• Guatemala is a country in Central America bordered by Mexico to the northwest, the Pacific Ocean to the southwest

• The first evidence of human settlers in Guatemala goes back to 10,000 BC, although there is some evidence that puts this date at 18,000 BC

• After arriving in what they named the New World, the Spanish mounted several expeditions to Guatemala, beginning in 1518. Before long, Spanish contact resulted in an epidemic that devastated native populations

Ingredients >3 1/2 cups all-purpose flour3/4 cup (1 1/2 sticks) cold unsalted butter, cut into pieces1/4 cup cold solid vegetable shortening, cut into pieces1 teaspoon salt3 large eggs, beaten to blend2-4 tablespoons ice water

Ingredients >1 pound Greek feta cheese, slightly crumbled2 cucumbers, peeled, split lengthwise, seeds removed and sliced into 4-inch diagonals6 plum tomatoes, peeled, quartered and seeds removed¼ pound Greek Kalamata olives, split and pits removed1 medium red onion, peeled and thinly sliced1 bunch mint leaves, torn½ bunch flat leaf parsley, leaves torn2 teaspoons kosher salt½ teaspoon cracked black pepper1 tablespoon dried oregano leaves½ cup Greek extra virgin olive oil¼ cup red wine vinegar
