Pumpkin Fritters

250 g pumpkin, peeled, cubed

and cooked1 egg, beaten140 g (250 ml) cake flour7 ml baking powder15 ml white sugarsalt5 ml lemon juice2 ml cinnamon

oil for frying

50 g (60 ml) white sugar5 ml cinnamon

1. Drain the cooked pumpkin well.2. Add the beaten egg and mix.3. Add the rest of the ingredients, except

the oil, and mix well. Place a spoonful

of the mixture into hot oil.4. Fry on one side until golden brown

and turn to cook on the other side.5. Remove with slotted spoon and drain

on absorbent paper.6. Leave to cool and sprinkle with

cinnamon sugar.

The oil should be hot for frying, but be

careful not to make it too hot or you will

end up with fritters that are over-cooked

on the outside and raw inside.

Note:

I LOVE pumpkin fritters!! When I first moved to Namibia, I was served them with a Sunday roast lunch - as the vegetable!

This is not really my thing, but as a dessert- YUM!!
