Flank Steak Tacos withLime Cilantro Slaw————————————————————————————— —————————————————————

Tacos:1½ pounds flank steak, trimmed1 (16-ounce) package Sweet Tea Pork Brine1 tablespoon olive oil2 tablespoons Everyday Rub (see page 9 for rub)1 avocado, thinly sliced½ red onion, thinly sliced12 (6-inch) corn tortillas, warmed

Lime Cilantro Slaw:1 (10-ounce) package angle hair slaw½ teaspoon kosher salt2 tablespoons lime juice2 tablespoons orange juice1 teaspoon honey1½ tablespoons canola oil½ cup roughly chopped cilantro

FIRST Brine flank steak according to package directions. Brush both sides of steak with oil and sprinkle with rub. Let sit at room temperature for 20 minutes.

NEXT While steak is resting, toss slaw in a large bowl with salt. In a small bowl, whisk lime and orange juice, honey, and oil together. Season dressing with freshly ground black pepper and toss with slaw and cilantro; set aside until ready to serve.

LAST Preheat grill or grill pan medium high heat. Sear steak for 4-6 minutes per side, depending on desired doneness. Remove from grill and let rest for 10 minutes. Slice steak across the grain into thin slices. Divide steak evenly among tortillas, top with onion, avocado, and slaw. Serve immediately.

PREP TIME 25 minutesCOOK TIME 30 minutesYIELDS 6-8 servings

Soup:2 teaspoons olive oil1 medium onion, chopped3 medium carrots, cut into ½” slices3 cloves garlic, chopped1 (32 ounce) can diced fire-roasted tomatoes6 cups low-sodium organic vegetable or chicken stock½ teaspoon dried thyme1 bay leaf½ cup dried elbow pasta4 cups roughly chopped kale2 medium zucchini, cut into ½-inch pieces, about 2 ½ cups1 can white beans, rinsed and drained2 cups diced leftover turkey or chicken1 tablespoon balsamic vinegarFreshly grated Parmesan cheese for garnish

Pistou:1 small clove garlic, chopped2 cup fresh basil leaves1/3 cup olive oil

FIRST Heat oil in a large Dutch oven over medium-high heat. Add onion and carrots and sauté until slightly tender, about 5 minutes. Add garlic and stir until fragrant, about 30 seconds. Stir in tomatoes, stock, thyme, and bay leaf. Bring to a boil, reduce heat, and simmer for 20 minutes.

NEXT While soup is cooking, puree garlic and basil in a food processor. With motor running, slowly add olive oil until smooth; set aside.

LAST Add pasta to soup and simmer for 5 minutes. Stir in kale, zucchini, beans, turkey, and vinegar. Cook until zucchini is tender, about 5 more minutes. Season to taste with salt and pepper. Ladle soup into bowls and top with a teaspoon of basil pistou.
