GLENKINCHIE 12YR 8.15Notes of fresh cereal and grist, somebarley sweetness and a nutty note.Acacia honey creeps in with gentlewarmth. The palate is very fruity.

JOHNNIE WALKER RED LABEL 5.50Soft and gentle, with sweet grain,sour apple, vanilla cream and white pepper.Caramel and toffee sweetness develops.

JOHNNIE WALKER BLACK LABEL 6.40Notes of winter spice and treacle, hintsof white pepper and a little citrus. Thepalate is quite rich and full with woodsmoke and dry spice, hints of barley andtoffee. Finish is quite fruity with sultanasand mixed peels.

CORK DRY GIN 5.10Its botanicals include coriander, angelica, lemon,lime and juniper - the result is citrus forward with agood helping of herbaceous notes.

DINGLE 6.20Irish Gin made with a secret recipe of botanicalswhich includes rowan berries, bog myrtle, heatherand hawthorn, among others. Juicy and sweet with authentic summer berry notes, followed by fresh herbs.

BERTHAS REVENGE 7.00Almond, hay, dried juniper and orange peel, floralangelica, cumin. Spice arrives first, with plenty ofclove and cardamom. Soon becomes creamy andvanilla, joined by fresh citrus peels.

JAWBOX GIN 10.50Peppery juniper starts it off, followed by fragrantangelica and citrus. Fresh pine begins to grow asit develops, with cardamom adding a hint of spice.Botanicals include juniper, lemon, cubeb, angelica,coriander, cassia, orris root, grains of paradise,cardamom, liquorice root and Black Mountain heather.

GLENDALOUGH 7.90This Wild Botanical Gin is made with a selectionof fresh foraged botanicals from the WicklowMountains, and goes very well in a G&T. Top-notes ofgrapefruit and pine-y juniper. A helping of heatherand rose petal.

HA’PENNY 6.20Flora found in the walled gardens within PhoenixPark. The botanicals include blackberries, lavender,geranium and dandelion flowers as well as traditional

juniper and other well known gin ingredients.

DRUMSHANBO GUNPOWDER GIN 8.50An Irish gin from “Lovely Leitrim”, made with juniper,angelica, orris, caraway, coriander, meadowsweet,cardamom and star anise as well as vapourinfused oriental lemon and lime, fresh grapefruitand gunpowder tea! Here we like to serve it withraspberries or blackberries.

LONDON GINS GORDON’S 5.10Instant citrus aromas on the nose creating a veryfresh experience. Quite dry on the palate however,with lots of citrus lemon flavours hitting first.

TANQUERY 5.80Very fresh and smooth on the nose with slight hintsof juniper and citrus coming through.

TANQUERY NO.10 8.20Very subtle yet fresh aromas of grapefruit on thenose which leads to a great blend of juniper, vanillaand lime on the palate. Slightly sweet that createsa long lasting flavour and a hint of spice at the end.

INTERNATIONAL GINS BOMBAY SAPPHIRE 5.80Opens with a touch of juniper, a ripe citrus andhints of spice in the fragrance. Try with a slice of orange.

THE BOTANIST 9.50Enough botanicals to make us wish we had fivenoses. Big notes of citrus, delicate menthol andflowers everywhere! A huge 31 botanicals go intoThe Botanist, including 22 native to Islay (the Juniperused is wild Islay Juniper).

HENDRICKS 7.60Its lighter on the Juniper, but it’s not completelyabsent. The high notes are cucumber and rose.

COPPERHEAD 12.95Copperhead Gin is a Belgian expression, madewith a selection of five botanicals - juniper,cardamom, orange peel, angelica and coriander.It was apparently named after Mr. Copperhead, analchemist who was searching for the elixir of life.Along the way, he produced the recipe for thisrefreshing gin!

MONKEY 47 12.50The palate starts with some minty, herbal notes.Herbaceous juniper, blackthorne, lavender and anacute resiny pine note that comes across as morespruce/rosemary. As the taste progresses, we getpeppery, vegetal notes, harmoniously entwinedas if a single botanical. The finish, we get oily,aromatic herbs with peppermint leaves, lemonbalm, blackberry and a faint pepper and greentomato aftertaste.

GREY GOOSE 8.50Each batch of Grey Goose begins withsoft winter barley grown in the fertilePicardy region of Northern France.After the wheat grain is fermented anddistilled into a High-Proof Spirit, it travelssouth to Gensac-l-Pallue, in the CognacArrondissement, where it is blended withthe remarkably pristine spring waterfound there. Hints of Citrus & Almond,smooth rounded texture with a longsatisfying finish.

SAUSAGE TREE VODKA 9.50From The Shed Distillery, producers of Drumshanbo Gunpowder gin, comes Sausage Tree vodka. Slow distilled with African Sausage Tree fruit, wild Irish nettle and pure Irish grain spirit, the shed distillery has sought to create "nature's purest Vodka".

THE KRAKEN 6.50It has an extraordinarily rich, spicy flavour.Named for the legendary sea monster,Kraken is a blend of Caribbean rums thatshould certainly suit any fans of rich,navy-style rum.

BLACKS OF KINSALE 18.95Blacks Spiced Irish Rum is the first ever Irish Rum. Small batch handcrafted from the finest Sugar Cane Molasses. Matured in Oak casks, and made with 7 spices blended & mixed to give the perfect taste.

WREY & NEPHEW 8.00Overproof is a very potent spirit indeed!The nose is fruity. Notes of molasses andspice. The palate is fruity and a little spirity.There are notes of banana and Demerara aswell as spice and a little oak. The finish islong and spiced.

OTHER SPIRITSPATRON TEQUILA 8.50This is fresh, crisp and very well rounded,with a touch of oak in the palate.

GLENDELOUGH POITIN 8.00Poitin is arguably the most romanticised of all Irish drinks, as much a part of Irish folklore as Finn McCool and the Children of Lir. Pushed underground in the 17th century, Poitin has morphed into a shady world of quiet nods, likely chancers and backhanders. This is a peek above the turret for the long outlawed drink.

Cocoa beans are roasted, cracked and shelled before the remaining

nibs undergo a process called broyage.

In broyage cocoa nibs are ground by revolving granite blocks, repeatedly crushed to create a warm, thick syrup known as cocoa liquor. This

liquid chocolate is dark, gritty and still very bitter, comprising of fine particles suspended in cocoa butter.

Known as the purest form of chocolate,

cocoa liquor is further processed through refining,

aerating, mixing and tempering to

develop a rich flavour and wonderfully smooth texture.
