I trust this issue of Exclusive finds you refreshed after the festive season.

Most of our team enjoyed a well-earned break after a very busy December. Our Property Management team worked tirelessly through the break, successfully transferred hundreds of tenancies on the December to January changeover. The 2012 Dunedin Fringe FestivalThe ninth Dunedin Fringe Festival,

15-25 March, will present 50 events incorporating 300 artists from throughout New Zealand as well as international guests.

The Festival’s diverse programme showcases innovative art by emerging and established artists in all art forms from comedy to digital art.

In 2012 the Festival has a special focus on experimentation and this is reflected in the programme with some truly extra-ordinary acts but also in a

new audience development campaign encouraging people to “Experiment with Your Entertainment”.

The Festival’s open-access artist policy and strong reputation ensures a high level of participation from artists with 25 world premieres at the 2012 Dunedin Fringe Festival.

Run by an independent charitable trust, the Dunedin Fringe Festival is the only Fringe Festival in the South Island and part of a growing circuit of fringe festivals world wide.

Thieves Alley Market DayDunedin’s biggest annual market day is

here, boasting over 300 stalls attracting thousands of Dunedin residents, Masters Games participants and cruise ship passengers into the inner city. Come along

The annual Otago Rail Trail Duathlon is coming around again, happening on Saturday 25 & Sunday 26 February 2012.

Since February 2000, the annual 150km Otago Central Rail Trail Duathlon has been on the last weekend of February. 2012 is the 13th anniversary of the legendary Otago Central Rail Trail Duathlon.

Meet JoshLate in 2011, Joshua Cooke came along and shared a morning tea with us at Edinburgh Realty. All of the Edinburgh team enjoyed having Josh here so we asked him to work for us part time. He now comes in for a few hours a week and helps us around the office. Josh is an avid baker who brings along morning tea treats. We have learnt that he is very capable sportsman too and is a Special Olympics representative in power lifting amongst other things. Blackhead Beach is one of the most popular beaches on the coast for surfing and it’s no surprise with fun waves like this one frequenting the sand-bottomed surf spot.

Dunedin Light is a weekly photo report from the beaches of Dunedin. Each week local photographer Derek Morrison gets up early and photographs the beaches, their inhabitants and the surf.

The magnificent white stallions of Spain are dancing their way to New Zealand.World-renowned riding master Rene Gasser who, with the experiences of seven generations, has recreated an event only previously seen at the famous riding schools in Vienna and Spain. The horses of Spain are some of the most celebrated in history, favored for centuries by European royalty, equestrian riders and bullfighters and this performance will

celebrate the tradition, athleticism and grace of these revered creatures.

Along with the magnificent stallions, Spanish flamenco dancers will feature in authentic costumes accompanied by the mellow notes of a guitar to bring the sights and sounds of Spain a heartbeat away.

El Caballo Blanco: The Dance of the White Stallions will feature performances involving the Andalusian, Friesian and Lipizzaner breeds and the event is dedicated to showing off the amazing beauty and maneuvers these horses are capable of.

2012 iD DunedinFashion Week27 March - 1 April

Featuring high profile international and Kiwi designers alongside a new generation of top design talent from around the world, iD is a must-see on the global fashion calendar. Two shows will be held on the Southern Hemisphere’s longest catwalk at Dunedin’s historic railway station on Friday 30 March and Saturday 31 March 2012, following a week-long celebration of fashion events in the city.

iD Dunedin Fashion Week has once again secured its place as an international must-see fashion event with a host of high profile New Zealand fashion designers joining global acts and emerging talent at this year’s 13th annual show.

MisteR, a boutique menswear label known for its distinctive international outlook, combines the heritage of British tailoring and the experimental fun and quirkiness of Asian fashion, while Barbara Lee has been at the forefront of fashion since opening her signature store in 1978. She is famous for designing sexy, fabulous city wear for high-flying women. New Zealand’s leading label of high fashion leather garments, Caroline Moore, features collections designed and tailored in the company’s Christchurch premises by expert seamstresses using the finest lambskins selected from tanneries in New Zealand and Italy.

Also featuring in this year’s iD Fashion Show, with an exceptional capsule collection, is a joint showcase by the Cooper sisters, Tamsin and Emily, with their respective labels Tamsin Cooper and Silkbody. The collection will feature Silkbody garments styled beautifully with Tamsin Cooper accessories and velvet coats creating synergies of silk and luxury.

iD Dunedin Fashion Week Committee Chair Susie Staley, says this year’s line-up offers fresh, new designers on their way to great things, alongside many longstanding Kiwi favourites. “For the 13th year running, iD offers the public a chance to see top established and emerging designers in our world-class fashion shows, right here in Dunedin,” says Susie.

iD Dunedin Fashion Week will show its support of Christchurch designers with three special ‘Celebrate Christchurch’ capsule collections to feature on the runway of this year’s iD Fashion Show. High profile and popular Christchurch labels MisteR, Barbara Lee and Caroline Moore were approached by the iD Fashion Week Committee to showcase their Winter 2012 collections in the iD Fashion Shows.

Susie Staley says the committee felt the opportunity to show at iD may be welcomed by these designers who, along with many others in Christchurch, have experienced considerable hardship personally and professionally over the past 16 months. “We’re thrilled that these three Christchurch-based designers will join our ‘Dunedin’ designers and enjoy the fun and excitement that being part of the iD Fashion Show is all about. These four capsule collections will join the 18 other participating labels selected to show their winter collections, including many of Dunedin’s much-loved designers such as Nom*D, Carlson, Mild Red, Charmaine Reveley, and Company of Strangers alongside some of the hottest new labels in the country. Vintage and Vaughan Geeson will also return to this year’s line-up, with their collections offering strong runway appeal.

RUBY and Liam (a new label from Madame Hawke’s Emily Miller-Sharma), two of New Zealand’s most exciting young labels, will show at iD for the first time. Emily Miller-Sharma returns to iD as a fully fledged designer after winning second place in the iD Emerging Designer Awards in 2007.

The 2012 capsule collections feature five mini collections from emerging and established labels with strong Dunedin connections, including the ever popular Cherry Cotton Candy and BurtenShaw

(Cheryl Burtenshaw) alongside an edgy collection by Jane Sutherland. Two new labels, Undone and DEVa’L, will make their debut on the iD runway with capsule collections. Undone was recently launched by Otago Polytechnic graduates Rachel Webb and Elise Barnes, who showed as graduates in 2011, while DEVa’L, a sophisticated label by Debbie Lawson, will show at iD following her relocation to Dunedin from Christchurch. Completing the line-up is the best of the 2011 Otago Polytechnic School of Design graduates, Fiona Clements, Molly Barrington, Grace Averis, Jojo Ross and Phillip Hawkins, who will show their designs alongside the winners from the 2012 iD International Emerging Designer Awards show.

The international guest for the iD Dunedin Fashion Shows remains a closely guarded secret but promises to further build on the success seen with previous guests including British royalty Zandra Rhodes, Australia’s finest Akira Isogawa and Charlotte Smith with her Darnell Collection. British fashion

icon and twice crowned British Fashion Journalist of the Year, Hilary Alexander is guest judge at the iD International Emerging Designer Awards on Thursday 29 March.

\\ 10 essential BBQ tips

1. Don’t cook cold meatIf you’re only going to change one thing about your BBQ habits, make sure you always bring your meat back to room temperature before cooking. The biggest struggle with cooking on the BBQ is to get the heat from the outside of your steak into the middle without burning the surface to a cinder. The warmer things are in the middle before it goes onto the fire, the easier it is to win the battle.

2. Preheat properlyIf you’re going to get a good crust on your food and that lovely BBQ flavour, you need your barbie to be hot before you start cook-ing. This also helps if you’ve been a bit slack in the cleaning department.

3. Thin is inThe thinner your meat, the less far the heat has to travel to cook the middle, so the easier it is to get the inside right without

burning the outside. Start with steaks about 1cm (1/2 in) thick then push them out with your hands to about 1/2cm (1/4in). This mechanical action also tenderises the meat and increases the surface area for more BBQ flavour. If you really must have 2 inch thick steaks, think about starting them on the BBQ to sear and get the flavour and then finishing them in the oven.

4. Don’t poke and prodIt takes time for your caramelised BBQ crust to develop and this won’t happen if you’re continually flipping your steaks or burgers. Only turn once or twice. And definitely don’t squash everything down as this forces the juices to run out and leaves you with sad dry meat. Sausages are also best left alone – piercing the skins dries them out.

5. Don’t fuel the fire with fatIf you pour the marinade over your meat on the grill and wonder why the flames flared

up and turned everything to charcoal, read on. Make sure your meat is well drained of excess marinade or cook it on the hot plate. For fatty meat like chops it’s best to either trim or cook them on the hotplate and finish them off on the grill.

6. Remember food hygieneIt’s funny how the outdoors can make some people forget the basics. Always put your cooked food on a clean plate or chopping board and never add marinade that was used for raw meat to cooked meat. Simple.

7. RestNo, not the Chef. When you compare meat that had been barbequed and then rested for varying amounts of time, the ‘unrested’ meat will have juices running out everywhere whereas the sample that rests for a while before being cut will look lovely and juicy on the inside without any juices on the plate. It’s all about letting the muscle fibres relax and take back the juices after the intensity of the heat.

8. Clean your BBQThere will be some of you who are completely guilty of being lazy when it comes to cleaning and your poor BBQ shows the results with rusted out grill bars and a very sad looking hotplate. And to those of you who subscribe to the theory that if you just leave the BBQ to burn off any food scraps for a few minutes after cooking then you don’t need to clean? Wishful thinking.

9. Earn the right to be BBQ King(or Queen)

One thing stands out about New Zealand BBQ culture... People who wouldn’t be seen dead in the kitchen who then decide they have the divine right to comandeer the BBQ. Barbequeing is for people who can cook. If you can’t make a salad, or a sauce you certainly shouldn’t be put in charge of the waguy beef. Earn your stripes... or tongs.

10. Expand your BBQ repetoirePretend (or commit) that the only cooking appliance you have is the BBQ. You will be amazed at how creative you can get. BBQ scones are a great campsite favourite. You don’t have to go extreme but it can be great fun to play around with dry rubs, pre and post cooking marinades, skewers, cooking in parcels, slow cooking and even smoking.

To make ganache melt 250gm of chocolate and 400ml of cream over a bain marie, once melted put aside. Melt the remaining 400gm of chocolate over a bain marie. Remove once melted. While that is melting, separate the eggs. Beat the brown sugar with the eggs yolks, when fluffy add the cinnamon. Whisk egg whites until soft peaks form, slowly rain in the white sugar until hard peaks form. Whisk mascarpone untill stiff. Place the ramekins in an oven tray with sides.Pour the first melted chocolate ganache evenly into each ramekin. Fold second chocolate mixture into the egg whites then fold the mascarpone mixture into the egg yolk mixture.Combine both mixtures and evenly distribute between theramekins. Fill the tray with hot water until it reaches half way up the sides of the ramekins. Cover the tray with foil and bake at 180°c for 40mins. Remove from the oven and allow the puddings to cool in the water bath. If you want to reheat them you can do so in the microwave, then run a knife around the ramekin and tip pudding onto a plate, the sauce will flow over the top.

Ingredients

400ml cream

650gm dark chocolate

6 free range eggs

150gm brown sugar

1 pinch of cinnamon

100gm castor sugar

150gm mascarpone

10 greased ramekins

Open every day and night, offering breakfast from 7.30am, the restaurant has become a popular place since it’s opening in April 2009. No.7 Balmac enjoys the support of the diverse local community from new mothers, walking groups, cyclist and business meetings to celebrations providing a welcoming environment where people can drop day and night and enjoy a meal or a drink. Leading the kitchen since December 2009 at No.7 Balmac is a man who has been plying his trade at prestigious restaurants throughout New Zealand and Australia for many years. Head Chef Billy Allan left Sydney and returned to New Zealand in 2009, with his Australian wife Penny and young family. They settled in Dunedin so their children could have the benefits of growing up in a smaller community.
