pitt&sherry’s expertise ranges from examination of
energy efficiency opportunities for specific production
processes to assessment of the benefits of switching
energy sources.
We provide a holistic approach to each process
assessment, delivering a thorough evaluation of
initiatives from a profit and payback perspective, and
looking at aspects such as potential new products, waste
streams and grade yield from existing processing.
Our environmental services division complements this
expertise by identifying and managing a project’s
environmental risks and uses this experience to
integrate environmental and sustainability initiatives
within a project.
We undertake strategic planning, environmental
impact assessments, and carbon footprint and natural
resource management.

Cheese manufacturing faci l i ty
Client: Lion
Location: Burnie, Tasmania
Scope: Detailed design and
project management
Lion’s $120 million redevelopment of its Burnie
cheese manufacturing operation aimed to double
the factory’s capacity from 11,000 to 22,000
tonnes per annum.
All project team members used sustainable
thinking to ensure the design considered the
whole‐of‐life environmental, social and
financial costs of the plant. The following
sustainable features were incorporated into
the facility.
When pitt&sherry began the commission,
the previous building design had led to a
quantity surveying estimate of approximately
$50 million, which was some $20 million
above the available budget. Designing a building
to the required budget challenged
the client’s previously held concept of how
a manufacturing facility should be developed
and (among other things) how cheese could
be conveyed. The net result was a decrease
in areas required for manufacturing
equipment and storage, and a building
that used the natural fall of the site to
its advantage.
Noise mitigation to prevent adverse
impacts on neighbouring residences.
Innovative use and design of hardstand and
landscaped areas to accommodate the
imbalance of cut‐and‐fill material generated
from site earthworks.

New brewhouse
Client: J Boag & Son
Location: Launceston, Tasmania
Scope: Detailed design – full services
pitt&sherry was commissioned by J Boag
& Son to provide project management and
detailed design services for a $23 million
building and infrastructure expansion of
their Launceston brewery, which is located
within a heritage‐significant precinct.
The project team was responsible for all
relevant planning and permitting,
management of the building design process
(including liaison between all stakeholders),
and all contract management from
tendering through to administration.
Crucial to the success of the project were
regular client liaison and reporting;
integration of OEM‐designed equipment
with the building design, and effective use
of existing site infrastructure; a robust and
effective tender process; and timely
completion of the civil infrastructure
components of the works.
The project team’s ability to design a
building that could be constructed while
equipment was being installed, enabled us
to meet the client’s tight project delivery
timeline. The brewhouse was completed in
18 months and adds capacity for around
five‐and‐a‐half million extra cases of beer
product, much of which is for the Australian
domestic market.
Facil ity design
pitt&sherry works closely with food and beverage
clients to assess opportunities for the development
of greenfields and existing manufacturing facilities.
We provide business case studies and risk and
scenario analysis, generate concept designs, and
coordinate the design processes while working hand‐
in‐hand with clients on all facets of project
management, from program and cost‐to‐tender
management, to contract administration and
construction supervision and support.
Our designs incorporate the requirements of the
following disciplines in facility development.

tender documents, and manages the tender process,
including the review of tenders for compliance with
the documentation and specifications.
Milk processing faci l i ty
Client: Murray Goulburn Co‐operative
Location: Laverton, Melbourne
Scope: Detailed design – full services
pitt&sherry was engaged by Murray Goulburn
Co‐operative (MGC) to undertake the design and
documentation for new dairy plant in Laverton,
Victoria, and Penrith, New South Wales, and
project manage their construction. The project
brief required a sustainable, flexible design that
could be constructed on both the Victorian and
New South Wales sites with minimal changes.
pitt&sherry’s scope of work included conceptual
and detailed design for building and services,
through to final documentation for all engineering
disciplines, as well as all construction project
management.

The design of the building services component of
the project was coordinated using REVIT software,
which develops virtual 3‐D walk‐through models
before construction, thus mitigating risk while
optimising project construction times.

Whether it is for the upgrade of an existing facility,
or for the creation of a new development,
pitt&sherry can coordinate, design and provide
detailed documentation of all building services,
including electrical, mechanical, critical hygiene
HVAC, fire and hydraulics.
Our knowledge and understanding of building
design criteria and manufacturing processes enables
us to manage complex and seemingly conflicting
agendas. Collaboration with the client, builder and
architect promotes joint development and
integration of building services infrastructure with
manufacturing processes.
In addition, our clients in the food and beverage
industry often require identification of deficiencies
and restrictions that may hinder the expansion of
their sites. Our team provides site audits of
industrial service capacities, including steam,
electrical, fire, compressed air, water, gas and
drainage.
pitt&sherry can develop consolidated composite
site plans of the services, buildings and property
titles to identify and rectify inconsistencies,
discrepancies and omissions.
Milk production faci l ity
Client: Tasmanian Dairy Products
Location: Smithton, Tasmania
Scope: Detailed design – full services
pitt&sherry was commissioned by Tasmanian
Dairy Products (TDP) to undertake concept
design, engineering works, site selection and
initial planning works for an $80 million milk
production facility to be located on an existing
operating sawmill site at Smithton, in north‐west
Tasmania.
pitt&sherry realised several advantages that
suggested the existing saw mill site be used.
These included:
Using pre‐existing high voltage power supply
and water supply to the facility
Using existing buildings and lay‐down areas
for construction during the harsh north‐west
coast winter
Converting the existing warehouse to powder
storage, saving significant capital
Arranging the concept design to make use of
the existing site road network, again saving
significant capital.
Project involvement was broadened to installation
project management, building and infrastructure
design, contract and site management, and
securing all environmental and planning approvals.
The use of innovative methods and scheduling to
manage the building schedule, and planning and
environmental approvals, enabled pitt&sherry to
meet the client’s rigorous 14‐month design and
development timeline.
Site redevelopment
pitt&sherry provides process, civil infrastructure
and a range of spatial services to develop
concepts and project definition for the
redevelopment and relocation of food and
beverage facilities. This can include total site
relocation, relocation of specific manufacturing
lines or conversion of existing facilities into world
class food and beverage manufacturing sites.
Site investigations are conducted to verify and
document the current infrastructure constraints
for integration of the relocated facility's process,
manufacturing packaging, storage and distribution
processes.
Feasibility studies and concept designs focus on
cost‐effective use of existing site infrastructure,
thereby providing the ability to maximise returns
on any investment.
The full service approach to facility relocation
includes selective demolition of existing building
and industrial infrastructure and taking into
account hazardous material abatement, through
to complete demolition of redundant sites, asset
disposal and subdivision development services.
