flavor, Vermeer contains less fat and less salt than classic Gouda
cheese. It makes a delightful ingredient for salads and an
essential cheeseboard staple.
BAKED CRISPY ENCRUSTED COD WITH VERMEER CHEESE
Ingredients 4 cod fillet s 2 a nchovies, in o il, drained 2 Tbs p fres hly chopped parsley ~·~~~~i1rJ1~~~ 2 oz breadcrumbs 3.5 oz Vermee r cheese, grated Salt & groun d bl ack pepper For the tomato salad: 12 oz ripe mixed tomatoes 1 small clove ga rlic, crushed 1 Tbs p freshly shredded basil 1 Tbs p ba lsamic vinegar
Preheat the oven 4002F. Place the anchovy fillets, parsley, breadcrumbs and Vermeer cheese in a food processor and pulse until roughly combined. Place the fish on a baking sheet and press the cheesy crumb onto the top of each fillet. Bake in the oven for 12-15 minutes, until the fish is cooked through and the crumb is crisp and golden. While the fish is cooking, make the tomato salad. Cut tomatoes into chunks and small pieces. Place in a bowl with the garlic and basil, season with a little salt and freshly ground black pepper, then drizzle over the vinegar. Serve the fish with the tomato salad.

What is skyr? Skyr, pronounced "skeer," is the traditional yogurt of Iceland. It is made by in cubating skim milk with live active cultures. The whey, the water naturally found
in milk, is then strained away to make for a much thicker, creamier, concentrated yogurt. To make just one cup of skyr, with all that water going out, you need 4 times the amount of milk required to make a regular cup of yogurt. As a result of thi s process, skyr contains 2-3 times the protein count of standard yogurt.

milk, made in the countryside of Rome, Italy. Cacio means cheese, is used in most of the parts of Italy. This cheese in the
form of a small round is reffered as Caciotta, while in the rest of
Italy it is known as formaggio. The cheese is aged for about one month, during which it develops a tangy flavour and creamy
texture. It is the classic table cheese with the aroma of a young
sheep's milk and can be enjoyed as a snack, eat with salad, pizza, pasta . Since it melts very well, it is used in everyday cooking.
FOREVERCHEESE MASTERS OF THE MEDITERRANEAN
Quadrello di Butala is a water buffalo milk cheese produced by the Caseficio Quattro Portoni Company in the Lombardy region of Italy. Made from pasteurised
milk, Quadrello di Bufala is a washed-rind cheese high in fat and protein. It shares several attributes with
Taleggio or Brescianella Stagionata, except that it is
made from the milk of water buffalo.
The texture of Quadrello is deliciously creamy, sticky
and elastic with small holes and softness near the crust. Its semi-soft paste is straw yellow in colour,
while the pale orange rind is dotted with occasional
white mould and deep incisions that occur because of drying on straw mats. The flavours are sweet and
grassy with aromas of earth, mushroom and strong
pungency. Quadrello di Bufala pairs well with Riesling, Cider, Farmhouse Ales and Malbec.
Prosciutto di San Daniele 18-month-aged Riserva - Produced in Friuli, in the
town of the same name, San Daniele is more savory than its Parma counterpart. This San Daniele Prosciutto comes from Brendolan, one of the most prestigious salumerias in Italy. Aged for a minimum of 18 months, it melts in your mouth.

ZUCCHINI & WHITE CHEDDAR SCONES
Ingredients
2 1/2 Cups Al l Purpose Flour
2 tsps Baking Powder
1 Teaspoon Salt
1 Teaspoon Black Pepper
1 Cold Stick of Butter (cut into pieces)
1 Egg
1/3 Cup Heavy Cream
1 Cup Zucchini (grated)
1 Cup Sharp White Cheddar (grated)
3 Tablespoons Chives (minced)
Preheat your oven to 400 degrees. In a food processor fitted with a dough blade, pulse together your flour, baking powder, salt and pepper. Add in your butter and process until little crumbs start to form. At this point add in your egg, heavy cream, zucchini, cheddar, and chives. Process until everything has combined to form a dough. Turn out your dough onto a parchment lined baking sheet and press into a large 1" thick circle. Using a knife, cut 12 equal sized wedges and pull them away from each other a little so they have room to bake and rise. Bake in the oven for about 20 minutes. Allow to cool a few minutes before serving.
