Considered one of the greatest golfers to ever play the game, Sam Snead’s history with The Greenbrier

dates back to 1936 and spanned more than six decades. Sam Snead’s at The Golf Club is a fitting tribute to Snead’s legacy and provides exquisite fare with immaculate views for a memorable dining experience.

Filled with pictures and memorabilia from “Slammin’ Sammy’s” time at America’s Resort™, as well as his travels throughout the world, the décor and atmosphere at Sam Snead’s are both elegant and lively. The open kitchen allows guests to watch the culinary experts prepare the cuisine, and a windowed wall provides extraordinary views of The Old White TPC and The Meadows course. A window seat at sunset paints a picture of the landscape you won’t soon forget.

“Sam Snead’s prides itself on producing top-quality classic American fare with Mediterranean influences,” said The Greenbrier Executive Chef Bryan Skelding. “You can’t beat the views of the golf courses and the action taking place in our open kitchen. It’s a dining adventure you don’t want to miss.”

IS THERE A DRESS CODE?

Resort attire is required (collared sport shirts, sweaters, jackets, dress slacks and walking shorts). The restaurant enjoys an upscale and inviting environment. If denim is your attire preference, well-kept denim in a dark shade is ours. Men’s hats and baseball caps are not permitted.

WHAT ARE THE HOURS?

Sam Snead’s is open for lunch from 11:00am until 2:00pm and for dinner from 6:00pm until 9:00pm. Times are subject to change, so guests are encouraged to check the Today Sheet for updates.

WHAT’S ON THE MENU?

An impressive a la carte menu offers a variety of choices including salads, steaks, pasta, seafood and hand-tossed pizza. Mushroom Cream Soup and a New England Style Lobster Roll are favorites on the lunch menu, while the dinner menu features elegant steak, seafood and pasta dishes. SWEET DOUGH:

Mix the dry together, add the butter and

the egg. Refrigerate for 3 hours. Roll out

the dough, and place it in a pie tin. Bake

at 325° for 15 minutes.

CUSTARD:

Boil the milk, mix the dry ingredients with

the yolks and add to the milk. Cook on the

stove for 3 minutes and add the butter.

Refrigerate for 2 hours.

ASSEMBLE:

Pipe some custard inside the shell,

arrange halved strawberries. Glaze with

the jam and finish with whipped cream.

½ tsp salt

Those who have sampled any of the delectable pastries, cakes, cookies or pies during a visit to The Greenbrier already know about Jean-Francois Suteau’s baking abilities, whether they knew his name or not. The Executive Pastry Chef at The Greenbrier since 2011, Suteau’s sweet treats have drawn “oohs” and “ahhs” from guests at The Greenbrier for years.

This spring, America learned the secret that friends of The Greenbrier already knew, as Suteau’s talents were on full display in front of the cameras as a contestant on Food Network’s “Best Baker in America.”

The producers of the show actually found The Greenbrier chef on his Instagram page and sent him a message asking if he would be interested in being part of the second season of the popular show. After some initial hesitation, Suteau decided to give it a shot.

“It’s the only thing I hadn’t done,” he explained. “I’ve been in plenty of competitions and done well, but I hadn’t done anything on television.”

Suteau’s accomplishments in the culinary field are many. The native of Nantes, France, was born into a family of pastry chefs dating back to the 1700s. He began his own career in 1989, and in 1992 he came to the United States.

Suteau has been the Executive Pastry Chef at The River Club in Columbus, Ga., the Dining Room at the Ritz-Carlton and the Head Pastry Chef at The Adlophus in Dallas, Texas.

He finished sixth overall at the coupe du monde in 2010, and in 2011 he was named one of the Top 10 Best Pastry Chefs. In January of 2013, Suteau was named the U.S. Chocolate Master at the national World Chocolate Masters qualifying competition.

But this competition was different. Usually, Suteau said, there is months of preparation and planning. For “Best Baker in America,” the planning was almost nonexistent.

With little time to even think about his decision after accepting the invitation, Suteau – who heads a team of around 35 pastry chefs at America’s Resort™ – hopped on a plane and headed to Los Angeles to compete against eight other bakers for a $25,000 grand prize.

When the competition first began, and the lights came on, Suteau was admittedly overwhelmed.

“I had to look for everything,” he said. “I’m used to having a team, and I was by myself in a new kitchen. I didn’t know where the flour was, where the sugar was or what equipment they had.”

Then there was the schedule. Filming the show meant early mornings and late nights, with not much of a break in between.

It wasn’t only the baking, there were one-on-one interview segments and other filming that made the process much longer than the hour per show that went out on Food Network.

“The days were really long,” said Suteau, who said some days taping ran from 9 a.m. until almost midnight, with a lot of waiting in between shots. “But it was fun to see how they do everything.”

Although Suteau didn’t win the grand prize, his stint on the show was a successful one. He survived six eliminations to make it to the final episode, winning two of the Master Challenges along the way and one of the Skills Challenges. He lost out to Adam Young in the final episode, which included only three finalists.

“I know I did my best,” said Suteau. “From the moment you finish to when they actually call you, there’s a gap of two or three hours. You go back, and they critique you. Everything they said was positive, so I thought, ‘Oh wow. Maybe I got that.’ But then they gave it to Adam.

“I was a little bummed, but I knew from the beginning that it’s television and it could go either way.”

The conclusion of the taping, though, wasn’t the end of the story. When Suteau returned to The Greenbrier, promotion for the show began. There were interviews, questions from friends and even family, but the contract he signed prohibited him from giving away any secrets – a difficult assignment at times.

“Everybody was asking questions and wanted to know more,” he said.

On May 14, the show finally debuted, and each Monday night Suteau would tune in, just as interested as the viewer who knew nothing about the process.

“It was cool because I only knew my part, and even that I didn’t know what they were going to put on,” he explained. They had so much data on me.

Even when he’s not smiling for the cameras, Suteau’s work is being appreciated. His fingerprints can be found all over The Greenbrier. He and his team of pastry chefs create all of the baked goods and deserts found in The Greenbrier’s restaurants, as well as the cookies and treats found in The Greenbrier Gourmet. Each Easter and Christmas, Suteau and his team create giant holiday-themed chocolate displays that wow guests in the Lower Lobby.

“I love what I do,” said Suteau. “It has always been my passion.”

“I didn’t know what any of the other contestants said in the interviews or anything - what they said of each other, what their excuses were for mistakes or anything. Even in the kitchen, I barely saw what they did.”

His first reaction?

“At first it was weird to hear myself,” he said with a laugh. “I sound very nasal on TV, and I don’t hear myself nasal. So that was weird. I didn’t like it. I wanted them to fix it.”

With hours of footage each day, Suteau said the producers had enough information to portray any of the bakers any way they wanted them to look, but he was happy with the way he came across on camera.

“It was actually pretty cool,” he said. “They made me look funny, and I think people enjoyed it. I was surprised they didn’t make me look like the mean French pastry chef. That’s what I was afraid of, but they made me look pretty good.”

And with every episode, the buzz, like his social media following, grew. Suteau’s Instagram account, which helped start the journey in the first place, more than doubled in a little more than a month as his followers grew from a little more than 1,000 to well over 3,000. Guests at The Greenbrier began to seek out his creations more than ever before, and the questions surrounding the final results came at a furious pace.

When the final episode finally aired on June 18, Suteau felt a sense of relief that he could finally discuss the entire experience without any limitations.

The overall experience he labeled as “a blast,” though the competitor in him couldn’t help but feel a little disappointed about not taking home the top prize.

“A lot of people are sad that I didn’t win,” he said. “I got tons of comments on social media, but it was an awesome experience, for sure.”

So are there more television competitions in the chef’s future?

“I’m done with that,” he said with a chuckle. “I’m too old for that. They make you run like crazy. I would love to do more TV, but more as a judge or something like that.”

JEEP ADVENTURES

No vehicle is better equipped for the mountainous West Virginia terrain than the Jeep Wrangler Rubicons at Off-Road Adventures. Their highly-trained guides will accompany and instruct up to three guests per Jeep on advanced driving techniques that are necessary to scale the obstacles found throughout The Greenbrier’s 11,000-acre mountain preserve. From modest unpaved roads to some of the most extreme terrain on the East Coast, the 30-mile course has rocks, ruts, creek crossing, steep hills, gullies and mud pits to ensure plenty of adventure and endless challenges. With room for three guests plus the instructor, one-hour sessions start at $285 per Jeep, and two-hour sessions start at $385. Sessions run from 9 a.m. until 5 p.m. daily, and drivers must be at least 16 years old with a valid driver’s license. Passengers must be at least 8 years old and a minimum of 4-feet, 9-inches tall.

Whether you’re looking to test your driving skills on snow-covered mountain trails in a Jeep Rubicon, feel the open air while traversing creeks and gullies in a Polaris RZR or want to feel the sensation of speed on a picturesque country road, Off-Road Adventures at The Greenbrier has you covered. ORV ADVENTURES

If you prefer the open air to the inside of a Jeep, the Polaris RZRs might be the adventure you’re seeking. The most extreme off-road vehicles on the planet, these compact machines allow you to explore the majestic West Virginia mountains. You’ll cross much of the same terrain as you do in the Jeeps on this guided tour, but you’ll feel the wind in your face and maybe even get covered in a little mud. Each ORV seats four guests per vehicle. Rates begin at $385 per ORV, with time for up to two drivers to learn the basic skills needed and try a few advanced techniques. ORV trips depart at 10 a.m. and 2 p.m. daily. Drivers must be 16 years old with a valid driver’s license. Passengers must be at least 12 years old and able to grasp the handholds with feet planted firmly on the floor and back against the back-seat rest.

it opened for play in 1911. In 1923, Seth Raynor redesigned the course while he was on the property updating The Old White TPC and building the original Greenbrier Course.

In 1962, Lakeside was expanded to an 18-hole routing by architect Dick Wilson, who used dirt excavated during the construction of The Bunker to expand the course. Years later, in 1999, Bob Cupp once again redesigned the golf course, at which point it officially became known at The Meadows.

After sustaining substantial damage during the flood of 2016, The Meadows underwent a full restoration and reopened for play during the summer of 2017. The new and exciting routing features dynamic green complexes, breathtaking mountain vistas and signature stacked sod bunkers throughout the course.

Guests have been extremely complimentary of the new layout, saying it’s a “challenging-but-fun” course.

“The bunkering is fabulous,” said 13-time West Virginia Amateur champion Pat Carter after playing the course this past June. “Just the way it accentuates all the holes, it really, really sets your eye.”

Rounds on The Meadows can be booked daily, giving visitors an opportunity to experience a fresh new layout that matches The Greenbrier’s longstanding legacy.

THE GREENBRIER COURSEThe Greenbrier course was built in 1924 by Seth Raynor and renovated in 1977 by Jack Nicklaus. In 1979, it hosted The Ryder Cup and years later in 1994 was the host to The Solheim Cup. It is the only resort course in the world to have hosted both events. The name most connected with golf at America’s Resort is the PGA TOUR’s all-time wins leader, Sam Snead. The Virginia native was first hired as the Assistant Golf Professional at The Greenbrier in

Since 2010, The Greenbrier has been the proud host of A Military Tribute at The Greenbrier, formerly The Greenbrier Classic, on the historic Old White TPC Course. The annual PGA TOUR FedExCup stop, held July 2-8 this year, has helped draw attention to the amazing resort and its fantastic golf offerings, but those who appreciate the game’s history knew about The Greenbrier long before guys like Tiger Woods and Xander Schauffele visited White Sulphur Springs.

For more than a century, The Greenbrier has been synonymous with world class golf, a tradition that grows with each season and a legacy that is virtually unmatched in the golfing world.

THE OLD WHITE TPC COURSEOriginally designed and constructed by Charles Blair Macdonald and Seth Raynor in 1914, The Old White TPC has stood the test of time and is still considered one of the finest courses in the United States more than 100 years later.

The course recently experienced a major restoration project after a catastrophic weather event in 2016. The Old White TPC received new fairways, new bunkers and new green complexes, and changes were made to return the course as close as possible to its original design.

Since reopening in July of 2017 to host The Greenbrier Classic, The Old White TPC has received rave reviews from both professionals and amateurs.

“As an architect or somebody who likes historical, old school architecture, it just couldn’t have been any better,” said professional golfer Davis Love III after seeing the restored course for the first time last July. “I think they did an incredible job. (It’s) got to be one of the top courses on tour now. It was probably in my Top 5 before, and it probably moved up.”

Visitors to The Greenbrier can walk in the footsteps of the legends who have navigated The Old White TPC’s fairways for more than a century by booking a round, guided by an experienced and knowledgeable caddie, who will make the experience one to remember.

THE MEADOWS COURSEThe Meadows Course began as a 9-hole course named Lakeside. Designed by Alexander H. Findlay,

“I love it here,” said Watson. “My family and I think it’s one of the best places in the world. How would you not want to be a part of this and the Greenbrier family?”

In addition to these close ties, The Greenbrier has played host to other greats of the game on multiple occasions. Walter Hagen, Ben Hogan, Gene Sarazen, Byron Nelson, Arnold Palmer, Gary Player, Jack Nicklaus, Billy Casper, Nick Faldo, Bill Campbell and many others have played rounds at America’s Resort, and since the inception of The Greenbrier Classic, now A Military Tribute at The Greenbrier, in 2010, many of the games current stars, including Tiger Woods, Mickleson, Watson,

Dustin Johnson, Justin Thomas, Sergio Garcia and Jordan Spieth, have enjoyed rounds at America’s Resort.

“Having traveled so many miles around the world and seeing so many resorts, this is the best,” Player told The Golf Channel in 2015. “It’s got everything. It’s frightening to think of the things they have here, and it’s getting better and better and better.”

It’s not just stars of the game of golf that play The Old White TPC, either. The course has hosted celebrities from all avenues, including Dwight Eisenhower, Bob

1936. He then served as the Golf Professional from 1946 through 1974. Snead was rehired as the Golf Professional Emeritus in 1993 and remained in that position until his death in 2002. Snead’s pictures and memorabilia are prominently displayed throughout The Golf Club, and two restaurants, Sam Snead’s at The Golf Club and Slammin’ Sammy’s, are named in his honor.

Two other golfing legends followed in Snead’s footsteps and held the Golf Professional Emeritus tag at The Greenbrier.

Tom Watson held the position from 2005 through 2015, and Lee Trevino was the Golf Professional Emeritus from 2015 through 2017.

Current stars of the game also hold a close connection to The Greenbrier. Five-time Major champion Phil Mickelson is The Greenbrier’s PGA TOUR Ambassador and a member of The Greenbrier Sporting Club. Two-time Masters champion Bubba Watson is also a home owner at The Greenbrier and a fantastic ambassador for the resort. Stuart Appleby, a nine-time PGA TOUR winner, who captured The Greenbrier Classic title with a final-round 59 in its inaugural year in 2010, also serves as a spokesperson for golf at The Greenbrier.

“I really fell if love with not only the facilities and obviously all the amenities they have, but the people,” said Fitzgerald. “I think that’s what really makes it special.”

THE BIGGEST EVENTSThe Greenbrier is no stranger to major events in the world of golf. The Greenbrier Open, which later became known as The Sam Snead Festival, was the first professional event played at The Greenbrier and hosted many of the game’s biggest legends. Arnold Palmer won his first professional money in that tournament in 1955.

“When we got back to Latrobe, Winnie and I decided to buy a car, and we went to Forsha Motors and bought a brand new 1955 Chrystler New Yorker with some of our Greenbrier earnings,” Palmer remembered in his book, A Life Well Played. “It was the first new car I ever owned. It was tan with a beige interior. Man, it was a sweet car.”

In 1979, The Greenbrier was the host to the first Ryder Cup that matched the United States against Europe. That marked Lee Trevino’s first visit to America’s Resort.

From 1985 through 1987, The Greenbrier hosted The Greenbrier American Express Championship, a 54-hole Senior Tour event that brought Palmer back to The Greenbrier, along with other big names of the sport.

In 1994, The Greenbrier played host to the Solheim Cup, the women’s version of the Ryder Cup, becoming the first resort course to host both the Ryder Cup and the Solheim Cup.

Since 2010, The Old White TPC Course has hosted The Greenbrier Classic, which has earned a reputation as one of the premier events on the PGA TOUR. It was recently renamed A Military Tribute at The Greenbrier in honor of the men and women serving in the United States Military.
