Gerrard Seel has been a supplier to Yang Sing since 1984. Roger who has looked after us since the inception of Gerrard Seel; has provided us with invaluable support, helping to shape and steer our wine selection. Taking us from the days when French Burgundy graced every table, to current day; when like ourselves, and many of our diners, Roger is looking for more interesting and lesser known wines.

BRING YOUR OWN - Mondays is our BYO day with our corkage charge being only£5 per bottle of wine. On all other days our corkage charge is £20 per bottle of wine.

Jurgen Haussels founded C&O Wines in 1973, importing exclusive wines from over 50 family owned wine estates from four continents.

Jurgen’s son - Oliver, who looks after Yang Sing, is the next generation in his own family business and shares very similar experiences and outlooks to our own.

We have worked alongside our friends and suppliers to curate a selection of wines from obscure small producers all the way in Japan to big name vineyards closer to home, that make perfect pairings with our cuisine. We continue to see the demand grow for more unique and interesting drinks and producers.

In this edition of the wine list we have explored beyond just family owned, organic or biodynamic wines – we celebrate our female wine makers who have broken through glass ceilings and continue to take more risks and produce ever more exciting wines.

CHAMPAGNE 香槟Gosset is the oldest house in Champagne, founded in 1584 by Pierre Gosset. It was in the 18th Century when

they made their first bottle of sparkling wine using the antique flask shaped bottles that are still used today.

The grapes primarily come from premier and grand cru vineyards surrounding Epernay which, once unified,

receive extensive ageing in the cellar ensuring complexity, intensity and expressiveness.

Padeiro - Areal Rosé, Quinta da Pousada, Vinho Verde, Portugal 12.5% abv £5.80 £7.00 £26.00This is a stunning off dry, ‘spritzy’ pink wine, unctuous mouthfuls of strawberries and cream.

Pinot Noir - Sancerre Rose, Domaine de la Rossignole, Sancerre, France 14% abv £32.50Ravishing Pinot Noir perfume and sumptuous pale colour. Despite its succulent fruit flavours

its bone dry, and with that fine Sancerre minerality.

Picpoul - Picpoul de Pinet, Languedoc, France 12.5% abv £23.00Lauded by the critics Picpoul is the grape of the moment. This is a delicious, lemony, crisp wine from Floris Lemstra’s small

family estate.

Verdejo - Bodegas Pedro Escudero Valdelainos, Spain 13% abv £23.50Fennel, anise and hay aromas enriched by subtle notes of tropical fruit. A wonderful partner to our food, but also very easy

to drink on its own.

Viognier - Reserva, Aves Del Sur, Maule Valley, Chile 13.5% abv £25.508th generation family winery. Orange, pineapple and peach fruit driven with a buttery, nutty oaked finish.

Perfect with our dim sum.

Parellada/Xare-lo/Macabeo - Blanc de Pacs,Parés Baltà, Catalunya, Spain 11.5% abv £5.90 £7.00 £26.50 3rd generation family winery. Ripe, white orchard fruits on the nose are echoed on the palate, tempered by fresh, zesty

lemon acidity and a chalky minerality. A blend of traditional Spanish white grapes, usually used for Cava - a real pleasure.

Fiano - ‘Refiano’ DOCG, Tenuta Cavalier Pepe, Campania, Italy 13% abv £29.50Refinement and structure mark the work of Milena Pepe, head of this classy Campanian estate. Aromatic with floral and fruit

flavours, grapefruit and hints of wild fennel.

Albariño - Senorio di Osuna, Rias Baixas, Spain 12% abv £30.00Silky Iberian white with a saline, mineral backbone. A must with fish and seafood.

Parellada - Honeymoon, Parés Baltà, Catalunya, Spain 11.5% abv £24.00 Winemaking is led here by Marta & Maria Elena. This is a smooth and slightly sweet white wine made entirely from late

harvest Parellada grown in the highest mountains in Penedes, where honey bees help with the pollination of the vines.

Riesling - Hochgewachs, Mosel, Weingut Otto Gorgen, Germany 10% abv £27.00This 300 year old winery is still in the skillful hands of the Gorgen family. This is a modern, off dry Riesling with a citrus dominance.

A delight with any sweet and sour flavours.

Cortese ‘Gavi’ - Masera, Stefano Massone, Piedmont, Italy 12% abv £29.50Stony minerality is framed with notes of apple and pear and a lovely, lingering, refreshing finish. This bright Italian white is a

terrific ‘go to’ white throughout the entire year.

‘Shoreline’ - Lyme Bay, Devon, England 11% abv £32.00A blend of a blend of Bacchus, Pinot Blanc, Reichensteiner and Seyval Blanc. Each parcel of grapes has been treated

individually, creating layers of complexity with notes of rose petal, lemon, nettle and grapefruit.

Gewürztraminer - Tradition, Domaine Sipp Mack, France 13% abv £35.00One of Yang Sing’s all time favourites from 9 generations of the Sipp family. Notes of violets, rose, lychee and spice. Smooth

and amply rich on the palate, with fine acid balance.

Sauvignon Blanc - Holly, Matahiwi Estate,Wairarapa, New Zealand 13.5% abv £8.50 £10.00 £42.00Named after estate owners Alaistar and Robyn’s daughter- Holly. Fermented in barrel, producing an extra layer of

complexity which manifests itself as a backbone of minerality with a hint of caramelised banana.

Furmint - Dry, Tokaji, Henye, Hungary 13% abv £4.80 £6.20 £23.50The d’Aulan family from Champagne bought the estate in 2000 and restored it to its pre-war glory. Ripe pear, white

grapefruit and pepper spice aromas on the nose with the softest suggestion of honeyed sweetness.

Chenin Blanc - Simonsig Estate, Stellenbosch, South Africa 13% abv £24.50Lovely, vibrant early-drinking style wine. A tropical fruit explosion of youthful notes of guavas, pears and sweet melon.

‘Muscadet’ - Sur Lie ‘Les Schistes’, Ch. De La Ragotière, France 12% abv £25.50An oldie but a goodie- an original wine that we have been serving for over 3 decades. Our sommelier often paired this wine with

chili and spice to the surprise of the wine makers; inspired, together we took the wine to the Shanghai market.

Pinot Grigio - Tenuta Viscone, Italy 13% abv £6.20 £8.00 £27.503 generations of the Braidot family have lovingly tendered their vines in the Friuli Grave region, the heartland of Italy’s finest

Pinot Grigio. Silky pear and honey dew melon with an elegant zest on the finish.

Gruner Veltliner - Stefan Bauer, Wagram, Austria 12.5% abv £29.503rd generation family winery grows in harmony with nature, and focuses on Wagram native varieties. Each layer complements

the next, from tart lemon to almond to white pepper, to crisp apple. Exotic and invigorating, with a long-lasting finish.

Pinot Gris - Mount Hector, Matahiwi Estates, Wairarapa, New Zealand 13.5% abv £34.00Luscious wine with aromas of pear and spice on the nose and a tropical richness on the palate.

Nero d’Avola – Terre Sicilane, La Mura, Sicily, Italy 13% abv £22.50Soft, easy drinking, and fresh packed with red berry fruit flavours and just the thing to wash down your meal!

Merlot - Reserva Especial, Valle Andino, Chile 13.5% abv £26.00From the same winemakers behind well known Sol D’Andes, this wine has a good level of fruit on the palate. It’s very well assembled tannins come from French oak barrels. The result is a fresh juicy wine especially for Merlot lovers. Ideal with our spicier dishes.

Pinot Noir - Caranto, Astoria, Veneto, Italy 11.5% abv £5.00 £7.50 £27.00The attractive, bright bouquet is really open and is packed with strawberry and raspberry aromas, lots of crunchy red fruit.

Sangiovese / Canaiolo - San Giorgio A Lapi Chianti Colli Senesi, Chianti, Italy 13% abv £28.50Great Tuscan wine with a full and intense bouquet of red berries, undergrowth and liquorice. On the palate it is harmonious, well balanced, savoury and persistant in the finish. It can even be drunk slightly cool when it really refreshes the parts water cannot reach!

Zinfandel - McManis, California, USA 14.5% abv £30.00Real red Zinfandel that’s powerful and jammy with refreshing acidity. Each mouthful an elegant fruit bowl of raspberries, strawberries, cherries, watermelon and blackberries laced with vanilla, caramel and hazelnuts.

Cabernet Sauvignon blend - Chateau Haut Marbuzet, Saint- Estephe, France 14% abv £35.00One of the oldest properties in Saint Estèphe. The vineyard is perfectly located, and the high proportion of Merlot in the blend gives it an exceptionally soft, mellow character- and makes it one of the most sensual of Bordeaux wines.

Pinot Noir - Latricières-Chambertin Grand Cru, Drouhin-Laroze, France 13.5% abv £65.00This is a stunning wine, perfect for drinking once rested. In the Middle Ages, this climate produced such good quality wines that is was called the “Petite Merveille” (tiny wonder).

Pinot Noir - Domaine Drouhin Laroze, Clos de Vougeot Grand Cru 14% abv £75.00Jammy berry fruit, a touch of rose petals and smoky, woodland aromas. With resting the palate becomes crisp, with grainy tannins, and good depth. One of the domaine’s best wines.

Primitivo – Antonini Ceresa, Puglia, Italy £12.5% abv £21.00The bouquet is complex with notes of spice above the red fruit jam. Full bodied with soft, ripe tannins.

Cabernet Sauvignon - Aves del Sur, Aves Del Sur, Maule Valley, Chile 13% abv £23.008th generation of Del Pedregal family. Delicate aromas of cherries. Cassis and blueberries mixed with sweet notes of chocolate. Juicy and soft tannins.

Tempranillo blend - Rioja Crianza, Bodegas Señorío De Arana,Viña Del Oja, Spain 13.5% abv £4.90 £6.20 £26.80Bodegas Señorío de Arana is a winery founded in the 1970’s, although the Santiago family behind the enterprise have been growing grapes for over a century. A bright ruby colour with a nose of red fruits, hints of oak and toasted vanilla.

‘Valpolicella’, Corvina/Molinara/Rondinella - Classico Ripasso, Luigi Righetti, Italy 13.5% abv £27.00An explosion of red berries leading into gentle notes of wood and spice. Aged in oak barrels for twelve months, this is a lovely velvety and harmonious wine.

Carmenère - Gran Reserva, Sol de Andes, Chile 13.5% abv £28.50Dark and rich, notes of ripe black fruits, spicy black pepper, leafy tobacco aromas. A savoury and concentrated palate with supple dark fruit.

Shiraz - Two in the Bush, Bird in Hand, Adelaide Hills, Australia 14% abv £34.00Rich aromas of berries and pepper with a hint of chocolate - complex sage and blackberry qualities.

Malbec - Aruma, Bodegas Caro, Mendoza, Argentina 14.5% abv £6.50 £8.50 £32.50A partnership between two of the world’s greatest wine making dynasties: Domaines Barons de Rothschild (Lafite) and the Catena

family. This is a rich oaked Malbec brimming with spiced black cherries and a vanilla overture.

Tempranillo - Pago de Los Capellanes Parcela El Picon, Ribera Del Duero, Spain, 14.5% abv £70.00This Tempranillo from fantastic family winery, Sierra Cantabria is prime for drinking. Rich and silky with balsamic notes and hints of

incense and wood smoke. Leather, tobacco, truffle and liquorice are all evidenced on the back of the palate.

‘Amarone’, Corvina/Molinara/Rondinella- Amarone della Valpolicella, Tommaso Bussola, Veneto, Italy 16.5% abv £105.00A bouquet of leather, raisin, dried plums and spice. On the palate, rich, lush, sweet fruit, with flavours of dark chocolate and

coffee. This 2000 Amarone is drinking well now but should be allowed to breathe.

Tempranillo - Dominio Romano, Camino Romano, Ribera Del Duero, Spain 14% abv £36.00This stunning, chewy Tempranillo presents intense fruity aromas of red and black fruit confiture, combined with a gentle touch of

oak and a very fresh, clean finish.

Merlot/Cabernet Franc - St Emilion, Benjamin de Sansonnet, France 13% abv £44.50Tremendous concentration and depth, layers of black fruits, a gentle earthiness and rich dark chocolate, proper grown up mouth-

filling structure and a fine, long finish.

Syrah - Le Sol, Craggy Range, Hawkes Bay, New Zealand 14% abv £46.00Winery set up from scratch and run by Mary and Terry, and their family. The texture is lusciuos, luxurious, hiding a stone wall of tannin

behind the velvet feel of the fruit. It smells and tastes of cracked black peppercorns, rose and stone.

Pinot Noir - Chassagne Montrachet, 1er Cru ‘Boudroittes’, Domaine Ramonet, France 13.5% abv £55.00Through sheer will power and hard work Pierre Ramonet built up one of the finest domaines in France. This Pinot Noir is mature with

notes of undergrowth behind the complex fruitiness.

Tempranillo - Finca El Bosque, Sierra Cantabria, Rioja, Spain 14% abv £80.00Another triumph for the legendary Eguren family. This is a benchmark for modern style Rioja’s. Matured in French and Romanian

oak for 16 months its inky hues, deliver a seductive nose of oak, truffle, and blackberries, hitting the palate with tonnes of black fruit,

cassis and plum.

Whitley Neill 42% abv £4.00Infused with 9 botanicals, London made and Africa inspired this gin is distilled in very small batches in an

antique copper pot and has a softer profile so can be drunk neat over ice.

JJ Whitley Elderflower Gin 38.6% abv £4.00Candied sweetness, dominated by the unmistakable punch of elderflower with flicks of grassiness, orange blossom and honey.

Edinburgh Seaside 43% abv £4.90Sweet and smooth with a slight salty tang, and defined by its fresh, lightly floral aroma.

Three Rivers 40% abv £5.50Local Manchester gin made with a combination of 11 botanicals, subtle perfume on the nose. Vanilla and cinnamon

sweetness with almond and oats. Finally a satisfyingly long, spicy, black pepper finish.

Cuckoo 43% abv £6.00Local Lancashire gin from Holmes Farm. After a slightly sweet, piney juniper start, the flavour develops into citrus with a

lingering taste of cinnamon spice.

Forest 42% abv £7.50A true family enterprise- Lindsay and Karl Bond, along with their 8 year old Harriet, forage in Macclesfield Forest for juicy

RUM 朗姆酒Atlantico Platino 40% abv £4.00A lovely flavoured rum from the Dominican Republic that can easily be enjoyed neat or on the rocks. A handcrafted mix of cane juice rums and molasses rums. The result of this unique production is an incredibly smooth light rum, rich with flavours

of citrus and vanilla.

Atlantico Reserva 40% abv £4.80Another Dominican Republic rum crafted with care and attention that is already a huge hit in the USA. Like Stevie Wonder in a glass. It is a handcrafted mix of different aged rums, carefully selected and blended. The result of this unique production is an incredibly vibrant rum intense with flavours and depth of light oak and tropical fruits.

Pigs nose whisky 40% abv £4.00Smooth 5 year old blended whisky from the creators of the ‘Sheep Dip’ range. It’s as ‘smooth as a pig’s nose’, it is.

Chivas Regal 12yr 40% abv £4.50Banana and butter toffee pepped up with a little allspice and black pepper. A spicy but balanced blend.

SCOTCH SINGLE MALT苏格兰单一麦芽

Smokehead Islay malt 40% abv £4.50Heavily-peated, with smoke and spice with a little delicate sweetness; this will appeal to bold and adventurous whisky drinkers who are looking for something challenging and different.

Glengoyne 12YO malt 43% abv £4.50Unpeated and very quaffable. Subtle, complex flavours of slow distillation and exquisite wood.

Tamdhu 10YO malt 58.5% abv £4.50 One of the best Speysides available and made in an old style distillery. If you like sherried whisky you will love this. Matured

exclusively in sherry oak casks, it drinks like liquid toffee.

West Cork 40% abv £4.00A light and breezy blend, largely in keeping with the gentle “house style” of Irish whiskey. Initially comes across as simple

but grows on you quite a bit as you work through that first glass. Irish fans, give it a spin.

Jamesons 40% abv £4.00The most popular of Irish whiskeys. Marmalade, fudge and madeira balance orchard fruits and cut grass.

Jim Beam 40% abv £4.00Aged for four years in oak barrels to create a smooth, mellow taste with hints of spice; unaltered since 1795.

Nikka All Malt 40% abv £6.00All-malt whisky, made from barley alone and blended from malts matured over long periods of time; blessed with a deep scent and mellow taste.

SAKE & RICE WINE 亚洲酒Pagoda Shaoxing rice wine - China 19% abv £23.00Popularly used for both drinking and cooking because of the fragrant notes; its reddish colour comes from red yeast rice

which can purportedly lower cholesterol.

Nu’er Hong rice wine - China 16% abv £25.00The name of this yellow rice wine means ‘daughter red’ and originated from the Shaoxing tradition of burying the wine

underground when a daughter was born then digging it up and decorating in red for the wedding banquet when the

daughter was to be married.

Cody’s Junmai Daiginjo - Japan 15% abv £12.00 £65.00Masterfully brewed by Darryl Cody, the first American brewmaster. This Junmai Ginjo has a wonderfully smooth and clean

Kuncho Nigori - Japan 12% abv £21.00Unfltered. Nose of apple and melon. Hints of green fruit, cherry, grape and whipping cream in the mouth. Fantastic texture

and gentle sweetness from the rice solids left in this nigori. Serve chilled.

Courvoisier VSOP 40% abv £5.00The spirit develops nutty notes and ages to produce a sweet, caramelized flavor in French fine-grained oak barrels. The fruity
