It’s that time of year again… whoop! whoop!... where we have to start thinking about our office party,

dinner with the outlaws or a festive meal with friends.

Here at flavour we have put together some of our favourite restaurants, hotels, delis, cafes and

butchers to provide you with a wealth of options for planning that memorable dining experience, and

we are very lucky here in the West Country to have so many great places to eat, drink and be merry.

Christmas is all about giving - whether that be gifts,

a meal out or just a little bit of extra love - and we think the best way of showing that is through the medium of food.

There can be no better way!

The Arundell Arms Hotel and Restaurant has beenowned and run by the same family for 50 yearsand, as a former coaching inn, it has been

welcoming guests for over 300 years. It is a unique venuethat has the flexibility to create the perfect Christmasexperience for any size of party up to 100 guests. All of thestaff are local, professional and friendly (as consistentlycommented on in customer reviews), and really help tocreate a welcoming atmosphere that captures the spiritof Christmas.

The kitchen is led by Head Chef Steve Pidgeon and his brigade of talented, young, local chefs. Steve is one ofonly 80 Masterchefs and his consistently high standard offood has been recognised over the last 17 years by theaccolade of two AA Rosettes. His food is locally sourced,seasonal and offers a blend of contemporary andtraditional dishes.

The elegant restaurant has recently been redecorated and,with its high ceiling, glittering chandelier and hugeChristmas tree, is ideal for a Christmas lunch or dinner.A choice of set menus start at £17, while Steve is morethan happy to design individual bespoke menus to suit allindividual tastes and budgets.

For private parties of up to eight guests, the Ottery Roomis a recently-restored classic Georgian room. With itsoriginal wooden shutters in the bow window, log fire andilluminated by candles, it enhances the warmth andambience of an intimate gathering.

For a more informal setting, the old school house TamarRoom is popular for parties and discos for up to 100people with its own bar and food service.

The village pub, the Lifton Courthouse, is attached to the hotel and offers local ales and hearty, quality pub food. Formerly the village police station, it hasexposed stone walls and the original cell bars at thewindows. It has a lively informal atmosphere particularlyon live music nights.

the delectable Bell’s Diner, in Montpelier, is one of Bristol’s most

treasured foodie haunts. For over 10 years, it has been honed to perfection by chef/patron Christopher Wicks – one of the country’s most admired and respected fine dining chefs.

Chris and the team have developed a fun and exciting Christmas menu, using flavours and aromas that bring to mind associations of the festive season.

Starters include a rich and tender pork ‘Ferrero Rocher’, consisting of butternut squash and praline, which has been wrapped in picked pork and crumbed; a really playful and unique experience. For the main course you might opt for the seasonal venison, which has been paired with salted, baked beetroot, cocoa, foraged salsify and bone marrow.

Diners with a sweet tooth can anticipate exciting treats such as minced pie soufflé with brandy butter anglaise, served with a clotted cream and pastry ice cream. Or try the fragrant tonka

bean and vanilla rice pudding, with native sloes, and a very novel Christmas tree ice cream. Whatever you choose, you can be sure that it will be very different to what any other restaurant might offer: Bell’s Diner is truly unique.

Bell’s Diner also presents a newly extended wine list with house wines starting from £16.50, including a section dedicated to natural wines and a more esoteric collection for connoisseurs. Finding the perfect place to eat out over the Christmas and New Year

period can often be a bit of headache, especially if you’re booking a family celebration or a company function for a lot of people. Fortunately there is a solution: The Biddestone Arms. This traditional pub offers fine cuisine, fine wines, a wide selection of real ales and excellent service, and the staff will work with you to ensure that the organisation of your special festive meal is as hassle-free as possible.

Licensees James and Louise Hedges will ensure you receive a warm and friendly welcome to the quintessential Cotswold village of Biddestone in Wiltshire, near Chippenham. Most of their food is locally sourced and includes local game in season as well as fresh seafood delivered direct from the quay side in Looe, Cornwall.James, who leads the talented kitchen team, knows more

than a thing or two about food: He first trained as a chef with the famous Roux brothers in London, before later becoming head chef at The Cottage Inn, in Maidens Green, Berkshire. James then ran his own restaurant in Binfield, Berkshire, before moving to Biddestone.

James says: “Our fine cuisine may be best described as ‘Modern British’, using the finest quality and local ingredients. Our menus feature classic English dishes cooked to a very high standard but simply presented. Many customers comment of finding a real hidden gem”.

The Biddestone Arms was recently voted the ‘Best in the South West’ in the Punch Taverns Pub Excellence Awards, and has been awarded Cask Marque accreditation for its real ales.

the BoAthousethe Boathouse is a

splendid riverside pub in Bath, which overlooks the

Avon River.

It has expansive landscaped gardens, which lead down to the river, and for the days when the cold is not too biting, there is a lovely al fresco dining deck.

The atmosphere here is very friendly and relaxed; the staff are really attentive, and knowledgeable about their food and drink. The team at The Boathouse are looking forward to Christmas, and preparations are well underway. The Christmas menu has just been released, and is incredibly appetising. Fresh crab cakes with alioli and lime are zingy and delicious as a starter, and the herb crusted salmon on char-grilled Mediterranean vegetables with pesto dressing provides a tasty alternative to the roast Pembrokeshire turkey, which is similarly exceptional and comes with all the trimmings.

For a classic Boathouse dessert, try the Old English sherry trifle,

which is rich and creamy, as trifle ought to be. And don’t forget to take a look at the excellent selection of real ales and continental beers on offer, as well as the carefully picked wine list.

Wherever possible, The Boathouse sources British, and always from quality producers it can trust. The provenance is top notch, and includes Madgetts free-range chicken from the Wye Valley, Aberdaran crab and Celtic Pride Welsh Pork.

the Foxsince taking over at The Fox over two years

ago, Alex, Derek and Lisa Geneen have been building a very well-regarded destina-

tion dining pub. It's a real family business. Alex is responsible for the business side and running of the pub, while Lisa and Derek look after the interiors and outside space.

With its roots firmly in the community, The Fox has become a firm favourite of foodies and locals alike. The food offering is based on seasonal and local ingredients, with the vast majority sourced from a 15-mile radius. Alex and his team in the kitchen work closely with their suppliers to ensure that only the highest quality, local produce is used and The Fox also has a smallholding at the rear of the beer garden which enables them to produce all their own eggs (chickens and ducks). There are rare breed pigs raised on site and the kitchen team make all their own bacon, sausages and charcuterie in house.

Although food is of great importance to the team at The Fox, drinkers are equally well catered for, with a great selection of lagers and West Country cider. With four real ales on hand pump and 15 wines by the glass on offer there really is something for everyone.

Now that the autumn is firmly with us the log fires will be lit and more game will be on the menu. It is now open on Monday nights from and is starting an early menu deal between 6pm and 7pm Monday to Friday of ‘a plate and a pint for £10’, consisting of pub classics such as toad in the hole, fish and chips, ham egg and chips, steak and ale pie and others.

Bookings are now well under way for Christmas parties. The Fox is open Christmas Day for lunch. This will be a popular time so it’s advised to book early.

The Muset by Ronnie. His distinguished career has seen him work in some of the most prestigious kitchens in the UK and Europe, for celebrated chefs such as Anton Mosimann and Ed Baines. Schooled in classic French techniques, Ron’s modern European cooking style is underpinned with a passion for using the very best seasonal ingredients. The thing I love most about Christmas lunch is the sight of the table covered with delicious treats. There is

always an excess, more than we could possibly eat, which is quite clear by the number of little dishes surrounding a centrepiece of roasted meat which in the past few years has been a turkey and a ham.

This year why not try something a little different, while keeping with the traditional centrepiece and garnishes? How about a Venison Wellington with sides of red cabbage, Brussels sprout with almonds, carrot and swede purée and chestnut, onions and bacon.

I have suggested refreshing the sprouts in iced water. This could be done the day before and is aimed at taking the pressure off the big day. It also allows the dish to be brought together quiet quickly leaving you to spend more time with your friends and family. Ingredients

400g Brussels sprouts 50g butter100g flaked almonds Salt and ground pepper

Method Peel the skins of the sprouts and slice into quarters. Bring a large pan of water to the boil, add some salt followed by the sprouts. Cook for 3-5 minutes. Remove the sprouts from the water and plunge into iced water. Once the sprouts are cold remove from the water and drain. To serve, melt the butter in a large ‘heavy-bottomed’ pan, add the almond and cook until the butter begins to turn golden brown. Add the blanched sprouts and toss. Season with salt and pepper and place in a warm dish.

chestnuts, onions, and Bacon serves 6 to 8125g pancetta250g baby onions250g Peeled and roasted chestnuts (available from a good deli)2 tbsps honeySalt and pepper1 tablespoon flat-leaf parsley leaves

Method: Peel the baby shallots and cut the pancetta into batons, about ½ cm thick and 2-3cm long.

In a large heavy-bottomed pan, start to cook the bacon over a medium-low heat, stirring often. When the fat starts to render, add the onions with a couple of table-spoons of water, cover with a lid or tin foil and bake in a pre-heated oven at 160°C for 30 minutes.

Remove from the oven, add the chestnuts and honey and toss to warm through being careful not to break the nuts. Season with salt and plenty of pepper, and then sprinkle with the parsley and serve in a small bowl.

red cabbage¼ red cabbage1 small onion50g butter250ml Red wine (shiraz)50g caster sugar½ cinnamon stick

Method: Shred the cabbage into fine strips and slice the onion. Heat a heavy-bottomed pan and sweat the onion. Add the cabbage, wine, sugar and cinnamon, cover with water and bring to a boil. Turn the pan down to a simmer, cover and gently cook for an hour. Remove the lid and continue to cook until all the liquid has evaporated. Season and keep warm. (The cabbage can be made a day in advance, cooled and reheated when needed).

venison Wellington1kg venison loin, trimmed and cleanedSprig of yhyme3 Garlic cloves2 tbsps vegetable oil50g butter300g mushroom duxelles (see recipe right)4 large crepes (see recipe right)

1 large sheet puff pastry2 egg yolks

Method: Heat a heavy-bottomed pan and season the venison with salt and pepper. Add the oil, thyme and garlic to the pan. Once the herbs start to colour add the venison and butter. Seal the venison all over, remove from the heat and leave to cool.

Lay out a large kitchen cloth. Place the sheet of puff pastry on the kitchen cloth. The pastry should be 3mm thick, 30cm wide and 50cm long. Cut the crepes into squares and lay them over the pastry leaving a 4cm border. Spread the mushroom duxelles evenly over the crepes. Brush the borders of the pastry with egg yolk.

Place the sealed loin of venison in the centre of the duxelles. Using the kitchen cloth lift the pastry over the venison and roll. The cloth will help keep the tension and wrap the pastry tightly around the venison. Press the edges of the pastry together to seal it.

Place the Wellington on a baking tray lined with baking paper. Brush the pastry with the egg yolk and score a pattern with the back of a knife.

Place in the fridge until you are ready to cook.

Bake at 200°C in a pre-heated oven for 50 minutes for medium rare. Remove from the oven and rest for 15-20 min. (To cook it through, leave it to rest in the oven, but switch it off.)

To serve, cut the Wellington into 5cm thick slices and knapp with the sauce.

Method: Heat a saucepan, add the mushrooms and the wine, season with a little salt, cover and simmer for 10 minutes. Finely chop the shallots, melt the butter in a pan and sweet the shallots (cook without colour).

Once the mushrooms are cooked, place them in a food processor and

chop them finely. Add the mush-rooms to the shallots and cook until dry. Season with salt pepper and chopped parsley. Leave to cool.

Method: Sift the flour and salt together and place in a bowl. Make a well in the centre.

Crack the egg into the well and whisk, slowly incorporating flour from the sides of the well. Once a paste forms gradually add some of the milk until all the flour is in-corporated. A smooth paste should form. Add the rest of the milk to make a batter. Melt the butter and add half the butter to the batter.

Use a non-stick frying pan and lightly coat with some of the melted butter, and then add enough batter to form a thin pancake. Cook until it begins to solidify. Using a palette knife, turn the crepe and cook until golden.

Leave the crepe to cool and make another three.

madeira sauceVenison trimmings2 tbsps olive oil50g shallots4 large cloves of garlic2 sprigs of thyme1 tbsp butter50ml chicken stock1 tablespoon sherry vinegar1 tablespoon cognac100ml Madeira Wine Method: Chop the trimmings into small pieces, about 2cm. Sauté in a thick-bottomed pan until the trimmings start to turn brown. Add the shallots, garlic and thyme and continue to fry for a minute.

Add the cognac and flambé. Once the flame has burnt out add the sherry vinegar and reduce to syrup. Add the Madeira and reduce again so half the volume of Madeira is

left. Add the chicken stock and simmer for 30min. Adjust the seasoning and pass through a fine sieve.

eighteen years young, and still going strong, the Primrose Café in Clifton - the area many call Bristol’s answer to Chelsea - is

a firm favourite for Christmas parties, with so many repeat bookings year after year, and there’s a reason for that: they serve some fantastic, boldly unpretentious food in a gorgeous setting, and the staff are to put it simply, wonderful.

This year they are offering a deliciously festive menu from just £25 for three courses using the very best of local, seasonal and sustainable ingredients. Dishes are well designed; colour, flavour and texture are all balanced perfectly in this classic yet innovative menu. For starters, try the home-cured gravlax with dill sauce, which is simple yet perfectly prepared, and clearly takes influence from the Scandinavian-cuisine craze that is sweeping the

country’s kitchens. Follow this up with a delectable duo of duck breast and melt-in-your-mouth confit duck leg on a bed of braised red cabbage. Those with a sweet tooth will not leave disappointed either: the caramelised white chocolate crème brûlée served with vanilla shortbread is quite divine. Discounts are available for those who dine on Mondays or Tuesdays, making this menu, already very reasonable, even better value.

The Primrose Café plays host to two quirky and intimate dining rooms, and both can

be hired free of charge for large parties of festive revellers. When the frost is not biting too hard, there is also a charming terrace that is ideal for pre-dinner drinks. Smaller parties can also be catered for in the buzzing downstairs dining room.

The Primrose Café will also be offering their seasonal á la carte and specials menus for parties of six or less, and will be offering a table d’hote menu from Tuesday to Thursday evenings up until December 1, when the Christmas menus come into play.

All dishes use ingredients that have been traditionally harvested without the use of artificial fertilizers and growth promoters, which reflect the seasons and support local businesses. Their wild fish comes from Cornwall and is caught on day boats using lines or small nets and delivered every day. Meat and poultry come from local farms that pay particular attention to the welfare of their livestock. The Primrose Café also raises pigs (!) and serves them on the menu as often as they can, making their own hams, chorizo and bacon.

in the bleak mid-winter, there’s nothing quite like tucking into a hunk of

cheese layered over a cracker, preferably with a sizeable glass of mead/wine in your other hand. Of course, the truth of that statement depends largely on the cheese so it’s fortunate that Turnbulls Deli and Café stock some of the finest fromages on the planet.

Turnbulls is a curiosity: Shaftesbury’s not a very big town, only 8,000 strong, and it’s a surprise to find a shop there displaying some of the best speciality cheeses outside of London. But Shaftsbury is pretty special too. Perched on a hilltop its location is one of the most beautiful in the English countryside, so much so that its locals jokingly dub it “The Shire”.

Turnbulls started up 8 years ago when its owner, Charlie Turnbull, quit being an

accountant and started selling cheese. “When we started, many of my suppliers were unique to me, locally anyway. Now most post offices, farm shops and village shops are selling the same stuff. But they can't compete with my cheese. And there are some great cheeses that are just a joy to sell.” He mentions local varieties such as Montgomery, Westcombe, Keens, Dorset Blue Vinney and Woolsery, as well as some quality European curds: he talks of 30-month-old Emmentals and rich Gorgonzola Dolce.

His store and café restaurant – he has about 40 covers and just about every dish is under a tenner – are all about the food.

“The photos on the walls I took myself – they are of cheeses I met on my travels. Those are rows of Ossau Iraty at Agour in the Pyrennees – you can try some here. It won the world

cheese awards a few years ago and it’ s the best.”It’s a two metre black and white photo that is a cross between a cheese store and the final scene in Raiders of the Lost Arc.

Turnbulls is the kind of place we need more of: galleries to speciality foods where curiosity and delight collide, and with people like Charlie as their curators. Head for Shaftesbury this season. Life’s too short not to.

Just outside the historic city of Bath is Park Farm, in Kelston, where the historic

organic Bath Soft Cheese is made. Once well-known, and a firm favourite of Admiral Lord Nelson, this gooey, mushroomy, square, white-mould ripened cheese is now making a big comeback, and is still being made using the old-fashioned methods used in the 17th century, which imbues the cheeses with more flavour, before being served wrapped in parchment paper.

The Bath Soft Cheese Company make many other varieties of organic cheese, including the multi-award winning Wyfe of Bath Cheese, a sweet, nutty semi-hard cheese. It picked up a gold medal at Nantwich International cheese show this year and last year, and came first in the organic hard cheese category at the National Cheese awards held at the Bath & West Show in May - the second year in a row that it has won that category.

The company also make the Kelston Park cheese, a

larger more citrus flavoured soft cheese. According to the Daily Telegraph, it “has an authentic mix of creaminess and a delicious rind… as good as anything from Meaux”.

The Bath Blue Cheese is a newbie, and has only been around for a few years but is already winning many awards and admirers. It is creamy, moist and crumbly. This blue cheese has a strong flavour, but without the sharpness that put some people off blue.

You can get Bath Soft Cheese Company cheese in any quality deli, for example at the Fine Cheese Co; Nibbles or Paxton and Whitfield, online at Pong or Abel & Cole, or by visiting the farm shop at Park Farm, Kelston. Bath Soft Cheese will also be co-hosting a stall with Paxton and Whitfield at the Bath Christmas Market.

It’s cheese and cracker season, and without a doubt the Bath Soft Cheeses will be the first to disappear off of that festive platter.
