernardino University, California, USA; Louisiana University,
Louisiana, USA and Tennessee University, Tennessee, USA. He was also a Chairman of the

General Organization for Veterinary Services (GOVS) in Egypt for five years; Chairman of
the FAO Animal Health Center for Middle East Region ( 2007-2008); former Chairman of
the Board of Animal Insurance Fund in Egypt (with a capital of 160 million L.E); Chairman
of the Board of Veterinary Services Program for privatization for 5 years (with a capital of 20
million Euro), Egypt; Deputy Dean, Faculty of Veterinary Medicine, Zagazig University,
Banha branch (1989-1995); delegate of the Arab Republic of Egypt at the World
Organization for Animal Health (OIE), Paris for 5 years; President of the OIE Regional
Commission for the Middle East (2003-2004); member of the Editorial board of the OIE
Scientific and Technical Review (2003-present); member of the Editorial Board of the
“Veterinaria Italiana” Journal, Italy; elected member of the OIE Scientific committee for
Animal Diseases control (SCAD) (2009-2012; 2012- 2015). He was also a member of the
OIE working group on Animal Welfare, animal production food safety, ad hoc group for Mad
Cow disease (BSE), ad hoc group on emerging and re-emerging zoonoses. He received
recognitions from the OIE and World Bank as Official Auditor for evaluation of the
Veterinary Services PVS (2006-present); OIE as official Expert for OIE Gap Analysis (2008)
and OIE as Veterinary Legislation Expert (2010). Prof. Aidaros participated in many
conferences such in World Organization for Animal Health (OIE), Food and Agriculture
Organization (FAO), World Health Organization (WHO), World Trade Organization (WTO)
and Arab Organization for Agriculture Development (AOAD). The participations were in the
form of chairing conferences, presenting lectures, scientific participation or representing
Egypt.
Aida Kader Ghanem
Aida Kader Ghanem was born in America in 1971. She obtained her MSc. in Fiqh legislation
and its fundamentals in Islamic religion at Al-Quds University, Palestine. Her Master thesis
entitled “Additives in food and beverages: an Islamic Sharia's perspective”. In the year 1998,
she obtained her Bachelor’s degree in Da’wa and Fundamentals of Islamic Religion in the
same university. She also had her diploma in methods of teaching in general and Islamic
methods of teaching in particular at the UNRWA Headquarters, Amman, Jordan in 2003. She
was awarded in 2004 with honor for Holy Quran recitation based on narration of Hafs from
Assem, Ministry of Awqaf, Palestine. Ms. Aida is also a founder member of the Halal team at

Al-Quds University, Palestine. She is a member of the National Team to find specifications
of Halal upon a request from the Palestinian Specifications and Standards Institution. One of
the specifications was to include Halal in cosmetics, which was virtually achieved when she
developed the idiosyncratic perception specifications. She is an activist in clarifying the
concept of Halal and defining it in various ways as possible. She aims at getting the achieved
results to be instilled with its complementary concept not only in Islamic and Arabic society,
but in the Western society as well, where many Muslims live. She looks forward to attract
people’s attention to the concept of Halal in their lives and to continue her academic
education to obtain the Doctoral degree in Islamic jurisprudence and legislation, a
complimentary topic from her Master thesis. She also worked as a teacher in Islamic religion
for 12 years and contributed as an administrative member in one of the charity institutions.
She also contributed to the organization of scientific sessions in the Aqsa mosque and many
mosques in Jerusalem.
Dr. Zohair Mulla
Dr. Mulla obtained his DVM degree from King Faisal University (KFU), Saudi Arabia in
1988 and had his MSc. degree in Veterinary Biosciences in 1996 from Ohio State University,
United States of America. In the same university, Dr. Mulla obtained his PhD. degree in Meat
Sciences in 2002. Dr. Zohair S. Mulla is currently a Food Consultant at Saudi Food and Drug
Authority (SFDA). In 2009, he was also appointed as Director for Animal products and feed.
From 2003 – 2007, he was also an Assistant Professor in Meat and Dairy Hygiene at the
College of Veterinary Medicine and Animal Resources, King Faisal University (KFU), Saudi
Arabia. During his tenure at KFU, Dr. Mulla was appointed as Dean of Students Affairs from
2006-2008. He participated and presented many Food Hygiene and Inspection Courses. Dr.
Mulla participated in Graduate Program Studies in Al-Qassim University as an external
examiner. He is also a board member of the Saudi Society of Food and Nutrition, and a
member of Veterinary Drug Registration Committee.

Dr. Mian Nadeem Riaz
Dr. Mian Nadeem Riaz obtained his BSc. (Honors) in Agriculture major in Food Science and
Technology; MSc. (Honors) in Food Technology and PhD. in Food Science and Nutrition at
the University of Maine, Orono, USA. Dr. Riaz is a Director of Food Protein R&D Center,
Texas A&M University. He joined the university in 1992. He is a graduate faculty in the
Food Science and Technology Program since 1998. He also has part time appointment in
Nutrition and Food Science department. He has 20 years of experience in food processing
and research and development. Dr. Riaz is teaching religious foods at Texas A&M
University, to food science and nutrition students for the last 5 years. He conducted 4
workshops every year for the last 20 years in food and feed processing. He traveled more
than 50 countries and gave more than 250 presentations in the area of Halal and food
processing. He published 5 books, 17 chapters and more than 150 research papers in different
magazines. He is a co-author in the First Halal Food Processing Book used in USA and all
over the world for food science students, industry, and government and also a co-author of
the book on Halal Industrial Production Standards. He published three book chapters in
different books in the area of Halal foods (Kosher and Halal Meals, Halal Issues in the Flavor
Industry and Alcohol: The Myths and Realities). He published several articles on Halal foods
processing, domestic and international Halal market, Halal certification process for different
food industries, new Halal trends, and value of Halal logo in different food related national
and International magazines and journals. He has given numerous presentations on Halal in
USA, Saudi Arabia, Pakistan, India, Malaysia, Australia, Columbia and Kuwait.
Mohamed Mohamdi
Mr. Mohamed Mohamdi was born in Tunis. He migrated to the Netherlands (Europe) in early
2000. He studied at the “Faculté de Science Economie et de Gestion” in Tunis and also in
Food Technology at the University of Applied Sciences “Hoge Agrarische School Den
Bosch”. In 2010, he started his work with the Halal Feed and Food Inspection Authority
(HFFIA) as Halal Auditor, Screener and Coordinator in Arab countries. He is an active and
respected member of the Muslim community in the Netherlands. Besides his work as Halal
Auditor, he also serves the Muslim community through educational programs in Arabic and

Islamic courses through the Netherlands and Belgium. To benefit the Halal cause, he is
actively promoting a non-profit inspection scheme aimed at guaranteeing Muslims Halal
products in Europe.
Muhamad Nadratuzzaman Hosen
Dr. Muhamad Nadratuzzaman Hosen obtained his PhD. in Institutional Economics at school
of Economics, University of New England, Armidale, NSW, Australia in 2001. He is
currently a lecturer in the State Islamic University of Syahid, Jakarta and at Yarsi University,
Jakarta. In 2000, He worked as a Head of Environmental Technology and Biodiversity at
Ministry of Research and Technology, and became a lecturer at the Faculty of Economics and
Social Science, State Islamic University of Syahid in 2004. Since 2005, he has been lecturing
at Faculty of Shariah and law, UIN Syahid, Jakarta. From the year 2005 - March 2009, he
serves as a Director for Communication Centre of Shariah Economics (PKES). From 2006 -
October 2009, he was also a Director of the Assessment Institute for Foods, Drugs and
Cosmetics (LPPOM), MUI. From July 2009 - July 2010, he was also a Dean for Faculty of
Economics at YARSI University, Jakarta. He published 11 books, where one book entitled
Profiles and Economic Performance of Dairy Co-operatives in Indonesia is published by
LAMBERT academic publishing, Germany in October 14, 2009. He is active to give seminar
internationally about Halal products and Islamic Economics. He was a President of World
Halal Council from 2006 to 2009. He is currently a treasurer for Indonesian Council of
Ulama (MUI) as well as for Council of Shariah Board of MUI.
Mufti Mohammed Zubair Butt
Mufti Mohammed Zubair Butt was born in the UK in 1972. At the age of fifteen he
memorised the Holy Qur’an and, following the completion of his state education, he enrolled
at the Institute of Islamic Education, Dewsbury, UK in 1988 and completed the Shahadah al-
Aaliyah in Islamic Sciences in December 1993. This included the study of Arabic language
and literature, syntax, etymology, logic, scholastic theology, Fiqh, Usul al-Fiqh, Hadith, Usul
al-Hadith, Tafsir and Usul al-Tafsir. During this period he also studied the science of
Qiraa’ah and received ijazah in the ten variant readings of the Holy Qur’an. In December

1995, he completed his Shahadah al-Aalimiyyah in Arabic and Islamic Sciences at Darul
Uloom Karachi, Pakistan and received ijazah for the transmission of the books of Hadith
taught under the Dars-e-Nizami syllabus. In December 1997, he completed his two years of
Post Graduate Specialization in Islamic Legal Edicts under the supervision of Sheikh Mufti
Muhammad Taqi Usmani. He is currently the Senior Advisor on Islamic law at the Institute
of Islamic Jurisprudence, Bradford, UK and an executive member of the Jamiat al-Ulama of
Britain. He is chair of the Al-Qalam Shariah Scholar Panel, the first UK-based panel of
Shariah scholars that advises on Islamic finance related issues (http://www.alqalam.org.uk).
He is a member of the Committee for Ethics in Research at the University of Bradford and a
Chaplain at the Leeds Teaching Hospitals. He is chair of the Shariah Advisory Board of the
Bradford Council for Mosques and also Chair of the Muslim Health Care Chaplains Network.
Mufti Zubair is the Shariah Advisor to the Halal Monitoring Committee and also advises
national statutory and non-statutory bodies within the UK. Mufti Zubair Butt lectures and
runs training courses on various aspects of Islamic law including Islamic finance, Islamic
medical ethics and Muslim personal law.
Dr. Shuhaimi Mustafa
Dr. Shuhaimi Mustafa is a specialized in Food Microbiology and Biotechnology. He is
currently a Deputy Director of Halal Products Research Institute UPM and an Associate
Professor in Department of Microbiology, Faculty of Biotechnology and Biomolecular
Sciences, UPM. He held several positions such as Head of the Laboratory of Analysis and
Authentication Halal Products Research Institute UPM (2006-2008); Lecturer in the
Department of Microbiology, Faculty of Biotechnology and Biomolecular Sciences, UPM
(2003 to 2006), Tutor in the Department of Biochemistry and Microbiology Faculty of
Science and Environmental Studies, UPM (2002 – 2003) and an Associate Member Institute
of Bioscience, UPM (2003 to 2007). He has 10 years research experience and was a project
leader of 10 projects. Dr. Mustafa also has 22 Intellectual Property Rights (IPRs) and 1 Patent
granted. In the year 2011-2012 he had 47 publications in journals as a corresponding author
or first author in UPM. In the same year, he also completed 5 abstract and/or proceedings.

Mohammed Ahmed Al-Qurashi
Dr. Mohammed Ahmed Al-Qurashi from UAE obtained the PhD in Islamic Shariah from
Umm Al Qura University, Sacred Makkah. He obtained the Bachelor of Arts from the Islamic
Studies Department at the United Arab Emirates University. He worked as a Deputy
Chairman of the Grand Scholars Commission and the General Secretary of Scholastic Board
at the Department of Islamic Affairs and Charities, Dubai, United Arab Emirates in 2008;
Editing Director of Al Ahmadiya Magazine; Editor-in-chief of the Al Deyaa Magazine at the
Department of Islamic Affairs and Charitable Activities; Head of the Examination Committee
for Religious Works; Director of Department of Religious Centers and Institutes; Director of
Educational and Research Activities at the Department of Islamic Affairs and Charities in
Dubai in 2005. He is also a member of the editorial team of Aspects of Culture and Heritage
Magazine published by Juma Al Majid Center in Dubai. He is also a member of Fridays’
Speech Committee in the General Authority for Islamic Affairs and Endowments. He works
also as the Director of Research House For Islamic Studies ِ◌and Heritage Revival in the
Diwan of H.H Ruler of Dubai (2006-2007); a member of the Committee of the Fund for the
Revival of the Common Heritage between UAE and Kingdom of Morocco in 2002. Dr. Al
Qurashi works as an external assistant Professor at the Shariah and Law Faculty at the United
Arab Emirates University. He also teaches in College of Shariah and Islamic Studies and
College of Da’wa and Usul-ud-Din at Umm Al Qura University in Sacred Makkah and in the
Faculty of Islamic and Arabic Studies in Dubai. He wrote many books and participated in
many conferences and seminars inside and outside the UAE and participated with researches
and papers in some of them. He took part in more than 39 training and scientific courses.
Darhim Dali Hashim
Darhim Dali Hashim graduated with a Bachelor of Science (Honors) degree in Economics
from the University of Bristol in England. He is the founding partner of Azka Capital Sdn
Bhd, a private equity fund management and corporate advisory firm specializing in
investments in the Halal industry. He also serves concurrently as an Executive Director of
International Halal Integrity Alliance Ltd (IHI Alliance), an international non-governmental
organization created to uphold the integrity of the Halal market concept in global trade

through recognition, collaboration and membership. IHI Alliance is the strategic partner of
the Islamic Chamber of Commerce & Industry in the implementation of the Global Halal
Program, as mandated at the OIC (Organization of Islamic Cooperation) Summit 2008 held in
Dakar, Senegal. He brings to IHI Alliance a wealth of corporate and Halal industry
experience. Previously, he worked in various senior management positions, including leading
a diversification strategy for a conglomerate into the agricultural sector. This led to an
opportunity to head up an integrated livestock and Halal meat operations. He was invited to
share his knowledge and experience on Halal Journal TV, Pakistan’s ATV and Business Plus
channels and was interviewed for “Time” and “Forbes” magazines and most recently, “The
New York Times”. He introduced Halal at various platforms including the CIES International
Food Safety Conference held in Barcelona, Spain, the World Bank’s East Asia Pacific
Regional Agribusiness Trade & Investment Conference in Singapore, the 18th EFLA
Congress on Private Food Law in Amsterdam, Netherlands and the Meat Industry
Association Annual Conference in Christchurch, New Zealand. He is a regular speaker at
Halal industry platforms including the World Halal Forum, Global Halal Congress in
Pakistan, International Halal Conference in Iran and the Gulf Conference on Halal Industry
and Services in Kuwait, among others. In the early part of his career, he was an Audit
Manager at PricewaterhouseCoopers after having completed his Chartered Accountancy
qualification with Kingston Smith in London.
Ir. Lukmanul Hakim, M.Si.
Ir. Lukmanul Hakim was awarded a Master (M.Si) degree in Institutional Technology
Industry from Bogor Agricultural University in 2005, Indonesia, and Bachelor degree (Ir.) in
Chemistry, Bogor Agricultural University, Bogor in 1993. He is currently a Director for the
Assessment Institute for Food, Drug and Cosmetic, The Indonesian Council of
Ulama(LPPOM MUI) and a President of World Halal Food Council (WHFC). He has been
working for more than 19 years in the field of Halal certification. He has been involved in
many research activities for the projects particularly in Halal sectors. In the projects, he did
evaluation, supervision, planning, and management. Since he joined LPPOM MUI, he has
been a productive staff and it does not take much time for him to become one of the
Committee Board in LPPOM MUI from 2001 – 2006. He became Vice Director of

administration and Secretarial Halal Assurance System on August 16th, 2006. In 7th October
2009 he became LPPOM MUI Director until now. He is also a Lecturer in Djuanda
University, Bogor, Indonesia for Food Technology Department since 1995 until now. He was
also elected as President of the World Halal Council since 2009 – 2011 and as President
World Halal Food Council since 2011 until now.
Sheikh Turki Essa Al-Mutairy
Sheikh Turki Essa Al-Mutairy obtained a bachelor degree in Islamic Shariah from Faculty of
Islamic Shariah at the Kuwait University. He is the Head of Eftaa Department at the Kuwait
Ministry of Awqaf and Islamic Affairs and the Deputy Reporter for Fatwa Board of two
committees, namely Public Matters and Personal Status Committees. In addition, he was a
member in a number of committees including: Nourishment Permanent Technical
Committee, the Supreme Committee of First Gulf Conference on Halal Industry and its
Services which was held in Kuwait in 2011, head of the Scientific Committee of First
Gulf Conference on Halal Industry and its Services which was held in Kuwait in 2011 and
Head of the Committee organizing workshops of First Gulf Conference on Halal Industry and
its Services which was held in Kuwait in 2011. He participated in the worksheet in the Halal
Conference held in Malaysia in 2011. Furthermore, Sheikh Al-Mutaiary is a member of the
Supreme Committee and Head of the scientific Committee of Second
Gulf Conference on Halal Industry and its Services to be held in Kuwait in 2013. He
participated in European Halal Food Conference which was held in Rotterdam, Netherland,
and which was organized by Total Quality Halal Correct Certification (TQHCC) in
cooperation with Islamic University of Rotterdam in 2012. Sheikh Al Mutairy is also a
member of the Holy Quran Review Committee, Shariah Board for Classification, Control of
the General Assembly of Banks and Islamic financial Institutions and a member of the
Supreme Committee of Support of Mediation. Sheikh Al-Mutairy published various scientific
researches, publications and articles which are published on the Internet.

Dzulkifly Mat Hashim
Dzulkifly Mat Hashim obtained his A-levels at Poole Technical College in Dorset, England
in 1974-1976 and his B.Sc. and M.Sc. degrees in Chemical Engineering and Food
Engineering respectively from the University of Leeds, United Kingdom in 1976-1983. He
had his postgraduate research at the University of Nottingham, United Kingdom in 1990-
1994. He is a lecturer at the Department of Food Technology, Faculty of Food Science and
Technology, Universiti Putra Malaysia. He currently holds the position of Head of the
laboratory of Halal Services at the Halal Products Research Institute, University Putra
Malaysia. He lectures on Food Processing & Preservation, Food Engineering, Halal and
Haram in Food Processing, Food Process & Plant Design, Physical Properties of Food,
Advanced Food Analysis and Philosophy of Halal Science. He is widely known speaker in
Halal Science who has participated in various Halal-related conference, seminars and forums.
He was a consultant to a number of international projects, including a FAO/UNDP Project to
the Malaysian Fisheries Development Authority (LKIM) (1987-1988), Havi Foods on the
Development of Naan bread for the Australian market, Luxor Network Sdn Bhd, a multilevel
marketing company on the Development of Sea cucumber Jelly Gamat food supplement. His
research interest is starch and food polysaccharides characterization and Halal products
development. He was involved in a BERNAS/UPM project on the Characterization and
Standard Development of Malaysian Rice and a member of a research team developing a
GMP programme for Bernas Rice Mills (2005-2007) as well product development projects on
“Rice Drink” (2005-2007) and “Rice Bread” (2005-2007). He was a visiting Scientist under
the Commonwealth International Centre of Higher Learning (CICHE) Scholars Exchange
Programme at the University of Birmingham, U.K. (1995) and scholar under the Cochran
Fellowship Program on Halal Cold Chain System under United States Department of
Agriculture (USDA) at the University of Georgia, Griffin and University of California Davis
(1996-1997). He is also a certified trainer for the Halal Industry Development Corporation
(HDC) for courses on Halal Awareness Program and Halal Professional Program. He is a
member of the Halal Technical Committee and Technical Committee for the proposed
Malaysia Halal Institute of JAKIM in Enstek.

Dr. Rachid Fetouaki obtained his BSc. in Plant Biology in the University Ibn-Tofail Kenitra,
Morocco 1994; Diploma in Chemistry, Ludwig Maximilian University Munich, Germany
2002 and his PhD. in Chemistry, Ruprecht Karl University Heidelberg, Germany 2006. He is
currently a Manager of Halal Control EU Germany, Regulatory Affairs & Compliance Unit
and his responsibilities and duties within Halal Control includes: document inspection and
performance of audits; ensures Halal certified companies comply with all the requirements of
Halal Control; conducts Halal trainings for Halal internal auditors and quality managers;
maintains and develop Halal Control Guidelines in cooperation with Islamic scholars. He was
Laboratory Manager, Chemische Laboratorien Dr. Mark Worms, Germany 2007-2009;
Research Associate in the field of metal organic chemistry, catalysis and solid-state NMR
spectroscopy at the Ruprecht Karl University Heidelberg, Germany 2003-2006 and Research

Dr. Ali Fanous
Dr. Ali Fanous obtained his Bachelor of Science degree at Aleppo University in Syria, then,
he moved to Germany where he completed a Master of Science and a PhD. in Technology
and Biotechnology of Food from the Technical University of Munich where he was a
researcher in the field of proteomics and electrophoresis from 2006 till 2009. He is currently
a Technical Auditor, Food Technologist and a manager of the Audit and Training Unit at
Halal Control e.K, Germany. His duties and responsibilities includes documents inspection,
conducting audits, helping the companies to implement Halal Assurance System and
conducting Halal training for Halal supervisors and QM managers.

Murat Sayin received his Masters degree in Chemistry/Biochemistry at the Balikesir
University, Institute of Science and Technology, Chemistry, Balikesir, Turkey in 2009. He
worked in several companies like GIMDES, Turkey-Halal Product Research Institute, The
Cenrel Company, Cardiff, U.K and GSM Global Foreign Trade. He has 1 publication as co-
author in FEBS journal and he also a Poster presentation at the 3rd Congress of National
Affinity Techniques, March 2007.
Dr. Anwar Ghani

Dr Anwar Ghani obtained his BSc. (Honors) in Agriculture and Animal Husbandry, Major in
Agriculture Chemistry, MSc. (Honors) in Microbiology and Soil Science at the University of
Waikato, New Zealand and his PhD. in Soil Chemistry at the University of Canterbury, New
Zealand. He is currently a President of the Federation of Islamic Associations of New
Zealand (FIANZ), an umbrella national organization of Muslims in New Zealand. FIANZ
was established in 1979 to provide strong and cohesive support and advocacy for Muslims in
New Zealand. It is also one of the premier certifier of Halal foods in New Zealand. Currently,
FIANZ is the sole certifier of the Halal meat exported from New Zealand to Kingdom of
Saudi Arabia, United Arab Emirate (UAE) and Kuwait. Dr Ghani has been involved with the
New Zealand Halal products industry for over 25 years and is regarded as one of the experts
on Halal standards. Dr Ghani works as a Senior Environmental Scientist at AgResearch,
Ruakura Research Centre, Hamilton, New Zealand. He has written over 75 scientific
publications on a range of topics and holds two patents. He was appointed as the inaugural
Chairman of the Halal Standards Advisory Council which has been set up by the Government
of New Zealand in 2010 for providing advice and setting up standards on all matters dealing
with Halal food through Ministry for Primary Industries. He is inaugural Chairman of the
South Pacific Islamic Board established in 2009 which involved countries in the Pacific
Region (Australia, New Zealand, Fiji, Papua New Guinea, Solomon Islands, Samoa and
Vanuatu). He is also inaugural Chairman of the New Zealand Baitulmall established to help
the needy Muslims and non-Muslims in New Zealand and overseas countries. He was invited
several times as a speaker in the conferences related to Halal issues in different countries like

Riyadh, Saudi; University of Auckland, New Zealand; South Korea and Makkah Al-
Mokarramah, KSA. Over the last fifteen years he has represented New Zealand on interfaith
forums and spoken to national and international audiences on variety of topics in a number of
countries. He is an Executive member of the 29 country Regional Islamic South Pacific
Dawah Council (RISEAP). For his accomplishment in various aspects of his involvement
both at national and international level, Dr Anwar Ghani has been named in the list of top 500
most influential Muslims in the world by the Jordanian Islamic Research Institute.
Hanen Rezgui
Hanen Rezgui was born in Tunisia in 1978 and holding dual citizenship, Tunisian and
French. She obtained her Master's degree in Science and Engineering Materials from
Polytechnic Institute of Grenoble, France. In 2004, she worked as a Quality Engineer in a
paper mill in Tunisia. She returned to France in 2005 and obtained her second Master degree
in Process Engineering with “Good” remarks; because of this the French government granted
her the permit to work as a Researcher until 2007. For family reasons, she decided to move
towards self-employment. She started immediately working as a volunteer within the Muslim
consumers association which is ASIDCOM where she played a key role in its development.
She contributed to the majority of its activities, including many published articles and
scientific studies. The most important studies were, "The Benefits of the Religious Slaughter
for Humans and Animals" that was published in one of the official website of the French
Agriculture Ministry and "Survey on the Halal Certification Agencies”, ASIDCOM. Both
studies were translated into English language. In 2012, she published "Muslim Consumption
and Halal Challenges", and “Muslim Consumers Survey Report; The Muslim Consumer as a
Key of the Halal Market". She is currently preparing for two new publication entitled “The
French Halal Industry: Current State and Future Hopes” within the Global Islamic Finance
Report in its 2013 edition, and “The French Halal Butcheries: Current State and Future
Hopes" within the ASIDCOM work. She has contributed in many forums and conferences
such as “The First Gulf Conference for Halal Industry and its Services” and “The Halal
Workshop” held in Kuwait; “The Annual Conference of French Muslims, Paris and “The
World Halal Forum”, Malaysia. She has represented ASIDCOM in the frameworks of the
European Halal Standards held in Paris and Brussels. She is currently a President of the

Association and is working with a young team of highly qualified to set up specialized
committees in order to develop strategies for action to ensure consumer rights is recognized
in various fields especially the Halal area. Currently, she is preparing for her official
graduation in “Law and Theology” at the European Institute for Human Sciences, Paris.
Muhammad Munir Chaudry, Ph.D.

Dr. Muhammad Chaudry received his academic education in Pakistan, Lebanon and the
United States with a PhD. from the University of Illinois at Champaign-Urbana. He is a
career food technologist. For 15 years, he worked in the food industry at various technical
and management positions, responsible for total quality, quality assurance, human resources
and employee training. For the past 30 years, Dr. Chaudry has been managing Halal
certification programs for the Islamic Food and Nutrition Council of America (IFANCA).
Under his administration, Halal certification by IFANCA has expanded to over 4000
production sites in 56 countries. Halal certified products include meat and poultry, seafood,
food products, food ingredients and chemicals, nutritional products and supplements,
cosmetics, personal care products, household products, vaccines, food processing chemicals,
sanitation chemicals and packaging materials. He is a member of the Institute of Food
Technologists and expert consultant to the World Organization for Animal Health. He has
written several articles and papers in technical journals as well as co-authored a book about
Halal Food Production published by CRC PRESS. He was an international delegate for food
safety workshops conducted in India, under the sponsorship of the United Nations
International Trade Center and the American Spice Trade Association. Dr. Chaudry is
experienced in the management of not-for-profit organizations and industrial corporations in
a cross-functional environment.
Sheikh Thafier Najjaar
Sheikh Thafier Najjaar obtained his Masters degree in Shariah at Cairo, Egypt and he had his
BA (Honors) in Shariah at University in Madinah, Saudi Arabia. He continuously works
around the aspect of Halal for approximately 32 years. He was lmaam and Ghatieb for
approximately 25 years in one of the biggest mosques in Cape Town, South Africa where the

introduction of Halal is also one of the aspects of discussion. He was a Director of Institute of
Da'wa where the Halal aspect is part of the syllabus. He was also attending interview
programs on State radio station on a weekly basis and broadcasting information with regards
to Islam, Muslim and non-Muslim listeners. He was also a broadcaster on community Islam
radio station and member of the National Halal Forum of South Africa. Sheikh Thafier
Najjaar presented papers on Halal in various other countries (e.g., Russia, Turkey, etc.). He
also participated in local, regional and international meetings with regards to the
implementation of Halal standards. He is currently a President of the World Halal Council, a
body that strives the implementation of one Halal standard and bring all certifying bodies in
unity; Head of the Judiciary of Islamic Council of South Africa (ICSA) and a Vice President
of ICSA, a national body officially registered in South Africa and has offices nationally and
deal with Halal supervision and auditing.
Amina Ahmed Mohammed
Amina Ahmed Mohammed obtained her Bachelor Degree in Chemistry at Al Ain University,
UAE. She had taken a course in incorporating subcontractor Control & Assessments for
Quality Management System, ISO 9000 & ISO Guide 25 from P. T PATALAS and certified
as an Assessor. She is currently a Director of Accreditation Department, Dubai Municipality,
UAE. Prior to her current position, she held several posts in Dubai Municipality such as Head
of section of Food & Environment Laboratory, Central Lab. Dept.; Head of Chemistry Lab.
Unit, Central Lab. Dept and a Chemical Analyst, Chemistry Sub Unit, Engineering Mat.
section. Her involvements in committees are as follows: Member of Organization Committee
of Dubai Food international conference (DIFC), 2006 to Present; Head of Technical
Committee of (DIFC), 2008 to Present; Member of Nominations Supreme Committee to
Dubai Government Excellence Program, 2004 to 2007; Member of national committee of

Khalid Mohamed Sharif Alawadhi
Khalid Mohamed Sharif Alawadhi obtained his Msc. of Environmental Risk Analysis
Management in Food Hygiene at University of Wales, United Kingdom, 1996. He is
currently a Director of Food Control Department, Dubai Municipality, UAE and prior to his
post he was a Director of Food Control Department, Dubai Municipality (2008); Assistant
Director or Public Health Department, Dubai Municipality (2004-2007); Head of Food
Control Section ,Dubai Municipality (1997-2003); Head of the Food Inspection Unit, Dubai
Municipality (1992-1996); Food Health Officer, Dubai Municipality (1988-1991). He is also
a member of the International Association of Food Protection (IAFP). His contributions and
initiatives are as follows: Dubai strategic plan (2006-2010), (2010 – 2014) (setting the
objectives and performance indicators); Participated in preparing the GCC food import
guidelines (2006); implemented Hazard Analysis Critical Control Program at factories,
hotels, and catering establishments. The program was the first in the region in 1997;
implemented food inspection programs using the hand-held computers since 2000;
implemented the concept of categorization of food establishments based on their grades since
2001; implemented the food classification and registration program based on international
standards since 2007; implemented the concept of comprehensive food control since 2008
through linking all stages of the inspections (from farm or port to fork). His achievements
includes: implemented ISO 17020 standard on the Food Control Department which became
the first authority in the region that implements this standard on all scope of food control;
won the second place in Dubai Excellence Award for the best supervisory employee; part of
the team which won the first place in Dubai Excellence Award as the multidepartment team
(Dubai Police, DM & other departments); won second place in Dubai Excellence Award
2011 (Best Management Initiative) and won Sharjah Charity Award 2011 (Food Charity
Program). He is also a member of the National Food Safety Committee in UAE; National

Food Safety Committee of the GCC Countries; Head of the Food Safety Committee in UAE
and Head of Dubai Food Safety Strategic Plan Committee (2010 – 2014).
Hani Mansour Al-Mazeedi, PhD.
Dr. Hani Al Mazeedi obtained his degree in PhD. in Immunochemistry at London, UK and
his BSc. in Food Manufacturing (USA). For more than 30 years, he works continuously in
the field of Food Safety, Food Quality Systems, and Halal Food Requirements Services. He
has filled his pockets with field and scientific experience in these three areas for a sector that
is of priority concern to human. The systems that has taken most of my interests in the field
of Halal Food Requirements Services is the establishment of Halal system in a number of
countries like Brazil, and in the field of Food safety is Hazard Analysis & Critical Control
Points (HACCP) and related systems such as Good Health Practices (GHP), and Pre-
requisite programs. He presented few Intensive training courses for a number of food
establishments in Kuwait, Saudi Arabia, and in academic universities. He traveled to famous
food industries and slaughterhouses in the world and has watched closely Halal slaughtering
services and the latest food processing techniques in countries such as Australia, New
Zealand, USA, France, Brazil, Italy, Saudi Arabia, and Syria and in addition to Kuwait. He
published few books in Arabic, the first of which was in 1998 entitled “Concepts on Food
Hygiene”, the second was in 2002 entitled “Practical Guide to Food Safety” and the third is
about to be published, entitled “My Food”. He has a book of two parts entitled “Index of
Official papers related to Food and Slaughter according to Islamic Rites, for the period of
1979-2009”. He participated in local and regional meetings and many official visits in the
area of Halal services, Food quality and safety. He has been part of an official visit to
McDonalds at the Hamburger University at Chicago, Ill, USA. He introduced McHalal
System for McDonalds international. He has been selected as a winner of the Halal Journal
Awards 2009 for personal achievements in the Halal activities. He participated in many
official meetings on Halal standards. His was originally working with Kuwait Municipality as
the General Controller of food import. Lately, he has been selected as a member of board to
the International Islamic Halal Authority of Muslim World League in Saudi Arabia. He is

Dr. Abdul Qaher Mohammad Ahmad Qamar
Dr. Abdul Qaher is the Deputy Director of the Fatwa and Comparative Legislations and
Encyclopedias and Lexicons at the International Islamic Fiqh Academy affiliated to the
Organization of Islamic Cooperation in Jeddah. He is the member of joint committee for the
Zayed Encyclopedia for Fiqh and Fundamental Rules Project launched in cooperation
between the International Islamic Fiqh Academy and The Zayed Bin Sultan Al Nahayan
Charitable and Humanitarian Foundation and member of the Saudi Fiqh Association. He
obtained the PhD with honor from the College of Shariah and Islamic Studies at the Umm Al
Qura University. He made many researches including: Death Penalty between Support of
Muslims and Opposition of Westerners, which was presented to the 20th Assembly of the
International Islamic Fiqh Academy in Oran, Algeria; Terrorism: the Diagnosis and
Treatment, which was presented to the 17th Assembly of International Islamic Fiqh Academy
in Amman, Jordan in 2006; Independent Reasoning and Iftaa in the International Islamic Fiqh
Academy, the Mechanism, and Directive Recommendations, which was submitted to the
Conference named, "Iftaa in an Open World: Reality and Desired Hope" organized by the
International Mediation Center in Kuwait in 1428 AH corresponding to 2007 AD; A Juristic
Study on Timeshare Contracts, which was presented to the 18th Assembly of in the

latter paperwork was presented to the International Conference on "Family-related Rulings
between Islamic Shariah and International Announcements and Conventions" held in October
2008 and organized jointly between the Islamic Universities Association and Faculty of
Shariah and Law in at Al Azahar University, Tanta of Egypt and Tanta University. Dr. Abdul
Qaher gave lectures in the Mediation and Dialogue Facilitation Course organized by the
United Nations Organization and the Organization of Islamic Cooperation in Kyrgyzstan. He
participated in many Fiqh and Islamic conferences, meetings, seminars, and was interviewed
by Radio Nedaa Al Islam “Call of Islam Radio Station” broadcast from Sacred Makkah.

Abdul Aziz Mohammad Al Enzi
Dr. Al Enzi obtained bachelor degree from the Faculty of Islamic Shariah with a major in
Islamic Fundamentals in 1992 in the State of Kuwait. He works as a controller of Eftaa
Department in the Kuwait Ministry of Awqaf and Islamic Affairs from 1995 till the present.
He is also the member and reporter of the Scientific Committee of the Second
Gulf Conference on Halal Industry and its Services to be held in Kuwait in 2013. He attended
many seminars and conferences including: Halal Conference held in Malaysia in April 2012
and Halal Conference held in Netherlands in December 2012. He participates in
implementation of the Ifta Department’s Project of Scientific Communication.
Moulana Mohamed Saeed Navlakhi
Mr. Navlakhi is the Theological Director of South African National Halal Authority. Mr.
Moulana Navlakhi was born in South Africa where he completed his schooling career and
vernacular education. He thereafter initiated Islamic studies at Darul Uloom Bury in
Lancashire, UK and finally graduated in the faculty of Islamic Theological Sciences at Jamia
Uloom Islamia, Karachi in 1988. Upon his return to South Africa he joined the Council of
Muslim Theologians where he served in the following capacities: Member – Ta’limi Board -
Board of Islamic Education, Jamiatul Ulama SA, Member Editorial Board -Ar-Rasheed
Periodical, and Executive Member - Halal Food & Beverages Department. He was also
appointed by the Council to serve in the capacity of Shari’ah Consultant at the Islamic Bank
Ltd. Johannesburg and assisted in developing and monitoring the general operations and
Shari’ah compliance of financing modules. In 1994 when the formation of the South African
National Halal Authority was mooted, the Council commissioned him as the Senior
Consultant in developing Halal protocols for the National Halal Authority. He was thereafter
appointed the Chief Shari’ah Director of the organization and serves in that capacity to the
present date. He currently serves in an Executive capacity on the World Halal Council organ
whose aim is to harmonize Halal Certification Standards at a global level. He also serves on
various socio-religious bodies in South Africa and has made significant contributions to
various International forums.

Assoc. Prof. Sharifudin Md Shaarani
Associate Professor Dr. Sharifudin Md Shaarani is the Dean of School of Food Science and
Nutrition, University Malaysia Sabah (UMS), a post he held since August 2010. Earlier, he
worked at Danone (Malaysia) Ptd. Ltd. as a quality assurance executive. He obtained his PhD
in 2007 at the Hershel Smith Laboratory for Chemical Medicine, University of Cambridge,
United Kingdom. His research interests are food processing, sensory evaluation and Halal
food production. He received several research grants from several agencies and government
bodies; amongst the research themes were Halal research, sensory evaluation and food
product development. At the university level, he was a member of the UMS Senate, internal
auditor, and chairman of various committees whilst at the national level he is in the
Malaysian Qualifications Agency Evaluation Panel (MQA) in the field of Food Technology
in 2008-2014 and member of Deans Council for Food Science and Technology for the
Malaysia Institute of Higher Learning. He is also supervising several postgraduate and
undergraduate students and teaches food processing and preservation, food sensory
evaluation and food product development. He has published various international journals
and appointed as referee for several international journals. He presented papers and
participated at various international and local conferences in the area of food processing,
Halal food production and sensory evaluation. He was appointed as a consultant for Halal
food production, HDC (Halal Industri Development Corporation Sdn Bhd) exclusive trainer
for HDC training programmes and Faculty Advisory Committee members of Universiti Tun
Hussein Onn Malaysia (UTHM).
Abdul Rahman Bouzaid
Mr. Bouzaid has a unique experience in Halal concepts as he works on standardizing the
biggest slaughter of a well-known big company in France and other European countries. He
also created the first website which allows tracking the source and slaughtering method of
Halal products and he owns an establishment for delivering his works and services to the
largest French distribution companies and foreign embassies. Moreover, he is studying the

master degree in political and social sciences, which helps him find solutions fit for
countries’ different policies, traditions and laws.
Prof. Dr. Ahmad Al-Haji Al-Kurdy
Professor Dr. Ahmad Alkordy received his PhD degree in Compatative Fiqh “Jurisprudence”
with honors from Al-Azhar University in 1970. He works as a professor in Damascus
University and started his teaching career in the university in 1964. He received Islamic
knowledge outside the academic education by his father Sheikh Mohammad Al Mahdi
Alkordy, his grandfather Sheikh Ahmad Alkordy and at the hands of a group of Aleppo
including Sheikh Abdul Fatah Abu Ghadda, Dr. Fawzi Faiyd Allah, the Great Scholar
Mustafa Al Zarqa, Dr. Mustafa Mujahid, and Dr. Al Husseiny Shehata and others. Dr. Ahmad
Alkordy is an expert in and a member of scientific committees of the Fiqh Encyclopedia, a
member of the Fatwa Department and Vice President of the Public Affairs Committee. He
wrote some publications and books such as: Annulment of Marriage, Personal Status, Fiqh of
Compensations, Women Rulings in Islamic Fiqh, and Researches in Islamic Fiqh, Rulings of
Hajj and the Fiqh Approach. He is a veteran scholar and an expert Hanafi Faqih known for
accuracy, modesty and smartness. The religious posts he has held include: Manager of Al
Bab and Tadef Awqaf Department, Syria; a Professor in Faculty of Islamic Shariah at
Damascus University and a lecturer in Aleppo University, Ibn Ghazi University and Kuwait
University.
