Hi, my name is David Hernandez and I am excited to have recently joined the Otto’s team as Head Butcher.

I have been butchering in Townsville for the last 10 years. The thing I love most about butchering is being fully aware of the journey of the meat from the paddock to the fork; how and where it’s grown, where it’s processed, the different cuts of meat and how best to prepare and cook them to create the best possible end product on the plate.

Otto’s signature meat is the Angus Pastoral Company range from Carpentaria Downs,

grown and bred right here in Queensland. This beef is produced solely for the European restaurant export market and is of the highest quality. Otto’s is very proud to be the only retailer stoking this range in Australia. If you haven’t tried it yet, make sure you do, it’s full of flavour and melts in your mouth!

Our other specialty products include Kimberley Red Beef from Clermont QLD, Cape Grim Beef from Tasmania, Sovereign Lamb from the Gold Fields region of Victoria, and free-range pigs from our very own backyard, Bluewater.
