Fields on the Saco combines the best in artfullyprepared, local cuisine with farms, artists andslow food movements from Maine and New Hampshire.Take three neighboring New Hampshire and Maine farms and combine them with the talents of four award winning MWV chefs and Mt Washington Valley’s Green Team, and the result is a fabulous four course meal and event in the fields of Green Thumb Farms on the Saco River. On this night alone everything that touches your taste buds during an extraordinary meal will have been raised in the fertile ground of bordering family farms in Maine and New Hampshire.
But there is more than a distinctive meal; in keeping with the Slow Food movement developing in Mt Washington Valley, there will be guided farm tours and demos by local artisans, an historical trolley tour through farmlands, farm stores filled with foods, flowers and locally made products, “Canvassing the White Mountains:1834-1954” Exhibit at The Pace Gallery at the Leura Hill Eastman Performing Arts Center, New Hampshire wines, Maine’s distinctive Cold River Vodka and Gin, a corn maize, live music and an auction.
This event will support Mt Washington Valley’s Green Team’s efforts to engage Mount Washington Valley residents and businesses in adopting eco-friendly practices to reduce their environmental impact, and their community gardens project.

The idea for Cold River Vodka originated with brothersLee and Donnie Thibodeau.Growing up in Presque Isle, the heart of Maine’s potato country, they listened to their father and uncles talk about turning potatoes into vodka. However, the realities of tending to the potato crop and the rigors of the annual harvest left little time.
Six years ago, the idea of commercially producing distinctive Maine potato vodka resurfaced between Donnie and Lee as they were driving back to their childhood home in Presque Isle. After years of talking about business ideas and debating the future of Maine’s potato industry, the two decided to make a potato based vodka from Green Thumb Farms potatoes. A farmer’s greatest challenge is to find a way to add value to their crop. This goal complemented their desire to preserve Maine’s open space and become the only vodka distillery in the country that would oversee its entire production – from planting potato seed to bottling vodka.
The four partners and their wives chose the name Cold River because glaciers carved the Cold River through the backbone of western Maine. From the aquifer that this clear pristine river feeds, the distillery takes its water. From a dream to a reality, from the ground to glass, from spud to super-premium spirits this is where Cold River Vodka and now Cold River Gin originate.

Beginning in 1964 as a small dairy farm in East Conway NH,Sherman Farm has evolved over the years to the large retail farm market it is today. Three generations work the farm and together have developed a market that is open year round offering a wide array of products. Sixty acres of vegetables are grown for the farm stand including their signature crops, tomatoes, sweet corn, greens, and cantaloupes. Sherman Farm’s milk is processed, bottled in glass and sold at the farm and throughout central NH. Their beef & pork are raised naturally, processed in a USDA plant and sold as retail cuts at the farm stand.Sherman Farm uses integrated pest management techniques where pesticides are used minimally and only when a specific crop is affected. Their soils are tested annually and fertilizer is used in specific amounts for the crop needs. These methods save money and are safer for the environment. Cover crops are being used for rotation as well as conservation measures. Many of the crops are grown on raised beds with drip irrigation lines which uses a low pressure plastic line to direct the water to the roots therefore reducing waste.In 1997, Sherman Farm was named a “Farm of Distinction” by the New Hampshire Department of Agriculture. They are committed to producing products in the most progressive way possible with the utmost respect for themselves, their employees, their customers and the land. Since 1799 the Westons have practiced sustainable agriculture on the rich soils of the Saco River Valley. Currently over one thousand acres are under production in timber, diversified vegetables, maple sugar orchards, Christmas trees, and forage hay.The Westons operate two farm markets in the Mount Washington Valley, one at the farm in Fryeburg and the other on the West Side Road in Conway, NH. The Westons have a rich history ofconservation on their land. These conservation practices include crop rotations, cropland erosion control, cover cropping, and riverbank stabilization. More modern methods are also used such as drip irrigation, Integrated Pest Management and the use of beneficial insects to combat unwanted pests. The Westons also try to minimize the amount of petroleum based plastics they use to reduce their carbon footprint and also minimize the amount of waste produced at the end of the growing season. The farm uses B20 Biodiesel in all their tractors.In 2006 the Westons were named “Cooperator of the Year” by the Oxford County Soil and Water Conservation District for their outstanding commitment to conservation on their land. In 2008 the Westons added a variety of USDA certified organic produce in addition to their traditional “Pesticide Free” crops. Also, in 2008 the entire Weston Farm was placed on the United States Registry of Historic Places making it one of only a handful of farms with the distinction of continually operating as a working farm under the original family.

Lisa Somerville is an award winning pastry chef that has been working in valley hotels and restaurants since 2003. From the historic Eagle Mountain House to the grand Omni Mount Washington Resort, she has developed a wide range of baking skills and techniques.
Lisa’s desserts have been described as“not just visually whimsical but deliciousand comforting”.
She was awarded Chef of the Year in 2006 by the White Mountain Chapter of the American Culinary Federation. Lisa became a Certified Executive Pastry Chef in May of 2009.
Lisa and her husband, Jim Somerville, created Vintage Baking Company that opened July 2010. They envisioned a small grab n’ go bakery and wine shop that used high quality ingredients and local producers where local folks could get high quality baked goods, yummy sandwiches, great cheeses, and affordable wine.
They wanted to bring to the valley a type of place we grew up going to, where folks were friendly and the boxes were tied with that red and white string. Places where you remember the goodies 20 years down the road.

Derrek Schlottmann, a former US Naval submariner, is the self-taught Chef of Admiral Peary House Bed and Breakast Innin Fryeburg, Maine.
With grandparents from Mexico and his own experiences and personal adventures to various countries around the world, he’s become known for his diverse culinary views which he uses to create unique recipes and menus.
Together with Jonathan Spak of The Oxford House Inn, Derrek has created an annual Mexican food extravaganza celebrating authentic Mexican cuisine.
His experience also includes catering for many weddings and special occasions at Admiral Peary House as well as other inns in Mount Washington Valley.
His recipes and food have been featured on Maine’s NBC affiliate “207” television show, in Yankee magazine, at The Oxford House Inn, on the Heart of New England website, and even in the Old Farmer’s Almanac Cookbook.
In addition to his culinary skills he is an avid home-brewer and regularly teaches home-brewing classes at the inn.
