Inside this issue:
Food science is the applied science devoted to the study of food. The In-
stitute of Food Technologists defines food science as "the discipline in
which the engineering, biological, and physical sciences are used to study
the nature of foods, the causes of deterioration, the principles underlying
food processing, and the improvement of foods for the consuming public”.
In 2016, 264.18 million people used a dried packaged pasta of some sort. I
wonder if they knew they could make pasta with just eggs, flour and wa-
ter??
Join us for fun filled program learning about food science! We will learn
how to make homemade noodles and cheese. Youth will have a greater
understanding of how gluten works and the power of protein chemistry.
We will even make a gluten free pasta for those with that cannot have glu-
ten. Please RSVP by Jan. 6th so we know how many to plan for. Each
program will conclude with a lunch/supper of our homemade noodles.
Things to bring:
Apron (if you have one)
Ponytail or cap for your hair
A willingness to learn
If you are interested in volunteering to help, teen
youth or adults please contact Audra. This program is
open to all youth age 8 and up. Maybe you have a friend who wants to
learn about what we do in 4-H, bring them along!

SDSU Extension and the State 4-H Office invite 4-H leaders and volunteers to attend a Quarterly Leader Training Janu-
ary 17, 2017.
The training will be held from 7 to 9 pm CST (6 to 8 MT) at West River Ag Center and the seven SDSU Extension Re-
gional Centers in Brookings, Pierre, Winner, Lemmon, Aberdeen, Mitchell, Watertown and Sioux Falls. "This session
will give you lots of resources and talking points to take back to your clubs and leaders' associations," said Audrey Rider,
SDSU Extension 4-H Volunteer Field Specialist.
What to expect This quarterly leader training will provide information on the following:
Getting older members excited and active in the club setting;
Hear the Voices of Your Club - Group Decision Making Processes;
Dealing with Disappointment - presented by Dr. Amber Letcher;
4-H Online club leader navigation; and iGrow demonstration/navigation.
The trainings are open to all 4-H members, leaders, volunteers and parents. The trainings will focus on a variety of train-
ing topics and keep everyone informed throughout the 4-H year.
No RSVP is required to attend this free training.

your club contact the extension office. If we get enough people on board we can decide what the incentive will be
and talk about at the next leaders meetings.

Serves: 3-4 Popcorn is a whole grain and a great source of fiber!
Ingredients:
¼ cup popcorn kernel Brown paper lunch bag
Optional: Melted butter, oil, and/or salt
Instructions:
1. Pour the kernels into the brown paper bag.
2. Tightly fold over the top three or four times. No tape or staples are necessary.
3. Put it in the microwave and start it on high for 3 minutes and 30 seconds.
4. Listen for the popping to slow down to 3 or 4 seconds apart at which point
you will take it out of the microwave. This usually happens for me around the 3
minute and 15 second mark.
5. Pour popcorn into a bowl and drizzle with melted butter or spritz with olive
oil and then sprinkle with salt. If you don’t use oil or butter the salt won’t stick.

4-H Youth Council State Wide Service Project
The Final Brick Countdown The capital campaign for the Nordby Exhibit Hall for 4-H, Youth, and Community is nearing the finish line!
The Final Brick Countdown is the push for the last two hundred thousand dollars of the building's $4.7 million
campaign.
Any donation of $1,000 toward the capital campaign is recognized with an engraved Sioux quartzite paver lo-
cated in the new exhibit hall. Multiple bricks can be created for one donor - for example, a donation of $3,000
is recognized with three bricks.
To celebrate major donors, each individual donor who provides or has provided a gift of $1,000 or more will
be entered in a drawing for these prizes:
Two VIP tickets to a grandstand concert of choice
Complementary on-grounds camping space for one week
VIP parking for one week
Complementary carnival pass
The drawing will take place after the campaign’s goal has been reached. The prizes are redeemable for the
2017 State Fair. Gifts of any size are welcomed!

Are you doing some fall cleaning and going through your closets? The South Dakota State 4-H
Youth Council selected a head to toe drive for their state-wide community service project.
“They want 4-H members, clubs, and leaders to consider donating any type of clothing item to their
local shelters, coat drives, etc. in your community,” explained Audrey Rider, SDSU Extension State
4-H Volunteer Field Specialist. “This is a way for people to give back to their local communities and
help out local families and people in need by giving clothes, jackets, shoes, etc.”
Counties throughout South Dakota will compete to see which 4-H county can donate the most items.
The winning county will receive a prize. “The Youth Council is asking counties, clubs and members
to be creative and come up with fun ways to collect items and make a huge impact with this
statewide community service project,” Rider said. “With your help, we are looking forward to improv-
ing the lives of children and families in our state.”
The South Dakota State 4-H Youth Council is made up of 25 4-H youth from across the state. South
Dakota 4-H Youth Council is a statewide leadership team of 4-Her’s who were chosen for their com-
munication skills, citizenship, 4-H involvement, and foremost their leadership abilities. They work
with the 4-H program to put on a Teen Leadership Conference where attendees go to workshops,
play games, develop into young leaders, and make lifelong friends.
More than 9,000 South Dakota youth are involved in 4-H programming. If you’d like to become in-
volved as a member or volunteer, or would like to donate to the head-to-toe drive, contact Rider at

The Sanborn County 4-H Leaders will be
serving the evening meal for the Central
Electric District meeting on Thursday,
January 26th at the 4-H Building, as a
fundraiser.
We also need volunteers to help serve the
meal/clean up from 5-7:30 (or part of this
time).
Welcome to the 2017 Sanborn County 4-H Shooting Sports year! Our first day of shooting will be on Sunday,
January 8 and we will run every Sunday through April 23, with the exception of Easter Sunday on 4/16. Regular prac-
tice will run 2-6 each Sunday. You are not required to be at every practice…pick the days that work for you, and also
pick the time that works for you…that may be 2-6, 2-4 or 3-5 or 4-6.
* Special note – we will offer seniors and older junior members (which sometimes may include a younger family member)
the option to come an hour earlier than the regular shooting time to allow them to get some shooting done ahead of the
busyness that comes with beginners, younger junior shooters, and new shooters. If you receive a text alerting you of the
earlier time, you may come an hour early; otherwise, please come at the regular start time or later.
Because of the growth in numbers, we are also planning to add a weeknight for shooting for guns (not archery) and look-
ing at Tuesday night…probably 6-9. Let us know your thoughts.

Ag Building Renovation Update: The Commissioners ap-
proved the bid for $255,552. Construction will begin February
1, 2017 and be completed by May 1, 2017. This will include a
storage addition on the west side of the building.

Award Requirements
With the new 4-H year starting we wanted to
make sure everyone is aware of the require-
ments each year for youth to receive their end of
the year awards at Recognition Event.
Youth must participate in at least ONE Je-
rauld/Buffalo County 4-H Community Service
project
Youth must give a Public Presentation (can be
done at ANY 4-H Event)
Youth must do Judging (except those who just
participate in shooting sports, they must pass
safety test)
Youth must attend at least ONE club meeting
for each club they belong to
Youth must turn in a Record Book by October
1st with required pages
Shooting Sports youth must also attend at least
7 shooting events including one Postal

Beef, Banking and Reality
Workshop hosted by SDSU Cow/Calf Field Specialists

The focus of this meeting will be to assist cow/calf producers
identify areas of beef production to focus on going into the
new year and how to maintain herd longevity, all while watch-
ing their bottom dollar.

You can re-certify or get your initial certification by one of the two
following methods:
1) Attend one of the re-certification sessions listed on the backside of this
paper.
2) Complete the exam on-line at https://apps.sd.gov/doa/pwt/.
Either one of these methods will renew your certification through
December 31, 2021.
**You will need to provide a valid Gov’t issued photo ID to complete the
training.
**Please bring along your pesticide license with your barcode number.
