Seeking Edibly Fit Volunteer Coordinator

The Denver JCC Edibly Fit CSA is seeking a VolunteerCoordinator. This position will require roughly 1- 3 hours duringthe season from June 3 - October 21, 2010. The initial task ofcreating a volunteer sign upsheet is complete. TheVolunteer Coordinator will keeptrack of the members who havesigned up, call and/or emailvolunteers to remind andconfirm shifts 2 days prior topick-up, keep track of whichmembers still need to complete their volunteer shift and fill inneeded time slots with willing volunteers. If you have a fewextra hours this summer and would like to help make the JCCcommunity a healthy one, please contact [email protected].

SpotlightHazonHazon was founded in late 1999. In May 2004, Tuv Ha'Aretz, thefirst Jewish CSA, was launched in New York with support fromthe New York Ride and a first-time grant from FJC. That firstyear, 78 people bought shares. In 2004 there was one TuvHa'Aretz location in Manhattan. In 2010 the 41 Hazon CSAswhich span the United States, Canada and Israel, give membersthe opportunity to put their purchasing power behind local,sustainable farms while deepening their connection to wheretheir food comes from, and doing so within a context of Jewishcommunity and learning. As Tuv Ha'Aretz continues to expand,the program's sphere of influence will multiply, impacting boththe Jewish community and the world.

Check out the ingredientsin pareve margarine andcoffee whitener. Mother'slists "liquid and partiallyhydrogenated soybean oil"first. Fleischmann's listspartially hydrogenatedsoybean oil second, afterliquid corn oil. The firstthree ingredients in originalCoffee-Rich are, inorder, water, corn syrup andpartially hydrogenatedsoybean oil. The first threeingredients in fat-freeCoffee-Rich are, curiously,identical. "Partiallyhydrogenated" means transfats.

What's wrong with transfats? Trans fats cause heartdisease. They increaseinsulin resistance, whichcauses diabetes. Trans fatsdecrease good cholesteroland increase badcholesterol. They suppressthe immune response,interfere with reproduction,and decrease thenutritional quality ofmilk. They alter theproperties of cellmembranes. They enhancedeposition of abdominalfat.

Trans fats have beenbanned in other countries,and in several citiesthroughout the U.S., butthey have yet to be bannedacross our nation. What theFood & Drug Administration(FDA) has mandated is thatfood containing less than ½gram of trans fat perserving may be advertisedas "trans-fat free." That'snot good enough. In thecase of Coffee-Rich, aserving is 1 tablespoon.

InspirationWhitney OlmsteadWhitney Olmsted came to Denver from San Francisco in 2009,looking for a change. She sought her certification in Pilates thruPhysical Mind Institute and found the Denver Jewish CommunityCenter through a JCC Pilates Client. Lisa Tanguma the PilatesCoordinator says,"I knew right off the bat that Whitney belongedhere. She has a terrific attitude, is loving and caring about herclients and has the makings of a brilliant Pilates Instructor!" Whitney has been here at the JCC for 7 months now and is notonly a Pilates Instructor, but also took on the role of PilatesAssistant Coordinator and CSA (Community SupportedAgriculture) Assistant Coordinator. "She just jumped right in andbecame involved. She has been vital helping me becomeorganized." Whitney is also a certified NE (Nutrition Educator). She will be giving a lecture here at the Denver JCC CommunityCenter for our members later on this summer. If I hadused Coffee-Rich, thatwould have added up toalmost 2 grams of transfat. Just for the first cup. So it would be easy, on anygiven day, to consume quitea bit of trans fat solely fromtrans-fat-free food.

What are our alternatives? First and foremost, skip thecoffee whitener. Drink yourcoffee black, or choose teawith honey or lemon. Trycoconut, almond, soy, orrice milk if you'd like. Bakepareve as our foremothersdid for a thousand years,with coconut oil, whichstays solid below 75 degreesFahrenheit. Decline tomake recipes that call forpareve margarine. Don't useit in place of butter; makedifferent recipes. We voteevery time a bar codepasses over a scanner, sodon't buy margarine orcoffee whitener for yourhome, office, orsynagogue. There is noplace for synthetic transfats in a healthycommunity.

Green NewsThe Continued Cost of OilAll eyes remain on the gulf coast oil spill, and the public seekssolutions and answers. It has been almost seven weeks since theBritish oil giant's offshore rig exploded near the Louisiana coast,igniting what has become the worst oil spill in U.S. history. Itsefforts to remedy the situation have been nothing short of adisaster.

Since the rig blew up on April 20, killing 11 workers, BP hastried a several solutions to lessen the damage and absorb theoil including shoving mud, tire pieces and golf balls into thegushing well. After multiple attempts at what appear to befailed solutions, the damage continues. The oil spill has pouredmillions of gallons of crude oil into the Gulf of Mexico, and as ofnow the oil will continue pouring into the ocean for at leastseveral more weeks, and possibly months. Experts are worriedabout the long-term detrimental effects on the fragileeco-system. Even if any of the latest plans work, they are onlyintended to contain the spill, not stop it. According to BP, thebest way to stop the spill is to drill a relief well. BP is drillingtwo relief wells in the Gulf of Mexico, in case one fails. The firstbegan May 2 and has reached a depth of 12,090 feet. Thesecond began two weeks later and thus far is 8,650 feet deep.The company estimates that the relief wells will be completedin August. The trick to the operation is to make sure the reliefwells squarely intercept the gushing well. "The deeper you get,the longer things take," said BP spokesman Bryan Ferguson.

In the meantime the effects on the ecosystem are devastating.Over 65 miles of shore have been affected by oil, threateningmore than 400 species of wildlife, including birds, sea turtles,marine mammals, fish, oysters and other creatures. Manyspecies of both turtles and birds are now migrating, breedingand nesting in the region. Oil seeping into the marshes andwetlands areas has already sullied two major rookeries forbrown pelicans, the Louisiana state bird.

Tampa-based Suncoast Seabird Sanctuary says it's the largestwild bird hospital in the United States. It is currently asking forvolunteers and donations to help with the Gulf oil spill,particularly with any cleanup efforts that may happen inFlorida.

Recipe:Quinoa/Mixed Green SaladSent in by Lisa Tanguma (CSA Coordinator)

Quinoa's origins are truly ancient. It was one of the three staplefoods, along with corn and potatoes, of the Inca civilization.Quinoa was known then, and still is known, with respect, as themother grain. We call it the "Super grain of the Future."

Quinoa's protein is of an unusually high quality. It is a completeprotein, with an essential amino acid balance close to the ideal... similar to milk!

Quinoa contains more protein than any other grain; an averageof 16.2 percent, compared with 7.5 percent for rice, 9.9percent for millet, and 14 percent for wheat. Some varieties ofquinoa are more than 20 percent protein.

Serves 4-6

1 Cup Inca Red Quinoa, rinsedCourse salt and ground pepper3 tablespoons red-wine vinegar2 tablespoon olive oil1/2 cup packed fresh parsley leaves1 1/2 cup fresh spinach1 1/2 cup mixed baby greens½ large diced tomato

In a medium saucepan, bring quinoa and 1 cup salted water to aboil. Reduce to a simmer and, cover, and cook until water hasbeen absorbed and quinoa is tender. 12 to 15 minutes. Transferto a medium - large bowl and cool to room temperature.

2 tablespoon olive oil1/2 cup packed fresh parsley leaves1 1/2 cup fresh spinach1 1/2 cup mixed baby greens½ large diced tomato

In a medium saucepan, bring quinoa and 1 cup salted water to aboil. Reduce to a simmer and, cover, and cook until water hasbeen absorbed and quinoa is tender. 12 to 15 minutes. Transferto a medium - large bowl and cool to room temperature.

To quinoa, add vinegar and oil. Add in tomatoes, spinach,parsley leaves and mixed baby greens. Season with salt andpepper and toss to combine. Serve chilled.

Salmon with Pea Shoots and Leek1 lb skinless salmon fillet, cubed (Whole Foods will do this foryou if you ask nicely)

1/4 cup wholegrain mustard1 Tbsp lime juice2 Tbsp oil1 large leek, white and light green only, julienned2 Tbsp Tamari2 tsp fish sauce1 Tbsp honey2 1/2 cup snow pea sprouts2 Tbsp fresh cilantro, chopped1/3 cup slivered almonds

Place salmon, mustard and lime in ceramic bowl and toss tocoat. Heat wok very hot. Add oil. Add salmon (in batches ifnecessary) and stir fry until slightly browned. Remove. Add 1Tbsp water along with the leek and stir fry until golden brown. Return the salmon. Add the tamari, fish sauce and honey. Cookuntil the salmon is heated through. Toss with the sprouts andcilantro and heat until they are wilted - it doesn't take long.Sprinkle with almonds. Serve over quinoa!
