safetY InstRUCtIons anD CHef's GRIllInG ManUalCongratulations on purchasing your Electric Hibachi1. The Electric Hibachi uses the most advanced electric grill technology available. Powered by ThermoCeramixTM2, its combined cooking/searing element uses robust, energy-efficient, proprietary technology to replace the traditional wire (calrod) heating elements used in competitive electric grills. A specially formulated, resistive heating element which is applied directly to the underside of the grilling surface results in quicker heat-up, uniform temperature profiles and enhanced efficiency.

The Electric Hibachi is certified3 to meet the requirements of both CSA C22.2 No. 64-10 and UL 1026. It must be powered in compliance with local codes and ordinances. If no special local codes and ordinances are applicable, the circuit powering the Electric Hibachi shall comply with the requirements of the Canadian Electrical Code (CSA C22.1) in Canada and the National Electrical Code (ANSI/NFPA 70) in the USA.

the following Are common sense bAsic sAfety precAutions thAt must AlwAys be followed when using the electric hibAchi. CaRefUllY ReaD all of tHese InstRUCtIons befoRe UsInG tHe GRIll. sAve these instructions for future reference.

1 Read and follow all instructions.

2 Don't use the Electric Hibachi in the open rain or in standing water. As with any electrical appliance, there is always an electrical shock hazard if used improperly.

3 To protect against possible electric shock, do not immerse the cord, plugs or grill in water or other liquids.

4 Unplug the grill from the power outlet when not in use and before cleaning or servicing. Turn off all grill controls before unplugging from the power outlet.

5 Allow the grill to fully cool before cleaning, servicing or transporting. Don't attempt to move or carry a hot grill. When conducting low-temperature long-term grilling of greasy foods, the grease gutter needs to be emptied during the grilling. Use extreme care as its contents may be very hot. Use appropriate barbecue gloves or oven mitts and carefully remove excess grease with a turkey baster or similar utensil.

6 Don't operate the grill with a damaged cord or plug.

7 If the grill should malfunction or if it has been damaged in any way, don't operate it until after it has been examined, adjusted and repaired by an authorized service facility.

8 Be careful with the electrical cord. Don't let it touch hot surfaces and don't let it hang over the sharp edges of tabletops or counters.

9 Don't use the Electric Hibachi for applications for which it was not designed. Don't attempt to use flammable fuel, such as charcoal, or flammable flavorings, such as wood chips, with the Electric Hibachi.

10 Don't use any attachments with the Electric Hibachi other than those approved and supplied by the manufacturer.

11 Don't plug the Electric Hibachi into an ungrounded outlet. Use only with a grounded three-wire outlet with GFI protection.

12 Only use appropriately rated 12-gauge extension cords with the Electric Hibachi. The Electric Hibachi uses a 1.8 m (6 ft.) long 12-gauge power cord.

13 The Electric Hibachi doesn't have an internal fuse or surge protector. It is protected by the breaker in the electric power circuit and the GFI in this circuit breaker or in the power outlet. A dedicated circuit for the Electric Hibachi is desirable. When used on 15 A circuits which also power other appliances, all other appliances need to be turned off while grilling. The chef will also need ready access to the circuit breaker or other line disconnect switch for the power outlet as well as the related GFI devices.

14 Maintain close and vigilant supervision when grilling in the presence of children. Never leave the grill unattended.

15 Do not touch hot grill surfaces. Always use appropriate oven mitts or barbecue gloves while grilling.

16 Grill in a clear location, free from combustible materials and well removed from any flammable vapors. Maintain ample clearance from combustible surfaces as detailed in the Specifications page of this safety manual.

17 Set the grill on a level, flat clear surface such as a wooden, Formica or metal tabletop. Don't block the space between the bottom of the grill and the tabletop with any foreign objects that could reduce or restrict air flow. The grill must be used on a level surface (both fore and aft and sideways) to enable unrestricted drainage of fat and grease into the grease gutter.

18 When grilling outdoors on a deck or balcony, ensure that there is sufficient air circulation to remove grilling odors and vapors. When grilling indoors, ensure that there is ample natural or forced exhaust to remove grilling odors and vapors. Indoor kitchen exhaust systems are normally placed above cooktops and cook surfaces. Although kitchen cooktops provide a surface directly under an exhaust fan, the Electric Hibachi must not be placed on or near a hot gas or electric burner or in a heated oven because of the danger of fire or severe grill damage. Place the Electric Hibachi on a countertop adjacent to the cooktop and ensure that the exhaust fan is turned on while grilling.

19 The Electric Hibachi does not have a lid. This enables the grill to be placed in the center of a balcony table and accessed from all sides while grilling. Ensure that the grease gutter is regularly cleaned and that there is unrestricted ventilation between the bottom of the grill and the table surface to eliminate the possibility of a grease fire. Never leave a hot grill unattended.

ReaDInG anD UnDeRstanDInG tHe safetY InstRUCtIonsbefore plugging in the electric hibAchi or beginning to use it, the new owner (chef) must reAd And understAnd the Above sAfety instructions And must ensure thAt the relAted electricAl requirements Are complied with.

UnDeRstanDInG tHe ContRolsThe control panel on the Electric Hibachi is shown on the right. An on/off power switch is positioned on the front right side of the Electric Hibachi, while the rotary temperature control switch and related indicator light are positioned on the front panel. The rotary temperature control has infinite numbers of settings between 38oC and 371oC (100oF and 700oF). The temperature control is turned clockwise to raise the temperature and counter-clockwise to lower the temperature. When the power switch is turned on and a desired temperature setting is selected on the rotary control, the indicator light shows RED. At this time, full power is supplied to the Electric Hibachi. When the desired temperature is reached, the indicator light turns to GREEN. Then the smart control reduces power to the Electric Hibachi using only what is required to maintain temperature. If the temperature setting is reduced (for example, from maximum setting for grilling a steak to minimum setting for grilling vegetables), the indicator light FLASHES GREEN until the desired temperature is reached at which time it turns to GREEN. The related temperature settings are as shown.

The proprietary heating technology used in the Electric Hibachi maintains a very uniform surface temperature over the entire grilling surface for each temperature setting.

A bi-metallic thermal cut-off switch is located internally within the Electric Hibachi. It prevents overheating in unforeseen circumstances by cutting off the power supply before damage can occur. The cut-off switch resets automatically and is inaccessible to the user.

tHe GRease GUtteRA grease gutter designed to collect grease and cooking residue surrounds the entire grilling surface of the Electric Hibachi. When the grill is operated on a level surface, grease and cooking residue drain outward from all sides of the grilling surface and are deposited in the grease gutter.

PoWeRInG UP foR tHe fIRst tIMeNow that you have read and understood all the safety precautions and electrical requirements and that you have familiarized yourself with the controls and special attributes of the Electric Hibachi, it's time to power up the grill. The following steps are appropriate:

1 Check for and remove any tape or packing material that may have been used for packaging or shipping the grill.

2 Set the grill on a level surface leaving ample clearance on all sides of the grill and above it.

3 Plug the power cord into a grounded three-wire outlet with GFI protection.

4 Turn the power switch ON, rotate the temperature control fully clockwise and check that the indicator light illuminates with RED.

5 Leave the grill ON allowing it to fully heat to its maximum grilling temperature. The indicator light will change to GREEN when maximum temperature is reached.

6 Leave the grill ON for 15 minutes to burn off any oil or deposits from manufacturing. Check that the grill continues to maintain its set temperature as shown by a constant GREEN indicator light.

7 Leave the grill ON and turn the temperature control counter-clockwise to the mid-point setting. The indicator light will FLASH GREEN until the mid-point temperature is reached after which it will illuminate with a constant GREEN.

NOTE: Some discoloration may occur on the grilling surface. This is normal and does not affect performance.

GettInG ReaDY to GRIll YoUR fIRst Meal on tHe eleCtRIC HIbaCHIIf you are a grilling aficionado, you will immediately recognize that the proprietary heating technology in the Electric Hibachi makes it the best electric grill on the market and the only grill for outdoor balcony use that can truly compete with backyard fired grills. If you are a novice griller, then just follow along.

Most electric grills do not provide high enough grill surface temperatures to enable searing and sealing in juices and goodness. As a result, they require extended cooking times normally resulting in overdone and tasteless outcomes.

GeneRal GRIllInG GUIDelInesThe following are some general, common sense cooking guidelines and hints to be followed when grilling most foods on the Electric Hibachi. The actual cooking protocol that you select will depend on your preferences and the results that you obtain through simple experimentation. You will find that the heater technology used in the Electric Hibachi makes it much more versatile than typical electric grills and enables you to produce a tastier meal. Since the selected temperature setting indicates the actual uniform temperature of the grilling surface, it is possible to quickly sear the outside of a food product to seal in its juices and to then reduce the grilling temperature to cook to the desired doneness level.

1 The maximum temperature setting (371oC/700oF) should always be used for searing steaks. Once the grill temperature is reached, place the steaks on the grill surface. The steaks will initially stick to the hot surface grates. Once they have “released” from the grates, rotate the steaks 90o on the same side. Once moisture appears on the upper surface of the steaks, they are normally ready to be flipped. Use the same procedure when grilling on the flipped side, rotating 90o once during the grilling process. The desired degree of doneness depends on personal preferences. See Grilling your first meal.

2 The Electric Hibachi should be appropriately sheltered from the breeze when grilling outdoors in windy conditions. Always use care and constant supervision when grilling in inclement weather.

3 Since the Electric Hibachi uniformly maintains its selected temperature, it is good for slow cooking. Baby back ribs or pork chops can be slow-cooked to produce “pulled pork”. Set the grill temperature at mid-point setting and cook for several hours, turning occasionally. Once the meat is ready to fall off the bones, increase the temperature to the maximum setting for a short time to finish the pork and give it a nice color. Remove from the grill and apply sauces

as desired. Always watch the accumulation of drippings in the grease gutter when slow cooking pork and remove excess grease as required.

4 The Electric Hibachi is ideal for cooking bacon as bacon can be placed crossways across the grates, suspended above the surface and out of its own grease. when cooking bacon, always watch the accumulation of grease in the grease gutter and remove excess grease as required.

5 Sliced potatoes, mushrooms, peppers, asparagus and similar fresh vegetables are easily cooked on the Electric Hibachi. Select a suitable temperature setting such as minimum or mid-point and perhaps finish them off with a few minutes at maximum setting. Other chefs prefer grilling vegetables such as peppers and mushrooms on maximum setting, watching closely to achieve the desired doneness on each side.

6 Normally, foods should be conditioned at room temperature for several hours before grilling. Taking a food product directly from the refrigerator to the grill may not produce the desired results. Depending on your personal preference, seasoning may be applied to your steaks or other grilled foods before, during, or after grilling is completed.

GRIllInG YoUR fIRst Meal For your first Electric Hibachi grilling experiences, we suggest that you try some of the following dishes.

RIb eYe beef steak

Select a high-quality, marbled rib eye steak 30 mm (1.25 in.) thick. Place the steak on a plate and condition at room temperature for two hours before grilling. Preheat the Electric Hibachi at the maximum setting (371oC/700oF). When the grill has reached maximum temperature, place unseasoned steak on the grilling surface.

After first side is cooked and steak has been flipped, season with freshly ground pepper and sea salt, as desired, or with a high-quality Montréal style steak spice (such as Schwartz's, Moishes, Clubhouse's La Grille or Chef Paul Prudhomme's).

For a rare steak, grill 1.5 to 3 minutes per side. Using meat tongs, turn the steak 90o on the grill surface midway through the grilling of each side to create additional sear marks. For a medium steak, grill an additional 1.5 to 2 minutes per side. For a well done steak, grill an additional 3 minutes per side.

If you are a novice, use a meat thermometer to check the internal degree of doneness and to become familiar with the Electric Hibachi. Guidelines are as follows.

You may wish to allow a steak to rest for about 5 minutes after it is removed from the grill. This ensures that it will retain its juices when it is sliced. Note that the steak will continue to cook and gain an additional 3oC (5oF) internal temperature during this period.

atlantIC salMon

Select a high-quality Atlantic salmon fillet, 45 mm (1.75 in.) thick. Condition the fillet at room temperature for two hours before grilling. Marinate with lemon juice, capers, soya sauce and saki 30 minutes before grilling.

Preheat the Electric Hibachi at maximum setting (371oC/700oF). Place the fillet skin side down on the grill. Grill for 2.5 to 3.5 minutes per side. Caution: do not overcook. The fillet should be slightly translucent, flaky and tender. When it appears ready, flake off a piece to check that it is cooked to your liking.

You may wish to monitor the internal temperature of the salmon. Depending on your preference, it should typically range from 54 to 63oC (130 to 145oF).

Serve with freshly grated ginger and soy sauce.

VeGetables

We can go on with vegetable dishes such as sliced potatoes, green peppers, mushrooms, asparagus or corn on the cob. Preheat the Electric Hibachi at maximum setting (371oC/700oF). Season the vegetables to taste and place on the grill. The high heat will drive off moisture, seal in the goodness of the product and allow the items to grill. Continually move the vegetables around on the grill to avoid burn marks. Some grill marks are ideal for flavor.

CaRe anD CleanInG 1 The Electric Hibachi should be cleaned after each use.

2 before cleaning, turn the grill off, unplug the grill and allow it to cool.

3 Brush any grease and residue in each channel of the grill surface sideways into the grease gutter using a bristle brush or a soft wire brush.

4 A GrillStone cleaning block (Earthstone) also works well for cleaning the grates. Rub the block back and forth on the grill and it will soon assume the contour of the grates. After several uses, the stone accumulates grease, becoming smooth. Flush the greasy stone under hot water to remove the grease so it recovers its abrasiveness. (GrillStone cleaning blocks are made from recycled glass and are readily available in barbecue shops.)

5 If necessary, warm water and a soft scouring pad may be used as a final grate cleaning step, with any excess water allowed to flow into the grease gutter.

6 For final cleaning of the grease gutter, use a paper towel or soft cloth to remove any residual water.

TroubleshootingThe Electric Hibachi doesn't have an internal fuse or surge protector. It is protected by the breaker in the electric power circuit and the GFI in this circuit breaker or in the power outlet.

If the Electric Hibachi does not power up, perform the following checks:

1 Is there an overall power failure? Make certain that the electric outlet is live. Plug in another appliance such as a light to verify that there is power.

2 Is the plug correctly inserted into the power receptacle?

3 Has the circuit breaker tripped? If it has, turn off any other appliances on the same circuit and reset the breaker.

4 Has the GFI (in the circuit breaker or in the power receptacle) tripped? If so, reset the GFI.

5 Turn the power switch to OFF and wait 20 minutes before turning back on; the thermal cut-off disk may have been tripped. Does the indicator light come on? Does the grilling element heat up? If answers to all these questions are yes, enjoy your meal. If the answer to any of these questions is no, contact your dealer or service representative.

6 Does the indicator light blink red? If yes, contact your dealer or service representative.

This warranty applies to the original purchaser and to single-family residential use. It does not apply to commercial use.

This warranty covers parts only. It does not cover labour or labour-related charges.

This warranty does not cover parts becoming defective through misuse, accidental damage, electrical damage or improper handling and storage. It does not apply to rust, corrosion, oxidation or discoloration unless the affected component becomes inoperable.
