Leading the innovative culinary team at Hilton Anaheim is Executive Chef Frederic Castan, a seasoned, French-born Chef with more than 30 years of culinary experience.

TTrained in Marseille, France, Frederic Castan has served in an Executive Chef role at some of America’s finest hotels and resorts including the Westin South Coast Plaza in Costa Mesa, The Ritz Carlton hotels in Pasadena and Laguna Niguel, and Sofitel Chicago Water Tower.

Prior to joining HiltonPrior to joining Hilton Anaheim, Castan spent nearly a decade as Executive Chef of the five-star, five-diamond St. Regis Resort Monarch Beach, where he was in charge of operations, menu creation, preparation and presentation at each restaurant in the resort.

In 2018, he was honored with the prestigious Toque d’Argent Award and recognized by the World Congress of Chefs for his decades of experience through cuisine, mencuisine, mentorship and community involvement.

Looking back on my youth, on my family farm where I was brought up in Provence, France... I can still remember the smell in the kitchen of the red wine cooking with the fresh herbs, garlic and vegetables from our farm. - Chef Castan
