What’s a Cocoa Nib?

Nibs are cocoa beans that are carefully harvested, fermented, then roasted and broken into “nib” pieces, releasing natural chocolate flavor. Add flavor complexity to your meals with a dash of cocoa nibs — enjoy them as a simple snack, sprinkle on salads, mix into popcorn, or bake into desserts!

Pods grow on the trunks and branches of the cocoa tree and come in many colors, from greens to yellows and bright reds.

Pods

The sweetest part of the cocoa pod, pulp protects and nourishes the beans while they’re growing. It has a tropical fruit flavor and some cultures enjoy it as a drink.

Vital ingredient in the fermentation process of the cocoa bean (one of the first steps in making chocolate!).

Pulp

Small cocoa pods can contain about 10 cocoa beans and

large pods can contain about 40-50 beans.

Beans are fermented, dried, and roasted. Then, shells are

removed and beans are broken into smaller pieces called nibs.

Bean

Contain cocoa butter and cocoa solids, both of

which are needed to make chocolate.

Are ground into a dark paste that is called chocolate liquor

(non-alcoholic of course!).

Add natural ingredients like cane sugar/vanilla and you

have the foundation of a dark chocolate!

Cocoa Nib Apricot Almond Panforte1 cup PURE DARK® Maple Cranberry Granola (divided into ¼ cup and ¾ cup) ¼ cup PURE DARK® Chocolate Nibs¾ cup dried apricot, large dice½ cup dates, large dice1½ cups almonds, toasted½ cup pistachios½ cup pumpkin seeds½ cup flour

Preheat oven to 300̊ F and brush 8” spring form pan with butter. Cut out a circle of parchment for the pan, place in pan, brush with butter, and sprinkle ¼ cup of granola. Mix all dry ingredients (except the remaining granola and Chocolate Rounds) in a large bowl. In a large sauce pan, heat sugar and honey until it comes to a full boil. Boil for 30 seconds. Pour mixture into dry ingredients and combine. Pour mixture into spring form pan and smooth the top. Bake for 20-30 minutes or until edges bubble. Remove from the oven and top with Chocolate Rounds while still warm to melt the chocolate. Sprinkle with remaining granola and cool. Cut into squares and serve.

Grilled Fish Tacos

Remove fish from marinade and gently place onto a hot grill, flesh side down. Grill fish for 4 minutes and then turn over and cook for one minute and remove.
