WARNING

BEFORE PERFORMING ANY SERVICE THAT INVOLVES ELECTRICAL CONNECTION OR

DISCONNECTION AND/OR ExPOSURE TO ELECTRICAL COMPONENTS, ALWAYS

FOLLOW THE ELECTRICAL LOCKOUT/TAGOUT PROCEDURE. DISCONNECT ALL CIRCUITS.

FAILURE TO COMPLY CAN CAUSE PROPERTY DAMAGE, INJURY OR DEATH.

TheElectricalLOCKOUT/TAGOUTProcedureisusedtoprotectpersonnelworkingonanelectricalappliance.Beforeperforminganymaintenanceorservicethatrequires exposure to electrical components, followthesesteps:

1. Inelectricalbox,placeappliancecircuitbreakerintoOFFposition.

2. PlacealockorotherdeviceonelectricalboxcovertopreventsomeonefromplacingcircuitbreakerON.

3. Placeatagonelectricalboxcovertoindicatethatappliancehasbeendisconnectedforserviceandpowershouldnotberestoreduntiltagisremovedbymaintenancepersonnel.

4. Disconnectappliancepowercordfromelectricaloutlet.

5. Placeatagonthecordtoindicatethatunithasbeendisconnectedforserviceandpowershouldnotberestoreduntiltagisremoved.

ESD WRIST STRAP

Electrostatic Discharge (ESD) is one of the biggestdangerstocomponentsinelectronicdevices.AnESDwriststrapallowsanyaccumulatedstaticchargetodispersesafelythroughitscable,ratherthanthroughstatic-sensitivecomponentssuchasunitcomputer-relatedcomponents.

1. PlacetheESDwriststraparoundyourwrist.Thewriststrapshouldbenexttoyourskin,soitneedstobeplacedunderanyclothes.

2. Tightenthewriststrapsothattheattachedmetalplatemaintainsgoodcontactwithyourskin.Donotovertightenasthewriststrapshouldnotbeuncomfortable.

3. Connect the cable to the wrist strap if it isdisconnected.Thecableshouldbesecurelyclippedinplacetomaintainagoodconnection.

4. Placetheunit’sPowerSwitchintheOFFpositionandfollowtheproperLockout/Tagoutprocedures.

5. Connectthealligatorclipontheotherendofthecabletoametalsurfaceontheunit.Thiscreatesapaththroughwhichanybuilt-upstaticchargecansafelyflowwithoutcausinganydamage.Abuilt-inhighvalueresistorensuresthechargeleaksawayinacontrolledmanner,andprotectstheuser.

DECK ASSEMBLY COMPONENTS

MENU BA RS

TheMenuBarsholdtheKeypadDisplaysthatcontrolandmonitortheperformanceofeachheatingwell.Thequantityvaries(dependingonmodel)andarelocatedonthefrontandbackfacesoftheunit.

TOOLS REQUIRED: Phillips screwdriver; Flat-head screwdriver


2. RemoveandretainthescrewssecuringtheControlSideCoverandremovethecover.

3. RemoveandretainscrewsoftheaffectedMenuBarandpullawayfromthefaceoftheunit.Itisnotnecessary,butrecommended,tocompletelyremovetheMenuBarfromtheunit.

4. Mark and disconnect the affected Menu Bar’smolexconnectorinsidethecontrolcompartment.

5. If it is necessary to reuse the existing KeypadDisplaysinareplacementMenuBar:

a. Removeandretainthetwo(2)screwssecuringtheMenuBarBackChannelandpryoutoftheformerMenuBar.

b. A Keypad Spacer is attached to the rear ofeachKeypadDisplaywithdouble-sidedtape.CarefullypryoffandremovetheKeypadSpacerfromtheaffectedKeypadDisplay(s).Thiswillfree-uptheMenuBarHarness.

c. Disconnect the affected Keypad Display(s)electrical connector from the Menu BarHarness.

d. TheKeypadDisplaysareattachedtotheMenuBarwithdouble-sidedgluedots.CarefullypryoffandremovetheaffectedKeypadDisplayfromtheMenuBar.

e. Carefully scrape any remaining adhesiveresiduefromtheinsideoftheMenuBar.

RESTORE

6. Carefullyplace theKeypadDisplays inplaceontheinteriorsideofthereplacementMenuBar.IfreusingtheKeypadDisplays,itmaybenecessarytouseadditionaldouble-sidedtapetosecuretheKeypadDisplaystotheMenuBar.

7. Connect the replacement Menu Bar Harness’molexconnectorinthecontrolcompartment.

8. ReplacetheKeypadSpacer,over theMenuBarHarness,totherearoftheKeypadDisplay(s).

9. ReinstallMenuBarBackChannelusingitsscrews.

10. ReinstalltheMenuBarusingitsscrews.

11. ReplacetheControlSideCoverandsecurewithitsscrews.

12. Restore power to the unit and test for properfunction.

KEYPAD DISPLAYS

The Keypad Displays control and monitor theperformanceofeachheatingwell.Theyarelocatedinside of the Menu Bar(s) and the quantity varies(dependingonmodel).

TOOLS REQUIRED: Phillips screwdriver; Flat-head screwdriver



3. Disconnect the affected Menu Bar’s molexconnectorinsidethecontrolcompartment.

4. Remove and retain screws of the Menu BarcontainingtheaffectedKeypadDisplayandpullawayfromthefaceoftheunit.Itisnotnecessary,but recommended, to completely remove theMenuBarfromtheunit.

5. Remove and retain the screws securing the Menu BarBackChannelfromthefrontoftheMenuBarandpryoutoftheMenuBar.

6. AKeypadSpacerisattachedtotherearofeachKeypadDisplaywithdouble-sidedtape.CarefullypryoffandremovetheKeypadSpacerfromtheaffectedKeypadDisplay(s).Thiswillfree-uptheMenuBarHarness.

7. Disconnect the affected Keypad Display(s)electricalconnectorfromtheMenuBarHarness.

8. TheKeypadDisplaysareattached to theMenuBar with double-sided glue dots. Carefully pryoffandremovetheaffectedKeypadDisplayfromtheMenuBar.

9. CarefullyscrapeanyremainingadhesiveresiduefromtheinsideoftheMenuBar.

RESTORE:

10. PeelofftheadhesivecoverfromthegluedotsandplaceonthereplacementKeypadDisplay.

11. Peel off the other adhesive cover from the gluedotsandcarefullypositionthereplacementKeypadDisplayinplaceontheinteriorsideoftheMenuBar.

12. ReconnecttheaffectedKeypadDisplay(s)electricalconnectortotheMenuBarHarness.

13. ReplacetheKeypadSpacer,overtheMenuBarHarness,totherearoftheKeypadDisplay(s).

14. Reinstall theMenu Bar Back Channel using itsscrews.

15. ReinstalltheMenuBarusingitsscrews.

RTD (TEMPERATURE) SENSORS

The RTD Sensors monitor the temperature of theheatingwells.Theyareaffixedtothebottom-centerofeachHeatElement,andthequantityvaries(dependingonmodel).

TOOLS REQUIRED: Phillips screwdriver; Aluminum tape; Tie wraps


2. Removeanypansandcoversonthelevel(s)beingremoved.

3. RemoveandretainthescrewssecuringtheTopPanelandremovethecover.


NOTE: If the RTD Sensor to be replaced is on a lower level, start from the top and repeat the following four steps for each level above the desired level.

5. Mark,removethetiewraps,anddisconnectthewires for the RTD Sensors from the RTD board in theControlCompartment.

6. Mark, remove the tie wraps, and disconnectthewires for theEmitter (IRBulb) Sockets andHeat Elements from the Relays in the ControlCompartment.

7. Removethefour(4)screws(2infront,2inback)securingthelinerdeckassemblytotheunit.

8. Carefully lift theentire linerdeckassemblyoutthroughthetopoftheunit.Thismayrequiretwopeople, depending on the location of the IRHSunit.Thoughnotrequiredtodoso,removingthelevel’s IRglassframeassembly(instructionsarecontainedintheEmitterinstructions)willlightentheweightofthelinerdeckassemblyandmakeiteasierforonepersontoaccomplishthistaskiftheIRHSislocatedinanelevatedlocationorhaslimitedaccess.

NOTE: It will be necessary to feed the RTD Sensor, Emitter, and Heat Element wires through the control compartment bushings. Take caution not to damage any of the wires.

9. Invertthelinerdeckassemblyupside-down,thenremoveandretaintheinsulation.

10. TheRTDSensorisattachedtotheheatelementwithdouble-sidedadhesivetapeandcoveredwithaluminumtape.CarefullypryoffandremovetheaffectedRTDSensorfromtheHeatElement.

RESTORE:

11. Peel off the adhesive tape cover from thereplacementRTD Sensor andpress in placeontheheatelement.Replacealuminumtapecover.

12. Feed the Heat Element and RTD Sensor wires in the directionofandthroughthecontrolcompartmentbushingsandreplacetheinsulation.

13. Invert the liner deck assembly right-side up.WhilefeedingtheRTDSensor,Emitter,andHeatElementwires through the appropriate controlcompartmentbushings, carefully slide the linerdeckassembly intotheunit, takingcautionnottodamageanyofthewires.

NOTE: This may require two people, depending on the location of the IRHS unit.

14. Reconnectandtiewrapallpreviouslydisconnectedwiresandconnectorsinthecontrolcompartment.


16. ReplacetheTopPanelandsecurewithitsscrews.


HIGH LIMIT THERMOSTATS

TheHighLimitThermostatsmonitorwelltemperaturesandservesasanemergencycircuitinterrupterincaseofinadvertentoverheating.Thereisoneperlevel,andareaffixedtothebottom-centerofeachheatsink.

TOOLS REQUIRED: Phillips screwdriver; Heat transfer compound; Tie wraps

NOTE: If the High Limit Thermostat to be replaced is on a lower level, start from the top and repeat the following four steps for each level above the desired level.

10.MarkanddisconnectthespadeterminalsfortheaffectedHighLimitThermostat.

11. Removeandretainthetwo(2)11/32"nutssecuringtheHighLimitThermostattotheheatsinkandremovetheHighLimitThermostat.

12. Cleanthemountingsurfaceofanyresidualheattransfercompound.

RESTORE:

13. ApplyheattransfercompoundtothemountingsurfaceofthereplacementHighLimitThermostat.

14. InstallthereplacementHighLimitThermostatandsecurewithitsnuts.

15. Reattach the High Limit Thermostat spadeterminals.Besuretoreapplythetapethathelpssecure the spade terminals to the High LimitThermostat.

HEAT ELEMENTS

TheHeatElementsprovidetheheatingrequiredtokeeptheheatingwellsatproperoperatingtemperatures.ThequantityvariesdependingonmodelandareaffixedtothebottomofeachHeatSink.

TOOLS REQUIRED: Phillips screwdriver; 11/32" nut driver or socket; Heat transfer compound; Tie wraps





NOTE: If the Heat Element to be replaced is on a lower level, start from the top and repeat the following four steps for each level above the desired level.

10.Markanddisconnectthespadeterminalsforthelevel’sHighLimitThermostat.

11. Removeandretainthetwo(2)11/32"nutssecuringtheHighLimitThermostattotheheatsinkandremovetheHighLimitThermostat.

12. Cleanthemountingsurfaceofanyresidualheattransfercompound.

13. RemovetheaffectedHeatElementbypeelingofffromtheheatsink.Ensureanyexcesstapeand/oradhesiveisremoved.

NOTE: The replacement Heat Element will come with a new RTD Sensor attached, so retaining the existing RTD Sensor is unnecessary.

14. PeeltheadhesivetapecoveroffthereplacementHeatElementandpressinplaceontheheatsink,ensuringallairbubblesaresmoothedout.

RESTORE:

15. ApplyheattransfercompoundtothemountingsurfaceoftheHighLimitThermostat.

16.Reinstall the High Limit Thermostat and secure withitsnuts.

17. Reattach the High Limit Thermostat spadeterminals.Besuretoreapplythetapethathelpssecure the spade terminals to the High LimitThermostat.

EMITTER (IR BULB) SOCKETS

TheEmitterSocketsholdandprovidepowertotheEmitters.Therearetwo(2:1front,1back)atthetopofeachheatingwell.

TOOLS REQUIRED: Phillips screwdriver; clean gloves/cloths/towels; 11/16" open-end wrench; Tie wraps


2. Removeallpansandcoversfromthelinerdeckassembly, and levels abovewhere the affectedEmitterSocketistobereplaced.



If the Emitter Socket to be replaced is on a lower level (not for top level replacement), starting from the second level, repeat the following five steps for each level above the desired repair level:

a. RemoveandretainthescrewssecuringtheappropriateMenu Bar(s) andmove to oneside.Itisnotnecessary,butrecommended,tocompletelyremovetheMenuBarfromtheunit.MenuBarinstructionsarecontainedinthismanual.

b. Mark,removethetiewraps,anddisconnectthe wires for the RTD Sensors from the RTD boardintheControlCompartment.

c. Mark,removethetiewraps,anddisconnectthewiresfortheEmitter(IRBulb)SocketsandHeatElementsfromtheRelaysintheControlCompartment.

Youwillnowhaveaccesstoremovethenutsecuringsocketinplace.

5. Eachlinerdeck’sframesupportangles(frontandback)supporttheIRglassframeassemblyinplace.Remove and retain the screws securing the frame supportangleontherowwheretheaffectedSocketistobereplacedandremovetheframesupportangle.Repeatfortheothersideofthelinerdeckassembly.BecarefultosupportandnotlettheIRglassframeassemblyfallanddamagetheheatsink.

6. SlidetheIRglassframeassemblyoutofthelinerdeckassemblybelowtheSockettobereplaced.

NOTE: Make sure the glass has cooled off sufficiently to avoid burns to bare skin. Use gloves if necessary.

RESTORE:

11. Install the replacement Emitter Socket into itsmountingholeandsecurewithitsnut.

12. Usingcleangloves,acleancloth,oracleanpapertowel,reinstallorinsertthereplacementEmitterinto the rear socket first and then gently pushinwarduntilthefrontofthebulbcanbeinsertedintothefrontsocket.

13. Slide the IRglass frameassembly into the linerdeckassembly.

14. Replacetheframesupportanglesonthefrontandbackandsecurethemwiththeirscrews.

15. If other liner deck assemblies were removed,startingwiththelowest,feedtheirRTDSensor,Emitter, and Heat Element wires through theappropriatecontrolcompartmentbushings,andcarefullyslidethelinerdeckassembliesintotheunit,takingcautionnottodamageanyofthewires.Replaceanymoved/removedinsulation.

2. Removeallpansandcoversfromthelinerdeckassembly where the affected Emitter is to bereplaced.

3. IftheEmittertobereplacedisonalowerlevel(not for top level replacement), remove andretainthescrewssecuringtheappropriateMenuBar(s)andmovetooneside.Itisnotnecessary,but recommended, to completely remove theMenuBarfromtheunit.MenuBarinstructionsarecontainedinthismanual.

4. Thelinerdeckassembly’sframesupportangles(front and back) support the IR glass frameassemblyinplace.RemoveandretainthescrewssecuringtheframesupportangleontherowwheretheaffectedEmitteristobereplacedandremovetheframesupportangle.Repeatfortheothersideofthelinerdeckassembly.BecarefultosupportandnotlettheIRglassframeassemblyfallanddamagetheheatsink.

5. SlidetheIRglassframeassemblyoutofthelinerdeckassemblybelowtheEmittertobereplaced.

NOTE: Make sure the glass has cooled off sufficiently to avoid burns to bare skin. Use gloves if necessary.

3. ThedisplaywillgoblankandtheUSBportLEDwillbeginflashinggreen.

4. A second chirp should be heard, then theUSBportLEDwillreturntosolidgreenindicatingthatthefilehassuccessfullyuploadedfromtheIRHStotheUSBdrive.

Checking Heat Sink Temperature

• Asurfacetemperatureprobecanbeusedtocheckthetemperatureoftheheatsinksurface.

• Nopansshouldbeinwellsduringthepre-heatandtemperaturecheckperiod.Pre-heattheholdingunitfor30minutesbeforetakinganytemperaturereadings.

• Ensurethepanlocationbeingmeasuredisnotinaholdcyclemode(timingdown).

• Locate the surface temperature probe in thegeometric center of the desired pan location.Makesuretheprobeismakinggoodcontactwiththesurfacewhiletakingreadings.

• The temperaturecontrolwill exhibit a swing intemperature as the control cycles on and offwhile regulating to the set point temperature.Theaverageofseveralreadingstakenshouldbe+/-5°Ffromthesetpoint.

• Compare the measured temperature to theprogrammedheatsinksetpoint(TEMP)forthespecifiedpanlocation.

Checking IR Bulb Function

• IRbulbsareeitherONorOFF.

• Selectanarrowtoinitiateaholdcycle.

• Afterheatupiscomplete(displaywillshowproductnames),visuallyconfirmtheIRbulbcomeson.

Error Codes

The RTD Board performs a routine, internal checkafterturningtheunitontovalidatetheunitissensingtemperatureandheatingproperly.In the event of a problem,anerrorwilldisplayontheMenuBar:

“BULB” – IR Bulb Circuit Fault

IndicatesafaultwithaspecifiedIRBulbcircuit.Theaffectedpanlocationisnotavailablefortimingproductandaqualifiedservicetechnicianshouldbecontactedtoidentifythecauseofthefault.

“LOW” – Under-Temperature Fault

Indicates a faultwith a heating circuit component.Thedisplaywillshow“LOW”ifthetemperaturestays10°Fbelowthesetpointtemperaturefor30minutes.Theaffectedpanlocationisnotavailablefortimingproductandaqualifiedservicetechnicianshouldbecontactedtoidentifythecauseofthefault.

Mayindicatetheunithasbeenprogrammedimproperly(i.e., loadinga2x4productconfigurationfile intoa2x2unit).Anattempttoproperlyreprogramtheunitshouldbemade.

May indicate a fault with a heat sink temperaturesensor. The affected pan location is not availablefortimingproductandaqualifiedservicetechnicianshouldbecontactedtoidentifythecauseofthefault.

Temperature Check Procedure

1. No pans should be in wells during the pre-heat and temperature check. Pre-heat the warmer for 30 minutes before taking any temperaturereadings.Donottakereadings unlessthecavityhasbeenempty for30minutes. This will allow thetemperaturetostabilizeandwill preventfalsereadings.

2. A digital temperature meter that has beencalibrated must be used to get an accurate temperaturereading.Useathermocouplesurfacetemperatureprobetomeasuretemperatures.

3. Theheatingwell shouldbecleanedandemptybeforethetemperatureischecked.Avoidanyairdraftsthatmightflowthroughthecavity.

4. Locate the surface temperature probe on thebottomofthefirstcavityasshownforthecabinetsize.

5. All temperature controls exhibit a swing intemperatureasthecontrolcyclesonandoffwhileregulatingtothesetpoint.Thecorrectcalibrationtemperature is the average of several readingstakenoveraperiodof20minutesafterthewarmerhasbeenpre-heated.Theaveragetemperatureshouldbe±5°Ffromthesetpoint.

CLEANING & ROUTINE MAINTENANCECLEANING

IF DAILY CLEANING IS PERFORMED ROUTINELY, DEEPER, MORE AGGRESSIVE, CLEANING METHODS CAN BEAVOIDED. OVERLONGERPERIODSOFTIME,FRIEDFOODPRODUCTSCANACCUMULATEANDBAKEONSURFACESOFTHECOMPARTMENTS.

Cleaning solutions need to be alkaline based or non-chloride cleaners.Any cleaner containing chlorideswill damage the protective film of the stainlesssteel. Chlorides are also commonly found in hardwater, salts and household and industrial cleaners.If cleaners containing chlorides are used, be sure to rinserepeatedlyanddrythoroughlyuponcompletion.

WARNING: NEVER USE AN ACID BASED CLEANING SOLUTION!

MANY FOOD PRODUCTS HAVE AN ACIDIC CONTENT WHICH CAN DETERIORATE THE

FINISH. BE SURE TO CLEAN ALL FOOD PRODUCTS FROM ANY STAINLESS STEEL

SURFACE. COMMON ITEMS INCLUDE, TOMATOES, PEPPERS AND OTHER VEGETABLES.

Routine cleaning of stainless steel can be done with soap and water.Extremestainsorgreaseshouldbecleanedwithanon-abrasivecleanerandplasticscrubpad.Itisalwaysgoodtorubwiththegrainofthesteel.

Early signs of stainless steel breakdown can consist of small pits and cracks. If this has begun, cleanthoroughlyandstarttoapplystainlesssteelcleanersinattempttorestoreandpreservethefinishofthesteel’sprotectivelayer.
