The contractor accreditation scheme for business Hn y m ase hi Duct survey findings: Ductwork system extracts to a pitched roof on the second floor from the ground floor The system looks to be structurally sound on all floors with easy access to the filters (wingnut fixing) Current set up has not been serviced since installation - there are currently no access panels The fan is enclosed in the ducting - this was not checked as system was in operation The extraction canopy above the cooking equipment is ‘L’ shaped and has 9 apertures for filters. One of these is currently not in place Behind the canopy in the plenum there is a heavy build up of grease and dust debris - plenum failed a ‘Wet Film Thickness Test’ Recommendations: On the 1st floor all the duct surfaces should be cleared of all items and debris Duct system requires 3 x access panels fitting - 2 x 450mm and 1 x 250mm. Two of these would be located either side of the fan with the third being sited between the filters and the section of duct leading to the extraction canopy. The grease filters should be removed and degreased. The canopy should be degreased and bought back in to good order The plenum behind the canopy needs extensive work to firstly remove all the loose debris and then degreasing. (Several degreasing processes will be needed) Kitchen survey findings: Painted ceiling has grease spots in patches Tiled walls from floor to ceiling have noticeable build up of grease spots and drip marks Walkway through to rear entrance has damaged wall and needs repairing Storeroom at back of kitchen has flies present (No fly control on premises) Several food containers on the floor - inadequate shelving/storage space Recommendations: Ceiling needs repainting and the lights need degreasing Damaged wall needs repairing. Tiled walls need degreasing from floor to ceiling Tiled floor should be steam cleaned and degreased with special attention to cracked and damaged tiles. (ideally, any damaged tiles should be replaced) Suitable fly control measures should be put in place Equipment preparation and storage surfaces should be cleaned and sanitised both inside and out Other recommendations: Fly control should be put in place at front of house Debris and rubbish should be removed from the stairwells between the 1st & 2nd floor Ductwork & Kitchen Hygiene Survey Cardiff, 24th July 2012 Reg No: 2891005

2nd floor work

Access panels should be fitted in these locations to allow access to the ducting surfaces and the fan system.

All internal surfaces could be cleaned of dust and grease when suitable access was in place

1st floor work

An access panel should be installed here ensuring sufficient access to area between filters for dust and grease removal.

Removable panels need all 8 filters degreasing and cleaning. Additional access panel may be needed at base of 1st floor section of duct - see yellow arrow

Ground floor work

Cooking equipment should be moved for ease of access - see yellow arrow

Degrease and clean external canopy surfaces including canopy filters

Internal canopy/plenum surfaces needs all dust debris removing & several degreasing treatments - some residual staining will occur but all grease will be removed

Method statement / Work description

Kitchen deep clean

Ceiling degreased where necessary and repainted in ‘brilliant white’, all light fittings cleaned as well

All walls from floor to ceiling degreased, cleaned and sanitised, along with fixtures and fittings e.g. shelves. All equipment would be moved for access and put back in place

Kitchen equipment surfaces both inside and out cleaned, degreased and sanitised (N.B. food products inside equipment should be removed prior to work being carried out)

All floor - tiles degreased and steam cleaned.

Duct work service and maintenance

• Extraction canopy and plenum (area immediately behind canopy) - £ • Duct work from plenum up to and including 8 x filters on 1st floor - £ • Ductwork from filters to discharge duct including fan and housing - £ • Supply and installation of ducting access panels (3qty recommended) - £ each • Cleaning and sanitising all external ducting surfaces (1st & 2nd floor) - £ Kitchen deep clean • Ceiling degreased and repainted - £ • Walls degreased, cleaned and sanitised (all equipment moved as necessary) - £ • Floor degreased, steamed and sanitised - £ • External and internal surfaces of kitchen storage equipment - £ Other recommendations: • Supply of Pluszap 16 watt electric fly killer Inc. 2 year guarantee - £ each (other models available) • Installation of fly killer units in effective locations - £ each • Removal of debris and cleaning of 1st & 2nd floor stairwell - £ Please note that all prices exclude vat.
