The 2011 Italian Language & Food and Culture program in Rome, Italy combined traditional lecture and discussion meetings with hands-on co-curricular around Rome, as well as in the Lazio region and Cilento. The course presented food in all its complex connections with culture, nutrition, environment, society, economics and politics. All course topics were accompanied by practical activities, ranging from classes in professional kitchens to food and wine pairing, and tasting workshops. The lecture series featured prestigious experts for each specific course topic, thus providing a dynamic learning environment with an interdisciplinary approach. Practical assignments allowed students to explore and experience first-hand food culture in the streets of Rome, to use and improve their Italian and make the most of their summer abroad. Our 5-week program in Rome introduced our students to one of Europe’s most vibrant capitals, it’s multicultural and yet inherently European environment, through the lens of food culture. The month-long BGSU summer program consisted of a daily intensive Italian language course and activities all organized by Gustolab Institute. The extra-curricular activities continuously focused on the Italian culture and aimed to give the students a full-immersion experience. The activities were students’ real opportunity to experience Rome from another perspective, in addition to their independent time. Gustolab Institute sought to open the students’ eyes to the cultural aspect of the Italian culture, as well as gain an appreciation and understanding for the cuisine.

These objectives were incorporated into activities and events such as a cultural orientation, a scavenger hunt around Rome, visits to major historical markets in Rome, personal tours at art galleries and meetings with the owners, and food and culture activity/street workshop with a Gustolab Institute professor, wine tastings with a sommelier, an educational farm visit, guided tours to the Coliseum, Palatine Hill and the Roman Forum, themed educational dinners with a chef, attending an International Film Festival in Rome with Italian university students, and a weekend conference focused on Mediterranean themes. In addition, the students also worked closely to create a cultural portfolio about places visited throughout their stay, which then was presented at the end of the program.

Global Studies in consumer culture: Branding Italian

Cuisine

The 4-week UIUC Food and Culture Summer Program at Gustolab Institute strived to have the students of Advertising acquire a deeper understanding of Italian food, culture, and society, by concentrating on the beginning: the basic agricultural production to the way various processes and traditions are implemented into the environment of food, art, culture, history, etc.

The intense 4 weeks allowed students to investigate the culture from a business point of view and study successful national food branding cases, Italian marketing techniques, personal observations of the way cuisine is advertised in various pubs, bars, restaurants, enoteca’s, trattoria’s. Working

closely with their professor, they brought their previous knowledge and studies from their UIUC Advertising courses and applied their comprehension to courses and activities abroad including: street workshops and lectures on street food, as well as visits and lectures to famous shops including discussions with the owners. The program includes visits and collaboration with a prestigious Italian Advertising Agency based in Rome, as well as visits to exhibits dedicated to Italian brands and products. Each week students attended lectures given by well-known professors and/or instructors in the world of Italian Business & Advertising, including: Doctors from National Research Institutions; professors from prestigious Italian universities who were also directors of Advertising/Marketing departments and spoke about “Made in Italy” brands and advertising in Italy; speakers from the Barilla Center for Food & Nutrition.

It is fundamental that the students are realistically in contact with work-related references, in the field of Advertising, to better comprehend the differences between promotion and publicity in Italy, in comparison to that which they are aware of on the home campus. The major project included four different groups each closely studying a fundamental Italian product (Wine, Pasta, Oil and Cheese) which they began to closely analyze before departing for Rome and then continued to focus on their product once in Italy.

This strategy allowed for a full analysis of a foreign product in a foreign and in its home country.

Italian History Sociology of Immigration

The intense 2-week UIUC History program included 10 days in Rome and 3 days in Palermo (Sicily) with a strong focus on Immigration in Italy. The group of 15 students, accompanied by their professor, took part in lectures including meeting with a History, Politics and Immigration expert from the Italian Senate, an Immigration Journalist, a representative of a European Migration Institution, and representatives from a Jesuit Institution which welcome all immigrants to Italy, etc.

Students also visited multicultural quarters of Rome with a private guide, exclusive immigration exhibits in honor of Italy’s 150th birthday, Mediterranean concerts and private guided tours to major historical churches. The group of students also took part in a “Survival Language” Italian course and had several one-on-one meetings with their professor. The last 3 days of their stay was dedicated to the city Palermo in Sicily, one of the most noted regions for arrival of immigrants. The semester long program in Rome focuses on Italian Food and Culture via courses and full immersion extra and co- curricular activities. Five courses: Food & Culture, Food & Media, Layers of Rome, Italian History & Society and Italian Language are all taught by professors and instructors specialized in the material that is presented. The courses include wine seminars, exploring Rome, visiting vineyards and educational farms, an educational weekend in the south of Italy and various activities that serve as added-on material in the classroom. Food & Media challenges the students to investigate a food topic related to the course and consequently create a short documentary to be presented as a final project at the end of the semester. GL Institute strives to provide the students with skills that they can later use in the future and not only over the course of a semester. The aforementioned documentary project, for instance, grants the students an exclusive opportunity to work closely with video producers, enter into a professional studio and handle technical equipment; thestudents become managers of their own projects.

While abroad Gustolab Institute considers communication between UIUC and Italian students prominent, as many times foreign students do not have the occasion to interact with Italian peers. GL Institute provides such an experience by collaborating with the students of English language at Roma 3 University in Rome. Together, the students work on a project entitled “Cartoline” which allows partners and groups to explore several and diverse areas of Rome that a student, independently, may never visit. The students are to document their visits of the non-touristic areas through some sort of media channel (photography, interviews, videos, etc.) that is then presented at

a prestigious event sponsored by the city of Rome. Not only does the collaboration with Rome 3 University create a final project, but it also creates interaction between groups of students who have the same occupation but very different life styles. Gustolab Institute knows that a full immersion experience only begins when one starts to understand, interact with the culture in which they are temporarily living.

HWS focuses on different material from other academic programs, but Gustolab Institute is distinctive for this reason – it can tailor programs upon request, such as digital photography. The 2011 HWS program consists of digital photography students who explore Rome through a lens! Courses such as Italian Language, Inventing Rome, Layers of Rome, Digital Photography and Sketchbook in Rome give offer the HWS students the ability to document Rome in a liberal and artistic manner. The students take part in on-site projects with professional photographers who bring the students to noteworthy areas of Rome and demonstrate how to portray aspects of that specific quarter in a photograph. The students enhance their photography skills while discovering yet another Roman district, a gift that can be only received abroad. The final semester event is a photography exhibit in a public area which consists of the students’ photographs on display.

Gustolab Institute aims to let the students immerse themselves in a culture from an artistic point of view, while mastering technical photography skills.

Edgewood College studies the art of social practices and activities, and the role of an artist in society. Gustolab Institute has provided Edgewood with extra-curricular activities pertaining to their main field of study. For the students to truly understand the role of art in the Roman society, they are working on a project entitled “Cartoline” with Italian art students of Roma 3 University. The Italian students are young artists and therefore can give Edgewood students an insight into the role art plays in the Italian society, rather than simply focusing on their own society, something they are familiar with. Gustolab Institute also organizes events that Edgewood students take part in such as art exhibits, visits to artistic and non-tourist quarters of Rome as well as thorough excursions to the south of Italy.

Gustolab Institute had the remarkable opportunity to collaborate with Negocia – a Parisian international academic institution dedicated to marketing, sales, international trade and business negotiation. With a consistent focus on the Italian culture, the students had a full immersion program on Economics, Politics and Italian History. Working closely with the Programs Director, they developed 2 major theses and final presentations: Hospitality and Tourism in Rome, Sports and Soccer in Italian Economy. The students presented all materials in Italian.

5-week long summer program which focused on Italian Food & Culture, and included Italian classes, seminars with a Food and Culture professor and a project with the Gustolab Institute Programs Director which focused on different aspects studied throughout the program – Italian wine, Coffee, Importing/exporting of seafood, etc.

Gustolab Institute strives to take this full-immersion experience outside of the classroom and into a real, natural environment. A good portion of the Food & Culture syllabus included excursions, which were then related to in-class readings.

Each student was required to keep a digital blog to record observations, reflections, and ideas about Italian food culture both in terms of written texts and visual material (pictures, etc.).

The Chatham University female students had a concentrated experience on Italian Food & Culture. Daily lectures by a skilled professor gave the students an insight on Italian culture, traditions, customs and way of life. The lectures included street walks and city-site visits so as to give the students concrete examples of what they were focusing on in the syllabus.

The majority of the students studied arts and/or topics that had to do with agriculture; therefore the material studied abroad was parallel to that studied on the Chathamcampus.

Gustolab Institute strives to deliver what the students focus on in their home environment, but in a different culture and from diverse perspectives in order to provide distinctive lessons and activities that provide a learning experience that can be applied to lectures on their home campus.

The aim of the 5 months overseas program, wich focused on Italian Food and Culture, is to design a parallel semester with that on the actual UIUC campus. Students focus on 5 main courses: Food & Culture, Food & Media, Layers of Rome, Italian History & Society and Italian Language.

The Food and Culture, as well as Food and Media, course is lead by a professor who also has professional experience in the field of cousine, and food journalism, wich also gives students a realistic insight in this area. Such an instructor also has a significant amount of ties and therefore allowed students to connect, meet and speak with experts such as key chefs, journalists, dieticians, scientists, TV and media producers, etc.

The students closely studied and analyzed the Mediterranean diet – a reocurring theme in many of their in-class projects and discussions. Gustolab Institute organized a week end excursion to the south of Italy, in Cilento, home to the Mediterranean diet, where students where able to truly immerse themselves in the concept. Non-turistic tours and areas also allow for the students to see experience the culture from a non-tainted perspective.

To completely understand a culture, however, one must fully immerse himself into the traditions and customs; solely an external point of view is not sufficient. The Food & Media course was particularly exceptional and unique, as in the students met with a professional video maker to each create documentaries on distinct cultural aspects of Roman Cuisine. The documentaries, in addition to being a fundamental part of the course, are also then put on display by Gustolab Institute at various national and international events and conferences.

Whereas other programs had a focus on Food & Culture, Hobart and William Smith Colleges (HWS) students were architecture majors, and therefore Gustolab Institute designed co- and extra-curricular activities that pertained to their major. Activities included exclusive visits to architecture exhibits and museums, meeting with experts and professionals, meetings and discussions with young Italian artists and architects. These encounters allowed the students to have an insight into architecture in a foreign country, but above all, in a culture in which they were living for a semester. Gustolab Institute aims to take the environment students know so well, and shine a different light on it, to have a truly unique experience.

The students also took part in various thematic dinners and events; dinners with particular, yet original and unique topics such as a Futuristic Dinner; an Ancient Roman Dinner; Sicilian Dinner; Wine Tastings with a Sommelier; Design Workshops; Architecture and Food , as well as Cinema and Architecture, related events; Photography, Modern Art and Architecture exhibits followed by private meetings and discussion sessions with the actual artists; visits to famous temporary art exhibits in Rome; Italian film viewings related to the culture and Architecture; weekend excursions to Naples and Pompei: where the heart of architecture lies; day trips to famous sites and villas outside of Rome, in the Lazio region. Gustolab Institute had the remarkable opportunity to collaborate with Negocia – a Parisian international academic institution dedicated to marketing, sales, international trade and business negotiation. With a consistent focus on the Italian culture, the students analyzed the Italian society from a business perspective. Working closely with the Programs Director, they developed 3 major theses and final presentations: Tourism in Rome, Luxury products, and Italian Fashion. The students presented all material in Italian.

Gustolab Institute organized events for the students such as meeting a fashion designer; conferences about business in the country at Italian universities; visits to vineyards and cheese & bread making factories, but to better understand the economic aspect of the visits and how businesses, in general, function in a foreign environment.
