The Green Chefs is a Product Development initiative encouraging local chefs from a particular Geographical area /cultural group spec, to cook with locally sourced or cultivated ingredients to producing traditional recipes.

Through this process these cooks enhance the offering produced by their local National Park (walks, excursions, stakeholders etc.).

Trained in catering and cooking skills, small scale organic farming, entrepreneurship and business management and a sound mentorship program, participants will be empowered to become entrepreneurs .

Coastal belt along the Southern Coast of South Africa ,stretches 140 km from the Outeniqua Mountain range in the west to the Tstistikamma Mountain Range in the east belted by the Indian Ocean on the South.

Knysna is positioned centrally and are strategically positioned as a premier tourist destination. Knysna is a Khoi-San word meaning “wood and ferns” ,this speaks to the fact that our town is nestled between indigenous forests on the shores of the Knysna Lagoon .

The region have a rich history which encompass various cultures like the Khoi-San (Griqua and Outeniqua and Attequa ), Xhosa Culture , various European roots can be traced (Italian ,French ,Norwegian, Dutch and British) ,as well as popular cultures like Rastafarianism ,which arised in later years .

This Cultural diversity , as well as a need for new authentic experiences gave birth to Green Chefs Initiative .

We have a competition during our mainstream festival called Knysna Oyster Festival “Green Chef Community Cooking Competition”.

Participants are chosen through a “Natural Selection “process.

This way we find representatives from all the local cultural or groups present, which will become the Green Chefs.

As a result, tourists have a holistic experience, which includes the environmental, social, cultural aspects of a particular area (National Park).

This project attracted the attention of Louis D’Amore(President of the International Institute for Peace Through Tourism ) ,during September 2012.

He presented Green Chefs Garden Route at the UNWTO General Assembly in 2013

This project is designed to enhance the offering presented by our national parks, as visitors get holistic experience of the natural environment they visit.

Encourage entrepreneurship, and build relationships with stakeholders .

Humans we are a part of the environment (and our cultures as well).

A mainstream generic culture is developing , and young people strive towards that idealistic culture, it becomes unpopular to embrace your true heritage .

Green Chefs : fun way of preserving culture can be established as you are focusing on the culinary aspect ,storytelling ,preservation of local habitat ,and can incorporate other cultural aspects ( in a fun ,experiential way)The chefs /cooks experience a sense of pride in the culinary experience they present, and learn to respect their natural environment in the process. It also presents them with a sense of place and value.

The development into an international network of home-based indigenous cooks, producing and preparing food in a responsible way; creating an authentic eating experience for visitors their particular area.

This can become a lucrative, yet sustainable business for the patrons involved. Growing into a pleasurable, spontaneous way of cultural interaction.

I envision that Green Chefs will grow in a regional, then national and expand internationally . Emphasis on wholesome food, produced locally, by locals with great care and integrity, and through this creating a new ,yet authentic cultural tourism experience.

By investing in a project of this nature we would improve skills levels in our local communities and encourage entrepreneurship.

The Supply-Chain Support component

Green Chefs supported by a unique supply chain structure called The Eden Slow food Route .This have its origins in the Karatara Area where there is several community based Organic producers of fruit, vegetables, meat and eggs. The emphasis will be on wholesome food, produced locally, by locals with great care and integrity. These organic producers will also supply to other establishments in the local Tourism Industry.

By investing in a project of this nature we would improve skills levels in our local communities and encourage entrepreneurship. This project has the ability to foster stronger relationships between local communities ,National Parks and Destination Marketing organizations.

My dream is to be able to take my children to Yellowstone National park, to enjoy a walk and then to be presented by a meal prepared by a Green Chef from the local Indigenous Community

The custodians of projects like Green Chefs are our children, as through this initiative they will remember that what ground us in life ,is the knowledge of where we come from ,and what makes us unique.
