Delicious, nutritious Elliott pecan halves are prized by seasoned chefs and fanatic foodies for their robust flavor,

high oil content and delectable crunch. Due to their sporadic yield, Elliotts are not always easy to locate,

so we have sourced some of the most respected growers in the Deep South.

Preheat oven to 3500. Mix olive oil and remaining ingredients in a bowl; add pecans and toss to coat. (Tip: Before chopping rosemary, first lay rosemary leaves on cutting board and roll with rolling pen to crush leaves, releasing rosemary oils, then chop.) Justin Girouard, our Featured Chef, has a talent for crafting gourmet dishes, and his pecan recipes are no exception. Justin, a Louisiana native, fell into the culinary world quite by accident. While in college and looking for a way to pay the bills, Justin took a job as a dishwasher at Stella—a late, great restaurant in New Orleans. The fast-paced atmosphere of the kitchen quickly consumed him; before long, the eager learner was under the wing of the Executive Chef. This experience put Justin on pace for a stint at the Abbaye de St. Croix in Salon de Provence, France, before returning

to Stella as an Executive Sous Chef until 2008. In 2009, Justin and his wife, Margaret, opened The French Press in the thriving downtown district of Lafayette, Louisiana. Availability of fresh, local ingredients—such as rich, buttery pecans—serves as inspiration for many of the restaurant’s dishes. Justin’s goal to serve up authentic home-cooked meals, which simultaneously celebrate and reinvent Louisiana’s traditional cuisine, has earned him nominations as a three-time James Beard Semi-Finalist for Best Chef in the South.


WARM PECAN SPINACH SALAD1 lb baby spinach

8 strips of bacon cut into thin ribbons

1 cup vegetable oil

1 teaspoon mustard

½ cup balsamic vinegar

½ cup honey

1 medium purple onion (½ sliced thin, ½ chopped small)

12 sprigs of fresh thyme leaves pulled off and reserved

3 cups of Cane River Pecan pieces

2 cups Cane River Pecan Praline pecans

30 large Gulf shrimp, deveined and peeled with tails left on

In a small sauce pot, cook bacon ribbons over a medium heat until crispy and all the fat is rendered. Strain the meat and reserve both the fat and the meat. Allow bacon fat to cool to about 850 or just enough to maintain a liquid state. For the dressing, combine mustard, balsamic vinegar, honey, chopped purple onion, thyme leaves and ½ cup of Cane River Pecan pieces in a blender. Blend on high until everything is pureed smooth.

Once smooth, slowly drizzle in reserved bacon fat (approx. 4 tbsp) and vegetable oil. The dressing should become thicker as the fat and oil are incorporated, and you can add ¼ cup of cold water if it becomes too thick. If the dressing is too thin, add more oil. Season with 1 tsp salt and a pinch of pepper. Season and grill tail-on shrimp. Warm the dressing by floating a sealed container of it in a simmering pot of water for 1 minute. In

a large mixing bowl, toss the spinach leaves, 2 cups of Cane River Pecan Praline Pecans and remaining Pecan Pieces with the dressing until coated well. Place 5-6 ounce portion of dressed spinach in the center of a large plate or shallow bowl. Garnish with remaining Cane River Pecan Praline Pecans, sliced purple onions, cherry tomatoes and reserved bacon bits. Add grilled shrimp and serve. Serves 6.

Line the bottom of a baking sheet with aluminum foil. Lay a piece of wax paper on top of the foil. If you have a silicone baking sheet, it is preferred over wax paper. Lay out bacon strips ¼ inch apart on the wax paper. Completely cover each strip of bacon with brown sugar, then carefully sprinkle the pecan pieces evenly over each strip. Bake the bacon slowly at 3200 for 12 minutes then rotate and cook for another 10-15. Total cooking time may vary, but the bacon should be bubbling and beginning to get dark brown. Keep in mind that the bacon will continue to cook while cooling, so be careful not to burn. Remove sheet tray and cool to room temperature before removing. Be careful—when the bacon is first removed it is very hot. Warm in the oven or microwave and serve. Serves 6.
