Grilled Red Potatoes and Steak with Kiwi Molho Campanha Preparation Time: 30 minutes Bring the Brazilian churrasco to your home in healthy fashion with this twist on a salsa that is a traditional accompaniment to grilled meats and fish in South America. In a medium bowl mix together molho a campanha ingredients. (This can be made ahead and refrigerated.) Heat grill. Place potatoes in a microwavable dish with about ½ cup water. Microwave on high until potatoes are just tender. With grill on high setting and using a grill tray, grill potatoes on one side of grill, turning until golden brown. On the other side of the grill, grill steak about 4-5 minutes on each side, until preferred doneness. Serve immediately spooning kiwifruit molho a campanha on top of steak. Serves 4. Kiwifruit Molho a Campanha

4 Zespri SunGold kiwifruit, peeled and diced

½ red bell pepper, diced

1 medium white onion, diced

Grilled Potatoes

6 medium Colorado Red Potatoes, cut into chunks

1 pound top sirloin steak, 1” thick or more

Picking the perfect Kiwifruit • Hold kiwi in palm of hand and squeeze

gently. A ripe kiwi will yield to slight pressure like an avocado or peach. Green Kiwi tastes sweeter when ripe. SunGold Kiwi tastes sweeter when softer.

• To ripen, leave out at room temperature for 3-7 days. Ripe kiwifruit can be stored in the refrigerator for up to 2 weeks.

Tips for storing potatoes• Store potatoes in a cool, dark, well-ventilated

area, protect from direct light.• Do not store in unventilated plastic bags.• Potatoes will last 1-2 weeks at room

temperature and several months at 45-50°F.• Storing potatoes exposed to excessive light

will cause them to turn green and develop a bitter flavor.

• If the potato has developed green, that section can be removed before cooking.

• It is best not to wash potatoes before storing.• Do not refrigerate or freeze potatoes. At

temperatures below 42°F the starch will begin to turn into sugar.

• Check your potatoes periodically for signs of spoilage such as greening, sprouting or rot. One rotten potato will infect others around it, so removing any deteriorating potatoes will make the rest last longer.
