What is Sushi and how was it Sushi born?

The word “ Sushi” literally means “acid”, but nowadays this term isused to refer to the particular Japanese cuisine based on thepreparation of a vast range foods with rice as the basis.With regard to its origins one could say that they are not absolutelycertain. The opinion which is the most widely held to be true, is that theChinese Buddhist monks conceived of this type of cuisine in the VIIcentury, and that it was spread to later arrive in Japan.

It was only around 1820 that what is known as Sushi today appearedin Edo (Tokoyo of today). Hanaya Yohei was the creator of nigirizushi:he was the first person to serve pieces of raw fish on his bank ofdelicacies of rice flavoured with vinegar. From then on, selling Sushi inthe streets became a widely diffused practice.

In recent times, the Sushi culture has become widespread all over theworld, giving rise to a large number of variations of this cuisine.
