SELECTION:• Cauliflower crowns, also known as curds, in their peak of freshness will be firm, crunchy and range in color from orange,

green, purple and, most commonly, white.• Avoid cauliflower crowns with soft spots or yellow or brown discoloration.

college education.”• Cauliflower belongs to the cruciferous family of vegetables, which includes broccoli, horse radish, wasabi, and Brussels

sprouts. Cruciferous vegetables are distinguished by four petals that resemble a cross. The four petals grow together into what is commonly referred to as the crown, but from a botanical perspective this is actually a cluster of flowers.

• In the United States, cauliflower first took root in the late 1800’s, in the Catskills Mountains of New York. Cauliflower cultivation was an important contribution to the local economy, but also fed railroad workers and contributed to New York’s economic prosperity for truck drivers, crate manufacturers, and produce agents in New York City.

Ingredients: 5 - 6 servings

• 2 tsp. sesame oil

• 2 tsp. sunflower, safflower, or coconut oil

• 1 large carrot, finely diced

• ¾ cup red onion, finely diced

• ½ head cauliflower, finely chopped to rice-sized bits (use a food processor to save time)

• ¼ cup water or low-sodium broth

• 1 tbsp. reduced sodium soy sauce (or teriyaki sauce)

• 2 green onions, sliced

• A pinch of garlic powder and ginger to taste

• Fresh cilantro or coriander leaf (optional)

• Toasted nuts or sesame seeds (optional)

Directions:

1. In a large sauté pan, heat the oil over medium-high heat. Add the carrot. Sauté for about 2 minutes then add the onion. Cook covered for 3-5 minutes, stirring occasionally until onions are soft and translucent.

2. Stir in the cauliflower and ¼ cup water/broth. Reduce heat to medium, cover and cook for 5 minutes, stirring halfway through the cooking time.

3. Stir in the soy sauce (or teriyaki sauce) and the green onions.

4. Check for doneness. Don't overcook! The cauliflower should have a little texture and not be mushy.

Ingredients: 6 servings• 1 tbsp. olive oil

• 1 small onion, diced

• 2 garlic cloves, minced

• 1 lb. lean ground beef

• ¼ cup ground mushrooms

• 12-14 oz. frozen peas and carrots

• 1 medium cauliflower cut into florets

• 2 tbsp. butter

• ½ cup evaporated skim milk

• ½ cup shredded cheddar cheese (optional)

• Pinch each of salt and pepper

Directions: Preheat oven to 350 degrees F.

1. In a large frying pan, bring the olive oil to temperature over medium heat. Add the garlic and onion. Cook until they are soft (for about 2 minutes), stirring frequently to prevent the garlic from burning.

2. Add the ground beef and mushrooms to the pan while stirring frequently, breaking the beef into small pieces. Cook until the beef is brown. Drain excess fat and discard. Add a pinch of salt and pepper (optional).

3. Bring 3-4 cups of water to boil in a large sauce pan. Add the cauliflower florets, turn heat down to medium high. Cover and cook until the cauliflower is tender (about 7-8 minutes). Turn the burner off. Gently drain the cauliflower into a colander. Add back to the pan. Allow the steam to escape and excess water to dry, tossing gently. Add the butter, shredded cheese (optional) and a pinch of salt and pepper. Begin mashing with a fork. Once the cheese and butter have melted, add the evaporated milk and a pinch of salt and pepper (optional). Whip the mixture with a hand held whisk or fork to incorporate the milk.

4. While the cauliflower is cooking, microwave a bag of frozen peas and carrots according to the package directions.

5. Place the ground beef mixture in the bottom of a 13x9x2 baking dish, mixing in the peas and carrots. Top with the mashed cauliflower.

6. Bake for 20-25 minutes, until the topping is browned.

Tip: For those that want to lower the carbohydrate

level, consider switching the peas and carrots to a lower carb vegetable like broccoli or green beans.

• 2 cups of dry, plain oatmeal• 1 cup whole wheat flour• ½ cup crushed walnuts or pecans• ½ very ripe banana, mashed

• ½ cup apple sauce• 1 ripe avocado, mashed• ½ cup raisins• 2 eggs

• 1 tsp vanilla• ½ tsp cinnamon• 1 tbsp. baking powder• ½ tsp. salt

1. While the oven is preheating, lightly coat a 13x9x2 baking dish cooking spray.

2. In a medium-sized bowl, add all the wet ingredients and mashed fruits. In another medium-sized bowl, mix all the dry ingredients.

3. Pour the mixed dry ingredients into the bowl with the wet ingredients and gently fold until well mixed.

4. Pour the entire mixture into the prepared baking dish. Spread it out until it is evenly dispersed.

5. Place the dish in the oven and bake for 22-25 minutes or until a toothpick, when inserted, comes out clean.

6. Remove the dish from the oven and let cool. Cut into 12 equal sized pieces.

The current mainstream meaning of “diet” in general means to lose weight, lose fat, gain muscle, etc. and is looked at as temporary to meet a goal. Yet simply put, the actual meaning of “diet” is the way one eats. Considering this meaning alone, the Dietary Guidelines for Americans recommendations are based in science and developed by trained medical experts who review volumes of peer-reviewed research for credibility in findings on how to building a consistent, long-term healthy eating pattern (diet), that assists in reducing the risk of chronic disease and promoting health for the general American public believe all foods can fit in a “diet”. These recommendations are updated every five years in order to keep up with current research and better messaging to the public.

Even with the multiple updates through the years, one concept has remained the same: Consuming more calories than the body needs will cause weight gain. Yes, there are caveats to where your calories should come from to optimally get the nutrients your body needs and reduce the risk of various chronic diseases, but even if you eat a diet high in calories of the “best” foods, you will gain weight. Looking at it in a different way, if one consumed a diet made up of just “junk food”, but did not consume enough calories, weight loss would still occur.

Building a healthy eating pattern and adopting it as a long-term lifestyle means consuming a variety of foods with most of them being of high nutritional quality to ensure you get the nutrients you need, while consuming a level of calories to maintain a healthy weight. The recommendations do not ban any type of food such as sweets or high fat items, but rather advise limiting them, as they tend to be higher in empty calories from fats and sugars. They don’t truly have a great amount of key nutrients that your body needs. A diet made up mostly of them would make it difficult to consume the key nutrients, such as vitamins and minerals, while also meeting fiber needs. However, the fact of the matter is, there is room in any healthy eating pattern for indulgences like sweets and high fat savory items.
