Our journey into the Salento wine scene

starts at Brindisi, home to the Brindisi doc

which introduces wine tourists into the

domain of Negroamaro. Just like many of

the other grape varieties found in the

Salento peninsula, this probably originated

in Greece. Its name leaves no doubt as to

the impenetrable colour of both grapes and

wine: Negroamaro literally means

“blackblack”, from niger in Latin and maru

in Greek, although niuru maru in the local

dialect recalls the black grape skin and the

bitter taste of the wine. This variety is the

star of all the doc wines in the Upper

Salento area – Brindisi, Squinzano, Salice

Salentino and Copertino – either used

alone or blended with Malvasia Nera di

Brindisi and di Lecce, another variety

which is very typical of this area.

Brindisi was a very important sea port in

Roman times, doing a brisk trade in oil and

wine with the lands in the eastern

Mediterranean. Then it became the port

from which the Crusades set off to do battle

in the Holy Land. When Italians propose a

toast, raising their glasses, call it a

“brindisi” as crusaders used to do after a

battle, in memory of their last few hours on

the Italian territory.

The countryside here is very fertile and the

vegetation is richly abundant. Olive-

growing is very important here as shown

by the many archaeological remains and

monumental underground olive oil presses

in the Museum of Country Life at the Abbey

of Santa Maria di Cerrate near Squinzano,

between the Provinces of Brindisi and

Lecce.

Lecce is not to be missed with its incredibly

beautiful Apulian baroque architecture,

and only a few kilometres away is the

Cupra Valley. This generous countryside

has so much to offer in the way of culinary

resources, and these have then spread

throughout the entire Salento. This area

was already well-known as a holiday place

in the 16th century, and this is where you

can taste one of the simplest and most

delicious dishes of the rural tradition:

cecorè reste'a mmenèscia. This is a soup

made using wild chicory, patiently picked

along the edges of the fields or the country

lanes. It is seasoned with pecorino cheese

or some bacon fat.

The land here provides so many raw

materials for cooking that it has given rise

to what is called “poor” cuisine, based on

simple ingredients like vegetables, fresh

pasta, pulses, meat (horse meat is widely

eaten) and fish. In actual fact, when you

look at the traditional Salento recipes they

are really full of creativity and flavour, with

a great variety of cooking methods and

materials, like stone ovens and ceramic

“pignata” cooking pots. Traditional bread is

also an indication of the creativity of

Salento housewives, and it is still possible

to eat pucce, pizzi, 'mpille, and uliate,

which are small loaves made from dough

containing various “extra” ingredients, like

black olives, fried onions, tomato and

paprika, and extra virgin olive oil.

The Botrugno family has been closely

involved with wine, the vineyard and its

territory since 1900. This may be have

something to do with the derivation of

the family name, because the word

“botrus” in Greek actually means a bunch

of grapes. The winery is managed by

brothers Antonio and Sergio, who follow

every stage of the production process,

and personally supervise the grapes on

their journey from the vineyard to the

bottle. The wines produced here are

exclusively doc and igt, the result of

particular care taken with the local grape

varieties in the winery's vineyards,

where integrated methods are used to

grow Negroamaro, Malvasia Nera di

Brindisi, Primitivo and Ottavianello as

bushes. It is possible to visit both the

wine cellars and the vineyards.

It is not strong-bodied, but quite intense with exuberant tannins. Perfect with a bean soup flavoured with plenty of extra virgin olive oil.

Aurora Brindisi Rosato doc 2008Grapes: Negroamaro 80%, Malvasia Nera di Brindisi 20%Alcohol: 14%Cost: euro 6,00Intense coral pink colour with aromatic suggestions of wild strawberries and pink geraniums. Less timid on the palate: more intense, good body and persistence. Fresh and lightly flavoured, suggested with fava bean purée and tomatoes.

Malvasia Nera Salento Rosso igt 2008Grapes: Malvasia Nera di Brindisi 100%Alcohol: 13,5%Cost: euro 8,00A ruby red hue with strong purple highlights, and intense fruit and spicy fragrances: strawberries, blackcurrant and cloves are the strongest. A medium body and an interestingly persistent flavour and aroma. It is easy to match with rather simple dishes like roast meats, which are not too heavily seasoned.

Cantina Brancasi was founded in 1980

in the heart of the Brindisi doc area.

The winery lies a few kilometres north

of the city, and processes the grapes

from the 350 members of this

cooperative whose president is

Vittoriano Mastrogiacomo.

The winery carefully selects the grapes

from around 500 hectares of vineyards

dominated by Negroamaro and Malva-

sia di Brindisi, alongside international

varieties like Chardonnay.

The excellent climatic conditions of this

area, the composition of its soils, the

proximity of the Adriatic and the

modern processing techniques used all

contribute to the production of wines

which are appreciated the world over.

It is possible to visit the winery and buy

directly from the shop.

Hints of blackberry jam, black pepper and butter on the nose, with some notes of leather. Fairly good texture and balanced, smooth on the palate, warm with pleasant tannins. Average persistence. To serve with breaded meatloaf.

Visellio Salento Rosso igt 2006Grapes: Primitivo 100%Alcohol: 14,50%Cost: euro 16,00Dense in the glass, intense purple red colour with lighter purple highlights.Perfumes of black cherry and vanilla with some spicy notes on the nose. Black cherry turns into cherries preserved in alcohol on the palate, with good structure, intensity and persistence. Nice and fresh, and very good with mature cheeses like Canestrato dop di Corato.

Saturnino Salento Rosato igt 2008Grapes: Negroamaro 100%Alcohol: 13,50%Cost: euro 7,00Intense brilliant coral pink hue. Intense and pleasant fragrances of strawberry, mulberry, violet, fern, radish and lavender with notes of liquorice and sugared almonds on the nose. A refined bouquet on the palate and perfectly balanced. Satisfyingly persistent.Excellent texture, and perfect with linguine in a crab sauce .

Jaddico Brindisi Rosso doc 2006Grapes: Negroamaro 70%, Monte-pulciano 15%, Malvasia Nera 15%Alcohol: 13,50%Cost: euro 16,00Intense ruby red colour with purplish flashes. Splendid wide range of scents on the nose: forest fruits, porcini mushrooms, cloves, leather and vanilla, with notes of eucalyptus and hydrocarbons. Slightly less intensity on the palate, but wonderfully balanced and persistent, with a fairly good structure. Approaches excellence. Suggested with lamb ragù.

The name Rubino tells the story of a

recent passion for wine-growing and

the creation of excellent quality wines

for today's consumers.

Tommaso Rubino founded the winery

in the mid 1980s when he bought

some estates in the north of Brindisi,

and decided to invest in the

agricultural potential of the area.

His son Luigi soon started a wine-

growing activity which exalts the local

varieties.

Today the winery is a modern concern

with highly sophisticated technology,

which welcomes enthusiasts and wine

tourists: the original wine-tasting

room has a large round 24-place table

where visitors can also try out some

excellent extra virgin olive oils after a

visit to the beautiful wine cellar.

Pietraluna Salento Rosso igt 2006Grapes: Negroamaro 100%Alcohol: 13%Cost: euro 7,00Intense garnet red hue. Delicious scents of strawberry jam and cloves with notes of fresh butter. Good intensity on the palate, medium-bodied and fairly persistent. Intense fruity flavour. Excellent with pasta al forno con melanzane.

The Torre Guaceto project started in

2000 and aimed at enhancing quality

agricultural products - not only wines

- of the Brindisi countryside, while

respecting the precious natural

heritage of the Torre Guaceto nature

and marine reserve.

This area is eminently suitable for

wine-growing thanks to its position

and particular landscape features. The

winery uses only organic methods to

grow its grapes, and manager Michele

Greco belongs to the Accademia di

Racemi, which has always been

synonymous with wine quality.

It is possible to visit the winery and

buy its wines directly.

near Latiano, with the aim of

producing quality grapes to make

great wines. After many years of

enhancement, the Dimastrodonato

family's winery now possesses

important selections of local varieties

like Sussumaniello, Malvasia Bianca,

Fiano, Negroamaro, Malvasia Nera

and Primitivo. A combination of years

of wine-growing experience, modern

technology used in the wine cellar and

enormous enthusiasm means that the

winery has had success on both the

national and international markets.

The winery headquarters in Contrada

Partemio has a wine shop, and wine

tourists and enthusiasts can take a

Its fragrance recalls raspberries with rose petals and some spicy notes. Its structure is a little thin on the palate, but overall quite balanced. Average persistence. Good with prawn soup.

Verve Salento Rosso igt 2007Grapes: Negroamaro 100%Alcohol: 14%Cost: euro 14,00A ruby red colouring with burgundy highlights. Vegetal hints of forest woodland plants and fruity hints of cherry and carob. A good texture and persistence, with a pleasant peppery note at the finish.Excellent with a bowl of well-seasoned stewed turnip tops.

Nottetempo Salento Bianco igt 2008Grapes: Chardonnay 100%Alcohol: 14%Cost: euro 14,00An excellent intense straw yellow hue. It has the lively banana scents on the nose which are typical of this variety, with some toasted notes. It is warm in the mouth, quite smooth and persistent with a restrained dryness. The ideal accompaniment to this wine is a soft goat cheese.

Agricole Rizzello was founded about

forty years ago, as the culmination of a

long agricultural tradition in the family.

Complete control of the production

cycle is one of the fundamental features

of this winery under the direction of

Franco Rizzello, which is an important

centre of production in the Salento.

Its vineyards are cultivated organically,

consisting of 180 hectares of vines

grown as bushes, of which 90% are the

local varieties Primitivo, Negroamaro,

Malvasia Bianca di Brindisi and Nera di

Lecce, while the remaining 10% are

Chardonnay.

The winery has advanced wine-making

technology which makes it possible to

maintain a constant quality and

quantity of production. Visitors can

buy directly from the winery.

Platone Salento Rosso igt 2006Grapes: Primitivo 50%, Negroamaro 50%Alcohol: 13,50%Good garnet red colour. Fragrant scents of blackcurrant jam, roasted coffee and vanilla on the nose, with some liquorice notes. Intense and averagely persistent on the palate. Developing balance suggests further aging as a possibility. Liquorice in the finish as well. Beef tenderloin in liquorice sauce is the perfect dish with this wine.

Felicità Salento Bianco igt 2008Grapes: Sauvignon 70%, Chardonnay 30%Alcohol: 12,50%An intense straw yellow colour in the wine glass. An aroma containing hints of pineapple, apricot and boxwood with some citrus notes. The prevailing sensation on the palate is softness. It is medium-bodied and persistent, and would go well with a sea-bass carpaccio.

Taras Salento Rosso igt 2007Grapes: Primitivo 100%Alcohol: 14%An intense ruby red colouring with clear garnet nuances. The fragrance reveals pleasant hints of cherries, almonds and butter, with slight suggestions of spices like pepper and vanilla. A balanced full-bodied wine which goes well with roast pork.

The Azienda Vinicola Al Bano Carrisi,

at Masseria Curtipetrizzi, continues to

represent this famous singer's close

ties to his home area and family estate.

The particular features of the soil

combined with rigorous respect for

local traditions guarantee the

excellent quality of the organically-

grown grapes which are made into

wine using advanced methods.

Each stage of the production cycle -

which favours local varieties - is

followed by expert agronomists and

oenologists. The wines are distributed

all over the world, sometimes with

labels evoking Al Bano's best known

songs.

The cellars can be visited by

appointment and visitors can also

taste wines and extra virgin olive oils.

Bagnara Salento Bianco igt 2008Grapes: Fiano 100%Alcohol: 13%Cost: euro 10,00A brilliant straw yellow hue with gold highlights. It has a fragrance of ripe banana, vanilla, honey and grass on a slightly balsamic background. A delicate taste, because it is medium-bodied, persistent and balanced. Excellent with wild fennel, chickpeas and clams.

Tenuta Albrizzi Salento Rosso igt 2007Grapes: Primitivo 50%, Cabernet Sauvignon 50%Alcohol: 13,50%Cost: euro 9,70Intense ruby red colour with garnet highlights in the glass. A good body, texture and balance, with intense floral hints on the nose, recalling poppies and fruity cherry scents. To accompany with a dish of pasta, cabbage and bacon-fat.

Cantine Due Palme was founded in 1989

and is one of the largest cooperatives in

Apulia and the whole southern Italy,

situated across the boundaries between

the provinces of Lecce, Taranto and

Brindisi. The cooperative is led by

Angelo Maci, and has over 850 member-

producers growing local varieties like

Negroamaro, Malvasia Nera, Sussuma-

niello and Primitivo, as well as the most

widespread international varieties.

There are two completely new

complexes: one contains the offices, a

spacious tasting room and restaurant;

and the other contains the conference

room with open cellars and a waterfall,

the wine-making machinery, an

advanced testing laboratory, and a

spacious reception room for groups of

visitors by appointment.

The Cantina Sociale Cooperativa di San

Donaci was founded in 1933 by a small

group of growers, and now has almost

500 members who deliver around 4

million kilos of grapes annually.

The vines are grown as bushes, with

Negroamaro the most widespread

variety, followed by Malvasia Nera then

smaller quantities of Chardonnay and

other varieties of white grape.

For years the cooperative, now led by

Marco Pagano, has had the primary

strategic objective of continuously

improving wine quality, with excellent

results also obtained through

substantial investments.

A visit to the winery buildings is a

pleasant experience, and visitors can

see the underground cellars, as well as

buy wines directly from the producer.

The Cooperative was set up in 1961 by

14 local wine-growers. Now it boasts

about 1000 members who deliver their

grapes to the winery. Their vineyards

are mostly made up of vines grown as

bushes, situated between the provinces

of Brindisi and Lecce in the countryside

around San Pancrazio, Sandonaci,

Guagnano and Salice Salentino. Wine

production is mostly a reflection of the

local varieties and concentrates on

Negroamaro and Malvasia Nera,

although the winery also receives

Primitivo, Montepulciano, Cabernet

Sauvignon and Malvasia Bianca grapes.

Tommaso Conte is the manager now,

and the aim of the cooperative is to

produce wines using a combination of

On the nose it has an unusual perfume of fennel seeds, aniseed, vanilla and pear. On the palate the effect is less intense; it is medium-bodied, but with a satisfying persistence and a delightful fresh finish. It should be served with fresh dairy products and cheeses.

Le Tre Terre was founded in 1984 at

San Pancrazio Salentino and has an

area of about 200 hectares, including

45 hectares of vineyards. At the centre

of this large estate there are the

buildings where the grapes are made

into wine, the olive oil press and the

processing plant for vegetables and

table olives. The farm is headed by

Francesco Galluccio and uses only

organic methods; this includes the

vineyards. The dominant varieties

grown here are Negroamaro, Malvasia

Nera, Verdeca and Chardonnay.

This is an example of an agricultural

modern production technology and

marketing techniques. It is possible to

1983 at San Pietro Vernotico, in an

area with a strong wine-growing

It is drinkable, medium-bodied and has a good persistence, so that it is a balanced wine. Pleasant and easy to match with foods, it is recommended with an aubergine timbale.

Masseria Altemura was founded ten

years ago in the territory between

Torre Santa Susanna and Oria, when

the Palombara and Monteverde estates

merged. Both had belonged to the

Counts of Martini Carissimo, and were

bought and carefully restored by the

Zonin Group which has also restored

the massive Aragonese tower. There

are 260 hectares of land, including 110

hectares of vines situated in the centre

of the Salento. The climate is influen-

ced by the proximity of the sea and this

together with the intense sunlight

means that the conditions are

extremely good for wine-growing.

The most representative varieties

grown and processed by the winery

include the local Negroamaro,

Primitivo, Aglianico and Fiano.

Azienda Agricola Melillo has been

working for generations at the edge of

the Salento in an area where vines and

olive trees flourish.

The Melillo family is part of the local

tradition and grows the local varieties

like Negroamaro and Primitivo, and

the quality of its products is ensured

by the use of organic cultivation

methods.

The winery has complete control of

the wine-making process: the grapes

come from the family vineyards,

where yields are purposely limited in

order to favour quality, and then made

into wine using the most modern

Taurosso is managed by its founder

Elio Taurino, following a family

tradition dating back about a century.

There is a close bond with the

territory and the old native Salento

varieties like Negroamaro, Primitivo

and Malvasia Nera. The underlying

philosophy of the winery is that

“production of a good wine requires

sound principles, mature grapes, hard

work, time and great passion”.

The vineyards are cultivated as

bushes, a typical method used in

Apulia, the grapes are selected and

harvested by hand, and modern

technology is used to make the wine at

a controlled temperature.

The winery is also involved in projects

for protecting and safeguarding the

The Mocavero family started the

business in 1950, but the agricultural

tradition dates back a hundred years.

Azienda Vinicola Mocavero was

established in 1994, and is committed

to enhancing the typical features of

local vines like Negroamaro, Primitivo

and Malvasia Nera di Lecce. The new

winery is surrounded by vineyards and

centuries-old olive groves, and it is

here that Francesco and Marco - the

fourth generation of the family -

carefully select the best grapes in order

to obtain high quality wines. They

follow the various production stages in

person from the vineyards, to wine-

making, maturation and bottling. The

winery has a beautiful sampling room

Very pleasant taste with definite fresh notes. Good body and persistence, fairly balanced. The perfect accompaniment to linguine with small tomatoes and scampi.

Tenute Mater Domini was founded in

2003 in the Negroamaro Park and is

now headed by Pierandrea Semeraro.

This winery uses organic methods to

grow the local Negroamaro variety

near Novoli and Salice Salentino in the

old bush vineyards, some of which are

seventy years old.

Another local variety, Malvasia Nera, is

also grown and blended with

Negroamaro to obtain the typical

Salice Salento doc blend.

The winery has its headquarters in

nearby Campi Salentina, and aims to

enhance the enormous wine-growing

capacity of this territory by producing

a range of quality wines, which

visitors can sample after an intere-

sting tour of the winery.

Giovanni Petrelli had always enjoyed

giving his wines away but in 1984 he

decided to start selling them, and

established the winery.

The love of the land and for grapes

inherited from his father Noé, and his

own expertise allow him to produce

high quality wines.

The heart of the farm is an imposing

house with three arches, and the

winery buildings consist of two parts:

an old barn dating back to the early

1900s, now renovated and converted

into a cellar, and a large room where

the wine is made.

Wine tourists are sure of a warm

welcome to the family residence, and

can taste wines made mostly from

Negroamaro and Malvasia Nera

grapes.

The range of fragrances contains a note of black cherry jam, surrounded by hints of vanilla, leather and cinnamon notes. A pleasantly balanced wine, elegant tannins and a good liquorice finish on the palate. Goes well with beef seasoned with ginger.

Azienda Monaci lies only a few

kilometres from Copertino and

belongs to the Garofano family.

The large farm consists of the Tenuta

Li Monaci estate which has a historic

farmhouse and 30 hectares of land,

including 16 hectares of vineyards.

There is a modern wine cellar from the

1940s where the grapes are processed

and the wines are matured, aged and

bottled.

The varieties used are almost

exclusively the local Salento natives.

The winery has a strong connection

with the past in the shape of its old

agricultural buildings from the

workers' cottages to the dairy, from

the olive oil press to the grindstone.

Visitors can tour the winery by

appointment.

founded at Copertino in 1975.

Annunziato Marulli has introduced

new varieties like Merlot, Syrah,

Montepulciano and Chardonnay

alongside the traditional Negroamaro,

Primitivo, Malvasia Nera di Lecce and

Verdeca varieties, in order to enrich

the vineyards and expand the range of

wines.

Advanced technology introduced into

the production process has not

changed the family atmosphere of the

winery because Annunziato Marulli is

still a wine-grower at heart, and

personally supervises all the stages of

wine-making.

Copertino was established in 1935 by

a group of Copertino wine-growers.

These ambitious pioneers aimed to

improve wine quality in the Salento

and move away from the traditional

individualistic approach.

Marco Petito is the president of the

cooperative which now boasts around

350 members who deliver the grapes

grown on their land using the

traditional bush system.

The grapes from the Negroamaro,

Primitivo, Malvasia Nera and Monte-

pulciano varieties - the most prevalent

local varieties - are converted using

advanced techniques which produce

quality wines.

Antica Masseria del Sigillo was founded in

1998 by local entrepreneurs who

descend from generations of wine-

growers. They aimed at a modern

interpretation of the typical Salento

varieties like Negroamaro, Malvasia Nera

di Lecce and Primitivo, and of

international varieties like Merlot and

Cabernet Sauvignon. The winery is led by

Piero Rodio and is located at Guagnano,

where the soils contain a base mixture of

limestone and volcanic rock with a

surface layer of chalky-clay debris and

rocks, and the excellent climatic

conditions allow the grapes to acquire

complex intense perfumes reflected in the

wines. Wine tourists and enthusiasts are

outside Guagnano.

Rita and her children follow the

course set by her husband Cosimo,

and are constantly involved in tilling

the land, planting the vines, carefully

tending the vineyards, attentively

selecting the grapes and making wine

using modern techniques. They

continue the family tradition aimed at

producing quality wines from the

native Salento varieties - Negroamaro

and Malvasia Nera - grown in the

traditional Apulian bush system.

Visitors to the interesting wine cellar

will see a waterfall system which

ensures the best temperature and

humidity levels.

The Cantele family is very closely

connected with the Salento territory,

and this is reflected in the imposing

stone farm building in the typical style

of the local whitewashed farmhouses.

This is the heart of the winery, now led

by the third generation of the family:

Cantina Emera has been operating for

years in the Salice Salento doc area,

where vineyards have always flouri-

shed.

The winery was established in the

early 1900s and then bought by the

Magistravini Group in 2003.

It is led by Claudio Quarta who has

renewed the winery by making

substantial structural investments and

technological improvements, while

preserving the architecture and wine-

making tradition. The winery has two

product lines: “Anima” consisting of

wines from the typical local varieties of

the area like Negroamaro, Malvasia Nera

and Primitivo, and then a line of wines

obtained from international varieties. It

Feudi di Guagnano was founded in

2002 in an area with a wonderful

combination of climate and soil

structure, allowing local wineries to

make rich wines with complex and

intense bouquets.

The winery is small but significant,

and was started by five young

entrepreneurs who wanted to salvage

some vineyards abandoned by their

owners who were too old to continue.

It has 15 hectares of bush vines

scattered around the Guagnano area.

A visit to the vineyards is an intere-

sting experience, and in the building

where the wines are matured, there is

a small room for visitors to tastewines

and discover more about the winery

and its products.

Agricole Vallone is a family concern

established nearly eighty years ago, a

real jewel in the crown of Apulian wines.

The winery has three estates: Tenuta

Flaminio in Brindisi which contains the

wine-making plant, Tenuta Iore in San

Pancrazio Salentino, and Tenuta Castel

Serranova in the Carovigno countryside

and surrounded by the Torre Guaceto

Nature Reserve among vineyards and

centuries-old olive groves. Castel

Serranova includes a splendid 15th

century Saracen defence tower. The

winery belongs to sisters Vittoria and

Maria Teresa Vallone and it is managed

by Donato Lazzari. At present the

winery is extending the area of

vineyards where the vines - dominated

by Negroamaro - are grown as bushes

The vineyards of the Marchesi Bozzi

Corso – Terre Salentine winery are

located near the mediaeval town of

Roccaforzata in Taranto Province, on

hills which slope gently down to the

plain of Taranto. The vineyards are

exposed to the sea breezes from the

Ionian Sea, which help to create an ideal

micro-climate for the vines. The winery

is situated on the property of the historic

Bozzi Corso Colonna Santangelo family

and is surrounded by their lands. There

are 25 hectares of vineyards dominated

by the characteristic Salento varieties

like Primitivo, Negroamaro and

Malvasia Nera, alongside important

varieties like Pinot, Sauvignon and

Sanchirico is the name of the historic

farmhouse at the centre of an estate

surrounded by vineyards in the heart

of one of the most important

Mediterranean wine-growing areas.

The farm is headed by Gianluca

dell'Antoglietta, and was founded over

a hundred years ago. The dominant

variety in the vineyard here is

Negroamaro, grown on 40 hectares of

trellises, and local white grape

varieties and international varieties

have been added in recent years.

The new production plant is inside the

old building, where a long tradition of

Vigneti Reale has linked the Reale

family to the land and to wine-growing

since the early 1900s, but it was not

until after the Second World War that

they realised how much potential

there was for the quality and

marketing of the typical Salento

varieties like Negroamaro, Malvasia

Nera and Primitivo. The recent history

of the farm is that of a modern

production business, which follows all

the stages of wine-making from the

vineyard in the countryside near

Cellino San Marco, to wine-making

and bottling in the plant at Novoli, a

few kilometres away from the

vineyards. The processing plant has

been completely renovated, while the

wines are matured and perfected in

the underground cellar.

In 1871 Giuseppe Carrozzo started

working to enhance typical Apulian

products, and the Carrozzo family still

follows in his footsteps today on the

sunny plains of the Salento, modest and

passionate at the same time in their

work. Giuseppe's great-grandchildren

Alessandro, Elisabetta and Elena

approach their lands with the same

attitude as their great-grandfather,

concentrating on the local varieties.

Negroamaro and Primitivo are the

dominant varieties in their vineyards,

and are grown in the typical Apulian

bush system. The perfect combination of

The Apollonio family has had a long and

intense wine-growing history. Noé

Apollonio began to make and sell wine in

1870, but it was his son Marcello who

modernised the small winery by

opening new processing plants,

establishing vineyards, and personally

taking care of production. In 1995

brothers Marcello and Massimiliano -

the fourth generation of the family -

began an ambitious and dynamic

programme of expansion towards

international markets. Besides the wine-

making activity, their work to promote

the culture of wine includes events like

Terre del Grico is a young winery

which was recently established, and

the name is directly connected with

“Grecìa Salentina”, a strip of the

Salento where the local language,

culture and traditions are of Greek

origin. This immense heritage of

traditions combined with the

experience of brothers Marcello and

Massimiliano Apollonio has inspired

this new label. The winery's expan-

sion policy also includes the purchase

of new lands and vineyards.

The two brothers are directly involved

in all stages of production, from

Good with cervellata lamb cooked in pan with red wine sauce.

On the nose there are intense grassy and fruity notes on a bed of geraniums. When tasted it has an agreeable intensity, and is well-balanced and persistent. A delightful vegetal finish. Excellent with an asparagus omelette.

Lacòna Salice Salentino Rosato doc 2008Grapes: Negroamaro 90%, Malvasia Nera 10%Alcohol: 12,50%Cost: euro 6,50Coral colour with clear pink nuances, and intense fragrant hints of nectarines, red flowers and light hints of cinnamon on the nose. Smooth on the palate and quite intense. Slightly bitter finish. Average persistence. Suggested with tagliatelle alla boscaiola.

The Azienda Vinicola Mogavero was

founded by Paolo Mogavero in 1930,

in the heart of the renowned Salice

Salento doc territory.

His son Salvatore expanded the

business by planting vineyards and

starting up new processing plants.

Since 2001 the winery has been

headed by Andrea and Paolo - the new

generation - who have invested in a

bottling line and created a real brand

for their own wines.

These are mostly made from local

varieties like Negroamaro and

Primitivo, grown on the 30 hectares

they own and the 10 hectares they

rent. Production is increasing all the

time for the Italian market and also for

the international market. It is possible

to visit the winery and buy its wines.

The Cantina Cooperativa Salice

Salentino is celebrating the 50th

anniversary of its foundation by the

small group of entrepreneurs who

formed this successful cooperative

society. The organisation is now

headed by Giovanni Ianne and has 900

producer-members. They take great

care of their valuable Negroamaro and

Malvasia vineyards, the varieties which

are the key components of the

renowned Salice Salentino doc.

Modern management and the use of

innovative equipment combined with a

deep-rooted wine-growing tradition

mean that the winery produces wines

of a very high quality which have

achieved important recognition.

Hints of blackberry, dried rose with spicy and balsamic notes on the nose. Marked tannins are pleasant on the palate. Full-bodied and intense, fairly persistent. Still young but promising. Can be matched with eel in tomato sauce.

Aiace Salice Salentino Riserva Rosso doc 2005Grapes: Negroamaro 80%, Malvasia Nera 20%Alcohol: 13,50%Cost: da euro 10,00 a euro 12,00Brilliant garnet red hue. Reminiscent of plum jam bitter almonds, butter and coffee on the nose. Quite good balance on the palate with exuberant tannins and a good taste. Fairly full-bodied, good intensity and persistence. Ideal with tripe rolls and medium ripe cheeses.

Castello Monaci is a Norman building,

dating back to 1480, and lies on the old

Via Franchigena used by pilgrims and

merchants on their way to Jerusalem and

Constantinople. Near the castle there is

the winery which brings together the

ancient tradition of wine-growing typical

in this area of the Salento with the most

advanced wine-making techniques. This

combination makes it possible to realise

the enormous potential of the local vines

like Negroamaro, Malvasia Nera and Pri-

mitivo, and of the international varieties

which find an ideal terrain here giving

excellent results. The winery building is

interesting to visit and is surrounded by

the rows of vines. There is an elegant

sampling room for wine tourists and

enthusiasts, and visitors can also admire

the atmospheric underground cellar.

Gocce di Luna Salice Salentino Rosso doc 2005Grapes: Negroamaro 80%, Malvasia Nera 20%Alcohol: 13,50%Cost: euro 9,00Garnet red colouring with slightly orange notes. Not very intense on the nose, with perfumes of black mulberry jam, cacao and some citrus notes. Balanced and pleasant on the palate with a good flavour. Not very persistent, but still average. Good with sweet and sour pork.

Finisie Salento Rosato igt 2008Grapes: Negroamaro 80%, Malvasia Nera 20%Alcohol: 12,50%Cost: euro 6,00Brilliant soft cherry pink. Fine and delicate fragrance with hints of sweet strawberry, sugared almond, fresh almond and sage. Fresh, intense and harmonious on the palate, with a candyfloss finish. Splendid when served with mullet and parsley.

Il Torchio Baccanera was established in

1993 a few kilometres from the centre

of Salice Salentino, in an important

wine-growing area. The winery is the

fruit of the family's long-standing

experience as wine-growers handed

down from generation to generation.

However, it was only in the early 1990s

that they began to bottle their own

wines. There is a shop where visitors

can buy and sample the wines, and

behind this is the area where the wines

are made from the local native

Negroamaro, Malvasia Nera, Malvasia

Bianca and Primitivo varieties grown

on the winery's 12 hectares of

surrounding vineyards. Lorenzo

Epifani is in charge of production while

Santino Chiarello and Angelo Sirsi are

responsible for marketing.

Delicate aromas on the nose with suggestions of redcurrant, pomegranate in flower, nutmeg and green tea. Full-bodied fresh and well-balanced. Satisfying persistence. The ideal wine with cavatelli in vegetable sauce.

Leone De Castris lies in the ancient

wine-growing lands of the Salento. The

history of this winery runs parallel to

the history of wine in Apulia. The

winery was founded in 1665 near the

town of Salice Salentino, and is now

managed by Piernicola de Castris.

Leone De Castris began bottling its

own wines in 1925, and then created

Five Roses in 1943, the first rosé

bottled in Italy and an indication of

success. Negroamaro, Malvasia, Bianco

d'Alessano and Aleatico are among the

predominant varieties grown here for

doc and igt wines, spumantes and a

grape aquavit.

The imposing building is very

interesting to visit with its antique

cellar, high ceiling vaults and a well-

appointed sampling room.

Axa Salice Salentino Rosso doc 2007Grapes: Negroamaro 80%, Malvasia Nera 20%Alcohol: 14%Cost: euro 6,00Consistent ruby red hue, with intense perfumes of forest fruit jam, cinnamon and black pepper. Red fruits return insistently on the palate, and the wine is full of flavour, smooth, warm and full-bodied with average persistence. Good with lamb al ragù.

In 1923 Baron Pasquale Martucci

married the Salento noblewoman Maria

Galluccio Balsamo. The bride's dowry

included Masseria Lamia, a 16th century

building with an estate of 400 hectares

in the territories of San Pancrazio Salen-

tino and Sandonaci. The Martucci family

were originally from Bari Province, and

then transferred their wine-growing

activity to Brindisi Province. The family

has now been working here for three

generations and they cultivate 75

hectares of vineyards, mainly used for

local varieties like Negroamaro,

Malvasia Nera and Primitivo. After

harvesting, the grapes are converted

into wine at the winery in the town of

Squinzano where the wine is matured,

bottled and marketed. It is possible to

visit the winery and buy its wines.

Rrubbacore Salento Rosato igt 2008Grapes: Negroamaro 100%Alcohol: 12,50%Cost: euro 12,00Brilliant intense cerasuolo pink hue. A little timid at first on the palate with hints of peach flower and nearly ripe cherries, toast and vanilla notes. Light, average intensity and persistence, balanced. This goes well with tubettini and mussels.

In 2005 the Segmento Salento brand

was added to the regional wine scene.

It was created with the ambitious aim

of enhancing Negroamaro, the most

representative Salento variety.

Alessandro Pallara heads the project

which soon added the important

experience matured by the Cantina

Viticoltori Associati di Veglie to help in

producing an unblended Negroamaro

to meet the demands of the internatio-

nal markets.

The aim is being realised in a series of

stages from selection and enhance-

ment of the old bush vines to the

professional development of all the

winery members.

Plans for the future are based on

expanding marketing to include other

symbolic Salento products.
