Being invited to be part of the Hampshire Food Festival has given me lots of pleasure. Twenty eight years ago I bought a weekend house in Froxfield which I used as a base at the weekends to discover this beautiful county. From the lanes covered in wild garlic and the surrounding woods full of wild mushrooms in season to the discovery of wild greens continued in the hedgerows and wonderful carpets of snowdrops, daffodils and bluebells.

This all satisfied my desire for wild food but it is the local produce of this blessed county that gives me a tantalising choice for my cooking.

The Hampshire Food Festival shows that zero mileage is possible when sourcing ingredients. All the farmers markets and pick–your–own farms show that you can prepare wonderful meals from an array of local fish, meat, vegetables and fruit. The educational touch is essential to encourage people to discover what is possible. The Hampshire Food Festival is a wonderful opportunity for parents to open their children’s eyes to food and farming and explain the mystery of growing and raising good and wholesome food.

Hampshire boasts numerous dedicated food and drink producers and retailers passionate about bringing the best quality ingredients to our tables.

Don’t miss this wonderful opportunity to get involved in a fantastic celebration of local food and produce. I look forward to meeting many of you, I will be at events including the opening of the new farm shop at the Leckford Estate (see page 51).

Hampshire Fare has been working with local farmers and producers across Hampshire for more than twenty years. Passionate about the benefits of buying locally we are committed to supporting and promoting the unique and talented local produce and craft community.

Our county boasts a thriving local food culture with award-winning cheeses, meat, vegetables, wine, beer and much more lovingly produced in our beautiful countryside. Top chefs are enticed to the area by the quality and abundance of local ingredients giving Hampshire some of the best pubs, restaurants and hotels in the country.

We want to help you to discover more about Hampshire’s exceptional food, drink and craft and encourage you to try some of the outstanding produce our county has to offer.

Meet the team

We are a small team with big ideas and lots of enthusiasm. We are proud and privileged to work with more than 230 of the best local producers, farmers, pubs, hotels, restaurants, shops and cookery schools.

We can picture the day when you will find tasty local produce in the cupboards of every household in the county. We see people travelling from other counties specifically to taste Hampshire produce. We envisage long queues at local farm shops and butchers as people eagerly stock up on quality local meat.

It is this vision and our belief that local is best which drives us to get people trying and buying local produce. Our achievements

We are proud to be one of the country’s longest running and most successful food groups and our recent achievements include:

Devising and running the ‘Preserving the Hampshire Hog’ project

It is becoming increasingly hard for pig farmers to make a profit. Determined to help our local pig farmers and preserve the symbol of Hampshire we set about coming up with a creative solution. Find out more about the project on page 53.

Great Hampshire Sausage & Pie Competition

This competition was first introduced in 2001 to give local butchers the opportunity to showcase their products in front of an independent panel of expert judges. It has become a key date in the local food calendar.

Awards

In 2012 Hampshire Fare won the Tourism Event of the Year at the Beautiful South Awards 2012-2013 for the Hampshire Food Festival 2012.

The Old Rectory Cookery Schoolhave two invaluable courses eitheras preparation for gap year work orpractical cookery skills forindependent living.

The Essential Course is for anyone whowants to gain the necessary skills to get ajob in their gap year, either cooking in a skichalet or working on a yacht.

This intensive two week course runs from10am-3.30pm each day and covers all thekey skills for competent cookery. Startingwith basic knife skills and essential kitchentechniques, students will quickly progressfrom simple dishes to a whole range ofmore complex recipes.

At the end of the course students will have a good range of culinary skills andconfidence to tackle any recipe.

The Student Survival Course is a reallyuseful and practical course for anyoneleaving home for the first time or going off to university.

This four day course runs from 10.30amuntil 3pm each day. Core recipes aretaught and with a little easy adaptation willprovide a range of different dishes.Students will be given tips on stocking thestore cupboard, prudent shopping tipstogether with kitchen hygiene. After fourdays they will be prepared for independentliving and able to eat well and stay healthy.

Our county is famous for the Hampshire Hog and yet the survival of pig farming is under threat from increasing costs and squeezed profits.

Determined to help our local pig farmers Hampshire Fare has been working with the support of the Prince’s Countryside Fund to deliver the ‘Preserving the Hampshire Hog’ project.

The project has given local farmers the opportunity to learn charcuterie skills from leading charcutier Marc-Frederic Berry. Now proficient in the production of salami, chorizo, pâté and more local pig farmers have the opportunity to develop and grow their businesses and bring tasty new products to our tables.
