Outrigger on the Lagoon • FijiThe Outrigger on the Lagoon is a luxury, officially rated 5-star, resort situated in the heart of Fiji’s Coral Coast. Fijian Food HistoryTraditional Fijian food is a wonderful amalgam of fresh, local ingredients found in the tropics and the traditional preparations and cooking methods passed down the generations. Coconut, fish, rice, taro, sweet potatoes, cassava and breadfruit are the main components in local Fijian dishes.

Lovo is a Fijian delicacy prepared for communal events such as weddings and festivals. A makeshift underground oven is fashioned by digging a hole into the ground and lining it with coconut husks, which are then lit on fire and covered by stones. Meats, fish and vegetables wrapped in banana leaves are then placed on top of the heated stones and cooked for about two and a half hours. Most large resorts in Fiji have a lovo night once a week.

Another national delicacy is kokoda, raw mahi mahi (a type of fish) marinated in coconut cream, lime, onions and tomatoes. Coconut cream is an important ingredient in two other Fijian delicacies: Rourou, a dish made of taro leaves, and tavioka (Cassava), a baked dish made of tapioca and mashed bananas. Duruka, an unusual asparagus-like vegetable that is seasonal during the months of April and May, is also a popular traditional Fijian dish.

The national drink of Fiji is kava, which was traditionally prepared by virgins, who chewed the root of the pepper plant before mixing it with water, but is now made in a more hygienic fashion: by pounding the root in a wooden bowl.

The Fiji Islands are speckled with restaurants that serve traditional fare.

The farm is under the guidance of Lo Chin-Hwa, a Taiwanese farming expert supported by

four staff. Mr. Lo has vast experience in farming projects in Fiji. The farm had its first harvest in October 2010 and was able to produce a total of 153kg cucumbers, 272kg of sweet corns and 16 watermelons weighing at 183kg. To date, the resort still harvests from the same farm that provides quality produce.Matava Resort (Kadavu Island)Covered almost with fresh tropical island rain showers, Matava’s extensive organic vegetable garden and orchards offer the resort kitchen a host of fresh vegetables and fruits to use daily in every meal and provide nothing but the freshest fare.

The organic gardens abundantly offer such fruits as coconuts, pineapple, pawpaw, guava, banana, mangos, lemons, avocados and cumquats.

With the hard work of the local community farmers, the garden supplies delicious organic vegetables such as eggplant, tomatoes, lettuces, cucumber, zucchini, carrots, cabbages, pumpkin, capsicum, radishes, and cassava. To balance vegetable dishes, the organic garden grows an array of herbs such as coriander, basil, sage, lemon grass, mint and oregano.

Since the property composts all organic waste, they have a large compost system to help enrich the already fertile soil. Partnering with local community beekeepers and splitting the honey 50/50 they have pioneered private/community beekeeping on Kadavu with their beehives.

Both for pollination and honey collection this is an advantage in the organic farm and a delicious treat at the breakfast table.Castaway Island Resort (Mamanuca Islands)Castaway Island Resort is one of the most prestigious and famous family resorts in the Mamanucas and around the world that has taken the lead in environmental initiatives to maintain and sustain the environment that surrounds their home native island “Qalito”.

Castaway Island Resort is part of the Mamanuca group of islands and have been trialling a pilot project on their very own island planting vegetables using natural organic materials that are collected and produced as waste from the island. Every morning, seaweeds are raked from along the beach front around the resort and are taken to the back for drying before its use as manure. Also dried sludge that is produced from the sewage plant is kept in a dry shed before it’s mixed with other materials. Ashes from the incinerator are then collected mixed with dried seaweeds and dried sludge to create the organic manure for the vegetable farm.

From the organic manure produced, vegetables like tomatoes, beans, pumpkins and other vegetables, are planted within the sewage plant area. Jean- Michel Cousteau Resort (Savusavu)Sustainability is a main theme at the resort; most herbs, spices and vegetables used are grown in the resort’s organic gardens. All wastewater is treated with biofilters and a “constructed wetland”, preventing any nutrients from reaching the reef and instead using the water to irrigate and fertilise their edible landscaping. Other eco initiatives include a giant clam farm that helps restore depleted wild populations on the region’s coral reefs.

1 Fiji has two seasons…warm and even warmer. It’s a sunny, tropical climate that’ll wash the winter chills from your bones. That doesn’t mean it never rains, but you can expect May to November, the cooler months, to range from 19° to 29°c. And from December to April, the temperatures register from 22° to 33°c.

2014 is shaping up to be yet another big year for Fiji Airways which, in June last year, upgraded its fleet to include three new Airbus A330’s, and undertook a major rebrand including changing

from Air Pacific to its original name, Fiji Airways.Of particular interest to Kiwi holiday-makers are the

recent announcements made by the airline which include an additional flight between Christchurch and Fiji in winter, and a twice-weekly early morning departure from Auckland starting in May.

Stefan Pichler, Managing Director and CEO of Fiji Airways, says the changes to the New Zealand – Fiji schedule are the result of the airline’s ongoing commitment to its passengers and stakeholders.

“We are dedicated to delivering a network schedule that meets the needs of all visitors to Fiji, holiday-makers and business travellers alike,” says Mr Pichler. “Many New Zealanders visit Fiji, and we are working hard to make it even easier to visit our shores.”

The earlier arrival time in Nadi will improve connectivity with ferries and flights to the outer islands for Kiwi passengers. Where previously visitors wanting to experience the outer islands had to overnight in Nadi before heading out, now they are able to maximise all the time they have in Fiji and start their tropical island holiday the day they arrive in Fiji.

In addition, the supplementary Christchurch – Nadi service will give South Islanders even more travel options in the middle of winter.

Fiji Airways currently operates a weekly Sunday departure and will introduce a Tuesday service for the month of July 2014, working towards additional flights later.

Fiji Airways is the only airline to operate a year-round direct service from Christchurch to Fiji, and has been flying from Christchurch to Fiji for more than 20 years.

easier for South Island passengers to fly direct to Fiji, and on to the US without an additional domestic New Zealand connection.

In addition, the departure time has been chosen to not only appeal to Cantabrians, but the greater South Island market with connections possible from over six South Island regional points.

“We are confident this supplementary service will prove popular, and are working towards additional flights later,” says Mr Pichler.

Another key move for the airline is the restructure of its domestic subsidiary, Pacific Sun, which is welcoming several new ATR72 aircraft to its fleet, and rebranding as Fiji Link mid-year.

Pacific Sun, Fiji’s main domestic and regional airline, is wholly owned by Fiji Airways, and the rebranding of the airline is the next step in the on-going restructure of the domestic airline group.

Mr Pichler says they’ve made it a priority to create a new identity for the regional carrier, and Fiji Link will fulfil its role as an extension of the Fiji Airways network, carrying customers throughout Fiji and beyond within the Pacific. Most importantly, it will deliver all the Fijian hospitality and warmth customers expect when visiting the region.

The new airline brand will have a distinct, yet part-of-the-family, look with its parent Fiji Airways. The Fiji Airways earthy colour palette has been retained on the soon-to-be-adopted livery of Fiji Link aircraft.
