In addition, the Christchurch earthquakes have

resulted in an increase in inquiry with respect

to Commercial space for both temporary and

permanent relocation of business, and this

along with the associated demand for rental

and residential owned property that will ensue;

is likely to see some upward pressure on prices

in the future.

With less than five months to

completion, momentum is steadily

growing for New Zealand’s first fully

enclosed grassed stadium and largest

indoor arena – Forsyth Barr Stadium.

Dunedin’s new Stadium will be a world-

first architectural icon - where 30,000

excited fans are drawn together to

watch the action, be entertained, and

celebrate.

The construction, which started in June

2009, is well on schedule for completion on

August 1 2011. The successful establishment

of the turf was the most recent milestone and

the Stadium pitch is now a healthy shade of

green. This follows many years of research

to perfect the exact conditions and sun strike

levels required to grow grass under the

innovative, transparent ETFE roof.

ETFE was originally developed for the space

industry, and protects performers and fans

alike from the elements. It has been used for

more than 25 years in the building industry

and is featured at the Beijing National

Aquatics Centre, the UK National Space

Centre and The Eden Project (the world’s

largest eco-conservatory).

The internal roof height of 37 metres has

been designed to allow plenty of room for

rugby balls to be kicked and other high-

flying action to take place underneath (the

highest ever recorded kick at sea level was

29 metres).

The unique Stadium roof:

•Allows sufficient ultraviolet light through to

support the growth of natural grass beneath.

•Doesnotdegradeunderultraviolet lightor

atmospheric pollution

•Hasanexceptionallylonglifespan

•Hasaperfectlysmoothsurfacewhichis‘self-

cleaning’ — dirt is unable to stick to it and is

washed away by rainwater

•Is lighter than glass (1% the weight) yet

incredibly strong — able to bear 400 times

its own weight and stretch to three times its

length — which means it’ll handle wind and

snow with ease

•Is cost-effective — up to 70% cheaper to

install vs. glass, and it transmits more light

andheatthanglass(resultinginupto30%

less energy costs).

An innovative 3D virtual model of the Stadium

has recently been launched via Google

Earth and is available for viewing at www.

forsythbarrstadium.co.nz

stakeholders a real sense of the facilities and

seat views available within the Stadium in the

few months prior to opening.”

The Stadium includes flexible seating layouts,

335 car parks, five lounges, four stands and

twelve food and beverage outlets. Its footprint

is 31,050 square metres (3.1 hectares).

Located on Anzac Avenue, adjacent to the

prestigious University of Otago Campus and

with ample car parking onsite, the Stadium

will become Dunedin’s premier conference

and events venue.

The Southern Lakes Festival of

Colour is a biennial celebration of

the arts. Six exciting days and nights

of astounding performances and

inspiring exhibitions set against the

spectacular autumnal backdrop of

the Southern Lakes.

The Festival is based in Wanaka but reaches

out to the wider region. In 2011 we have

performances in Queenstown, Luggate,

Hawea, Cromwell and Glenorchy.

There are two world premiere theatre shows

commissioned by the Festival . Riverside

Drive is written by award winning screen

writer Graeme Tetley, directed by Sara

Zealand in the early 1950’s when teenagers

got sex and rock and roll and broke free

from so many social constraints. A sure-fire

Rita and Douglas is a brand new play

based on the relationship between painter

Rita Angus and composer Douglas Lilburn.

Lealand and top musician Michael

a high energy journey through Central and

| CUISINE

Dave Cull’s Mushroom Bisque

Ingredients

3oz (75g) butter or oil

1 large onion, peeled and finely chopped

1/2teaspoonsalt

12oz (350g) mushrooms, button or flat

1 teaspoon of dried dill

1/2teaspoondriedthymeor

teaspoon fresh thyme

1 tablespoon paprika

1/4teaspooncayenne

1 pint (570ml) dark vegetable stock

1/4pint(150ml)souredcream

Salt and freshly ground black pepper

3 teaspoon fresh lemon juice

Garnish

Extra sour cream

Gently heat the butter or oil and fry the onion

for 10 minutes adding 1/2 teaspoon of

salt while it its frying to bring out the juices.

Meanwhile wipe and quarter the mushrooms,

then add these to the pan with the dill, thyme,

paprika and cayenne. Cook slowly for a further

7 - 10 minutes on a low heat, covering the

mixture with some buttered paper and a lid.

This extracts a great deal of flavour from both

the onion and the mushrooms and also draws

out the juices which improve the final quality

of the soup.

Pour in the stock and bring to the boil, then

reduce the heat and simmer for 3 minutes.

Cool slightly and then liquidise. Add salt and

pepper and return the soup to a clean pan

adding both the soured cream and lemon

juice. Heat through but do not let it boil other

wise the cream will curdle. When serving, swirl

a little extra soured cream into each bowl.

How to froth milk like an expert

Do we have lots of happy plunger coffee

drinkers musing their way around open

homes in Dunedin? I hope so! If you

missed last month’s article on Getting

the Most Out of your Plunger Coffee

month we will focus on steaming milk

A good proportion of the population likes a

bit of Moo Cow in their coffee. Whether its

Latte or Cappuccino, Flat White or Macchiato,

improving the quality of your milk can really

lift a coffee.

There is more to milk than first meets the

eye. Interestingly milk goes through changes

that effect how it steams. When the cows

are changing feed a barista will often notice

a significant change as the cows make the

adjustment. During this time the milk becomes

harder to control and splitsmore easily. You

really have to be on your game when this is

happening.

We have also been using Organic milk in the

Strictly Coffee cafes recently and the change

in flavour is significant. Anchor are also soon

toreleasea‘SilverTop’versionanditwillbe

interesting to see where that fits in. Some of

the cheaper milks on the market have been

processed differently and make them harder

to steam well. So if you are having issues I’m

sure that you will be able to find something else

to blame. Before you do that however, let’s see

if a few tips from us can help lift your game.

The most important thing is to get the

temperature right. Below 65 degrees the milk is

a little too cool and above 70 degrees the milk

fats start to cook and change the flavour of the

milk. I highly recommend that you purchase a

milk thermometer if you don’t have one already

(cheap ones start at $15) and use it religiously.

If you already have one then it would be worth

checking it against another thermometer so

you know that it hasn’t drifted off a little. A

too frothy Flat White is nothing compared to

one where the milk has been scalded beyond

recognition.

The next step is actually two fold. First we

wouldliketo‘stretch’oraddairtothemilkand

secondlyweliketo‘spin’themilk.Stretchingis

best done when the milk is cool. By hovering

the steam nozzle on quite a vertical angle just

on or below the surface of the milk the steam

blows tiny air bubbles increasing its volume

and consistency. It’s a hard thing to explain

in writing but there is a spot where everything

goes quiet and you are able to hear the jets of

air being blown below the surface. With home

machines the more air you can add early on the

better as they are less powerful than the café

machines but you can’t let it blow big bubbles.

Remember, look for the quiet place. Once the

temperature is up over 45 degrees or so, it is

time to spin it. Think of the steam nozzle as a

jet boat sitting midstream. Change the angle

so that it points more on the 45 angle and aim

to create a whirlpool, again with the nozzle just

below the surface. The whirlpool will help drive

the bigger surface bubbles below the surface

to smooth everything out. Practise definitely

makes perfect but it helps to know what you

are trying to achieve.

So let’s assume now we have nicely stretched

and spun milk sitting at a perfect 67 degrees.

Frothed milk separates quite quickly so as you

are getting prepared to pour, it’s good to “surf”

or spin the milk around the jug using your wrist

to keep it consistently smooth through the

height of the milk. Whether you pour it fast or

slow depends on the style of coffee you are

making, but generally the faster you poor the

more of the heavily frothed milk sitting on top

ends up in the cup.
