ClassicCuba’s holy trinity - lime juice, mint and white rum - muddled with sugar gives you the basis of any decent mojito. We use Bacardi Blanca to make this one great.

BerryThis one’s a little fruitier. We blend three berry liqueurs (Chambord, framboise and fraise de boise), infuse the whole thing with mint and lime, and top with club soda.

TropicalThis one swaps white rum for Finlandia Mango Vod-ka and passionfruit liqueur. Mint-infused pineapple juice and a squeeze of lime keep it tied to its mo-jito-roots.

CoconutA truly Caribbean-take take on the classic made with Koko Kanu coconut rum. It’s a touch sweeter and a whole lot softer on the palate but just as refresh-ing.

Espresso MartiniThe undisputed champion of classic coffee cocktails: Finlandia vodka, coffee liqueur and a touch of vanil-la shaken with freshly-brewed espresso for a boozy caffeine kick.

Crème BrûléeMartell VS brandy is the base spirit here but the Kahlua Salted Caramel liqueur is the real star. An extra drop of caramel syrup alongside the espresso keeps it sweet and silky-rich.

Cafe L’OrangeGrand Marnier, Finlandia vodka and vanilla syrup are added to the espresso this time for a drink which tastes more like a chocolate orange than a coffee cocktail.

CHRISTMAS

Irish MartiniDublin’s answer to an espresso martini. Made to the same measurements as its classic older brother but the Jamesons and Baileys make it a whole lot cream-ier. Perfect for winter evenings.

New York SourWe’ve revived a classic which has its roots on the East coast of the USA. It’s a whiskey sour with a kick - courtesy of a red wine float. We use our house Shiraz, which works a treat Wild Turkey Bourbon.

Cinnamon and vanilla-spiced liqueur, apricot brandy and cloudy apple juice shaken with lime to balance things out. Think sugar and spice and all things festive.

Crimson and CloverSpiced rum and triple sec married with a homemade orange and clove syrup. We’re paying homage to tra-ditional Christmas flavours of clementime and spice and spiking them with booze and a dash of cranberry.
