In a time and age when wed-dings have become unwiel-dy and complex, it is butnatural to suppose the spot-
light is on the garb of the cou-ple or perhaps their choice oflocation. However, with cakeboutiques burgeoning aroundthe country, the cake has be-come the focal point atweddings.
Gone are the days whencakes had to be round, squareor oval. And in the weddingcircuit, there is no room fordummy cakes anymore. Wed-ding cakes have metamor-phosed from cream-smatteredblobs to 3D works of art.
With the shaadi season herealready, we track and predictthe most popular wedding caketrends. According to Chef Joo-nie Tan of Lavonne, “Modernminimalist designs are in andquite a few brides like sugarcraft flowers on their weddingcake.
Edible lace cakes have alsomade a big impression. I’vepersonally done ruffled icingcakes and also a few handpainted cakes, one of whichwas centred on an Orientaltheme. But the most fun orderI’ve taken up was a three tiercake with a fondant topper ofthe couple (bride holding a keyand a sad looking groom whoseleg is cuffed) and eight figu-rines of the bridesmaids andgroomsmen surrounding thecake. It was quite a feat puttingit together.”
Destination matters
Smriti Kumar, a weddingplanner finds: “Destinationcakes are huge especially withmore people opting for beachweddings. A whimsical or top-sy-turvy three-tiered cake isperfect for a bride and groomwho are very different fromeach other yet always manageto balance out their differenceswith the love they share. In-teresting cake toppers
propped on lollipop sticks suchas a moustache representingthe groom and bright red card-board lips symbolising thebride, are also among the new-est trends in the world of wed-ding cakes.”
Sabeetha Shyam who ownsSabeetha’s Cakes in Chennai,says: “I’ve always loved flowersand recreating them in sugarpaste gives me joy. Cakes to-day, however, seem to excludeflowers and take a more con-temporary approach. Bridesseem to prefer filigree workand embroidery or lace decorand are trying to stay awayfrom the conventional varie-ties. One of the interestingcakes I’ve worked on recentlywas a mehendi cake.”
Anuj Desai, a software engi-neer says: “My wife loves flow-ers but didn’t want the onesmade of sugar so our weddingcake was adorned with freshflowers that matched the col-our theme of our wedding. Shehad other options too — Swissdots and a candy embellishedcake.”
Metallic wedding cakes havebeen popping up at funky dos.From gold and silver to evenbronze iced cakes, everythingabout a wedding like this isdazzling. Geometrical patternsaren’t limited to just clothes oraccessories anymore. Elegantchevron detailed cakes are per-fect for those planning a con-temporary wedding. And if you
thought confetti was meantonly for throwing, you’d besurprised to know that on for-eign shores, these colourfullittle balls of thermocol havemade their way onto weddingcakes too.
Since the end of last year,ombre has been a huge trend.“I had an ombre cake in pastelshades of pink and purple formy wedding. It looked fairy-tale like and romantic,” saysMarisha Patel, a homemaker.While a tower of themed cup-cakes would make a pretty pic-ture, wedding cake pops(colour coded) and vibrantFrench macaroon adornedcakes are gaining popularity.
Another trend catching upis having a cake that matchesthe bride’s (and sometimes, ifhe’s lucky, the groom’s) outfit.Massive, elaborate and expen-sive, there are still takers. Ni-tin and Ruchika Khurana whoown The Sweet Boutique inDelhi offer 4D cakes withlight, sound and action.
Choosing the perfect wed-ding cake can be an ordeal.Joonie says: “Most of us wed-ding cake specialists trymatching the cake to thetheme of the wedding broadlyat first (classic or modern, In-dian/Oriental/Western) bylooking at the invitation cardand venue decoration.
“Sometimes going by thebride’s gown/sari is the mostcommon approach.”
