Welcome to the last edition of the Handy Mag of 2011. It has been a very busy year here at the Handy Mag and I’m

looking forward to a rest at Christmas so that I can start 2012 feeling refreshed and ready for the first deadline of the year on 3rd January!

I’m determined this year to have a relaxing break over Christmas with plenty of time to see family and friends. Guests will have to take us as they find us though as I know I’m never going to be the perfect housewife with food prepared and the house tidy but I’ll do my best as always….last minute mince pies, bought Christmas cake iced at home (November passes by too quickly for making Christmas cake!) and lots help from our lovely local food outlets.

I would like to wish all readers and advertisers a very happy Christmas and best wishes for 2012. Thank you to everyone who supports the magazine – and uses it. A special thank you to all the postmen and women who deliver the Handy Mag to all letterboxes in the area. You do a fantastic job! And thank you all the people who work behind the scenes at the magazine, without whom I would lose my sanity completely!

This classic cake, named after the Sacher hotel in Vienna, has a wonderfully rich chocolate flavour and is delicious served with a spoonful of whipped cream or crème fraiche and a small cup of black coffee.

Sachertorte

Preheat the oven to 180C, 350F, Gas 4. Grease and base line a 23cm (9in) spring-form tin with greaseproof paper.

Place the butter, sugar and vanilla extract in a large bowl and beat together until pale and fluffy. Gradually beat in the egg yolks then stir in the melted chocolate. Fold in the ground almonds and plain flour.

Whisk the egg whites until stiff. Beat about one third of the whites into the chocolate mixture then gently fold in the rest with a metal spoon. Pour into the prepared tin. Bake for 40-45 minutes until firm to the touch. Cool for 10 minutes then turn the cake out onto a cooling rack and leave to cool completely.

To make the filling and icing, place the chocolate and coffee in a heatproof bowl set over a pan of simmering water and leave until melted. Stir until smooth then gradually beat in the icing sugar to make a smooth thick icing.

Halve the cake horizontally and sandwich back together with some of the apricot jam. Spread the rest of the jam over the top and side of the cake. Spread the icing all over the cake, smoothing it gently down the sides with a palette knife. Leave in a cool place for 2 hrs. Spoon the milk chocolate into a small paper piping bag and pipe ‘Sacher’ on top of the cake. Leave until set.

If you’re worried that real trees are not good for the planet, don’t forget that

a British grown tree is most definitely not an ecological disaster zone – if you think about it, they’re a crop plant rather like a field of wheat except that they are generally given less fertiliser and fewer chemicals than many more run of the mill crop plants. So go on, make sure you buy one this Christmas!

There are a few things you ought to think about before you buy your tree, faced

with rows of different types at often very varying prices. It can be really daunting, so have a read of my guide to real Christmas trees:

The Norway spruce(Picea abies) is the traditional tree, my favourite but perhaps not a favourite if you are more house proud. It has gorgeous dark green pointed needles and that unmistakable aroma but sadly it is the most likely to drop its needles. Having said that, if you treat it well, it

won’t perform that badly and you can enjoy the lowest cost of the real trees.

The Scots pine is now a regular option as a Christmas tree, with its long paired blue-green needles it’s quite distinctive. The needles are fairly densely packed on the branches and they also hold quite well.

The Serbian Spruce (Picea omorica)has long been the favourite festive tree in central Europe, as it’s good looking and has good needle holding… but of course no Christmas-tree smell!

The Nordman fir (Abies nordmanniana)has become increasingly popular in recent years, with its shiny green needles being almost impossible to shift, so certainly a good choice for those who hate any mess.

The Fraser fir (Abies fraseri) is less regularly available, but the combination of its good looks and needle holding capacity make it well worth considering.

So, you’ve been persuaded to take the plunge, I hope? But how do you make sure you buy the best tree of the type you’ve decided on? And how do you help it keep its needles and its gorgeous appearance for as long as possible? It’s important not to buy a real tree too early as the longer they hang around after they’ve been cut, the more likely they are to go downhill. I always try to buy a tree produced by a member of the British Christmas Tree Growers Association – the BCTGA logo should be on the tree or clearly displayed nearby. Take a bit of time to choose the tree – check that it has a good, full shape and that its not too gappy or lop-sided (or if it has the leans make sure that this will be hidden when the tree is in

your house). Check the needles - they need to be glossy (for those varieties where this is a characteristic) and the correct colour for the type of tree you’ve chosen. They also need to be free from pests and diseases - basically anything yellowed or inclined to shed, or with white fluffy bits should be avoided at all costs. Never buy a tree that has already been netted as this makes it a real lucky dip situation.

If you do buy one quite early then the most important thing is to keep it outside - just re-cut the end of the trunk (yes, its time to dig out your DIY saw) and put the tree in a bucket of water in a sheltered spot outside. If it was in a net when you bought it, remove this as it’s important to have air circulating around the needles.

When you bring the tree inside, try to avoid putting it anywhere too warm or close to a heat source and make sure that you use a stand with a water reservoir with water levels really well topped up – if kept well supplied with water then even the notorious (but lovely) Norway spruce Christmas tree should hold its needles well.

When Christmas is over and it’s time for the tree to come down, complete the green-loop and make sure you recycle it – they’re not the easiest thing to recycle or compost at home, but many councils and garden centres now offer a recycling and Christmas tree chipping service.

Congratulations to Jonathan Cousins for winning the York Guitar Weekend 2011 Charity Guitar Treasure Hunt! He was presented with his Tanglewood Roadster guitar at MOR Music last month.

Plans are underway for York Guitar Weekend 2012 where there will have more guitars, more live music and more events to draw people into York to join in with the festivities, and raise more money for local charity. This year we raised over £700 for the seven charities - The William Rhodes Appeal, Snappy, St Leonards Hospice, British Heart Foundation, York Against Cancer, The Blue Cross in Thirsk and Yorkshire Air Ambulance. It’s nearly Christmas again, Mum’s dashing

about the house, polishing and hoovering as she goes, and Dad has ‘All I Want For Christmas Is You’ blasting through the house every waking hour! What to make of Christmas!

Every year, I try to find small, yet expensive-looking presents for each of my friends at school. I tend to go for the ‘stocking fillers’ or new-look piggy banks and socks (which are often in the half price sale!), but by the time I have spent £5 - £10 on every friend, it ends up costing me an arm and a leg! This year we decided enough was enough and have all decided to do a ‘Secret Santa’. We each pick a friends’ name out of a hat and only buy that person a present – you can’t tell them that you picked their name, that’s the secret! This way, we can spend a bit more on a single present and nobody is left with junk that they’ll never use, and we all save money! A Secret Santa is a great thing to do whether with school friends or work colleagues so give it a go; but keep the secret or Father Christmas won’t come!

For my family, a highlight of the winter is sledging and bumping down our local fields; and the last few winters have been bumper years for snow and bruises! Is it really worth it, trudging all the way up the hill for 20 seconds of thrill, followed by a face-plant in a snow drift? Here’s a tip for keeping sledging fresh - Simply get hold of a tractor tyre inner tube! Sledging on one of these is a whole new experience!! It’s faster, it doesn’t hurt your bum over the bumps so much and you can fit everybody on at once! When the whole family piles on and hurtles down the slope you can guarantee to be laughing as much as you are hurting!

Carrying extra weight can lead to medical problems and a reduced quality of life.

There are various ways we can help our pets lose a few pounds by looking at the diet and exer-cise they receive.

It is important that animals are fed food specifi-cally made for their species and not human food as not only is our food high in calories, but it is also easy to miss out the essential nutrients in the correct quantities pets need to thrive.

Some human food, such as chocolate, can also be poisonous to pets.

General problems an overweight animal can suffer from include diabetes and heart problems, difficulty grooming and cleaning themselves which can mean they get soiled when toileting leading to sores and they may be unable to exercise much without becoming tired and breathless. Being over-weight also puts extra pressure on their joints causing pain and difficulty walking, this can affect their ability to go about their day to day activities as normal and cause them to be painful and in turn miserable. An overweight animal with arthritis can be helped dramatically by losing weight as it lessens the pressure on the joints and also allows for more activity as the animal gets lighter giving a greater range of movement. This can reduce the amount of pain relief they need which is better for the clients pocket and the animal’s health long term.

Cutting back on treats can help as can feeding a lower calorie diet such as a ‘light’ diet.

After neutering it is advisable to feed a lighter diet as animals become more prone to laying down fat stores, it is recommended their calorie intake should be reduced by 10%. It is also important to ensure you are feeding the correct amount for your animals ideal weight not the weight that they currently are. There will usually be a guide on the packaging as to how much to feed your pet. This amount then needs to be broken down into however many meals you feed your pet daily. For example a dog that is fed twice a day with a daily requirement of 300g will require two meals of 150g each.

Alternatively you can visit your vets for a free weight clinic and the nurse can work out what you should be feeding based on your pet’s ideal weight. Your vet nurse will ask a few questions to ascertain your pet’s current lifestyle so they can recommend diet tips that will suit your pet

whilst bringing about results. For example, treats can be swapped for chopped up bits of carrot so pets still feel like they are getting treats whilst you are saving their calorie intake. The important thing is to keep the metabolism moving and not allowing it to become sluggish as this will cause weight gain, a way to do this is to feed and exercise your pet both in the morning and in the evening.

First time visitors to this tiny Himalayan kingdom may be surprised to

find mobile phones, internet and satellite TV but although Bhutan welcomes progress and technology, it is never at the expense of its traditional values. Everyone agrees that these are essential to the country’s happiness and indeed survival. Respect is still the cornerstone of Bhutanese culture, offered not only to king and monks but to all human beings, animals and plants. Children may cover their mouth as they speak to avoid polluting the air you breathe and people bow at the roadside if a dignitary goes past - no compulsion, just tradition. Bhutan was given democracy as a parting gift by the retiring king, but the royal family remains as close as ever to the people’s heart. Where else would a king walk across the fields to chat to farmers, join in an archery contest or dance with his people at festival time?

Bhutanese festivals are joyful religious events, a chance to meet family and friends from distant villages, have fun and earn merits for the next life according to tradition. There are dancing monks and jesters, offerings, blessings, Buddhist teachings, and reminders about safe sex and the importance of work, valued as an act of worship. Should a new shrine be needed or a temple statue, there’s no shortage of free labour and from a young age, children are taught house chores and farm work and expected to clean their classrooms to prepare them for adult life.

Here there are no beggars or homeless in the streets, nearly every farmer owns his plot of land and men and women have equal status. Healthcare and education are free and a total smoking ban was introduced to protect the children’s health. It may seem harsh to outsiders but it made sense to the people.

Most Bhutanese claim unreservedly to be happy, have no wish to live anywhere else and those who study abroad are keen to return. Travelling through the kingdom’s virgin mountains and valleys, it’s easy to understand. Buddhism teaches respect for nature and all living things and in matters of conservation, Bhutan is well ahead of many ‘developed’ nations. Some 60% of the land is protected forest, solar power and hydro-electricity are favoured for minimum impact, hunting and fishing are almost non-existent and there

are no plastic bags. Small farmers and herders respect the environment and national parks and reserves stretch from tropical lowlands in the south to snowy peaks and glaciers in the north.

It’s no wonder this small kingdom should claim over 5000 species of plants, including blue poppies, rare orchids and a wealth of medicinal herbs. Black bears, snow leopards and tigers live undisturbed and there are over 675 species of birds, from hornbills to endangered black-necked cranes whose return to wintering grounds is celebrated with great joy. In the quest for Gross National Happiness, this pristine natural world is sure to play a major role, alongside sustainable development and unshakable traditional values.

The Make a Stand for Thomas campaign is working to raise funds

for an operation that will allow 14-year-old Thomas Arnett to take his first steps alone. He has cerebral palsy, which has caused nerve damage leaving him without the control over his legs needed to walk. He currently gets around using a wheeled walking frame or a wheelchair, and until recently it was not expected that he would ever be able to walk independently.

However, the new opera-tion, called a selective dorsal rhizotomy, would give Thomas a chance of being able to walk on his own with sticks.

It is a pioneering proce-dure in which the problem nerves are cut, preventing the messages going to the brain

which lead to the legs tightening up. Thomas will travel to Bristol for the proce-dure, which will be followed by intensive physi-otherapy.

When the local PCT said they could not fund the £25,000 operation, fam-ily, friends and the Strensall community took matters into their own hands, launching a massive fundraising campaign to pay for it.

Close family friend Clare Inkster, who is leading the fundraising campaign, said: “Because of Thomas’ condi-tion, he is unable to walk and uses a wheelchair. I am yet to hear him moan about this.

“Thomas has a nice life, goes to school and has a love-ly family and friends. He has never been able to walk and it was never thought it would be possible. However, changes in medical procedures are massive and now Thomas has a chance to be able to walk independently.”

So far local people have organised a post-Christmas disco, a midnight walk and a fundraising day at Aviva York. Plans are also being consid-ered by Escape Hair Salon to run a fundraising day, the

Army were planning a charity event, and they were in talks with a marathon-runner. They have raised more than £3,000 so far.

The committee of the Make a Stand for Thomas Campaign would love to hear of any more ideas for fundraising, offers to run or host events, or receive any other support of any kind. Thomas lives in Strensall with his mum, Adele, his brother Jack and sister Lauren. His stepfather Andrew is currently serving in Afghanistan. His story has already featured in the York Evening Press and on Look North.

Clare added: “This opera-tion would change his life – he is a big personality, but we want him to stand tall.”

When I was little my grandparents always had a fake Christmas tree that groaned with the weight

of about a thousand sputnik-shaped fairy lights. Candy-coloured and frosted with artificial ice, they flashed on and off in a way that, to a five-year-old, was nothing if not glorious. Yup, my grandparents really went for it – and if that’s your style, I’m not going to knock it.

There is another Christmas-decorating school of thought, however. One that allows you to celebrate without going over the top. Here are five guidelines to help you create a stylish seasonal look for your home:

1. The wreathYour front door is the handshake to your house, and a pretty Christmas wreath is a welcoming addition. Buy or make one that suits the size and colour of your door. Natural materials such as holly, ivy, bay and twisted willow are lovely, and you can finish it off with berries and ribbon for a traditional effect; alternatively, wire and pale-coloured beads are subtle and sophisticated. Just avoid the pine-cone-sprayed-with-gold-paint-look.

2. The treeNo Christmas is complete without a tree, and this is where ideas of pared-back décor tend to go astray amid a chaotic surge of baubles and assorted hanging things that you’ve accumulated over the years. Less is more, so stick to a colour theme: you could use plain silver balls with white or coloured lights, for example. Or go for a natural look, perhaps using ribbons, green twine and cinnamon sticks. For those leftover decorations that you’re desperate to display, why not pile them onto a small tree in a pot, or create a separate mantelpiece or fireplace arrangement?

3. The cardsEven with the rise of e-greetings, the demise of the traditional Christmas card seems far away. But what to do with them all? Organise them, is the answer. Propping them up randomly around the house might make for a jolly, ad hoc look, but if you arrange them en masse it’s far more effective. if you’re short of time, the

And last but by no means least, involve the children in making paper chains, bunting or felt cut-outs for that charmingly wonky, home-made look.

Gather together an eclectic mix of lovely items and festoon your mantelpiece or windowsill

with festive goodies.

STRENSALL LAWN BOWLING CLUBLawn Bowls - A sport for all ages. Strensall Bowling Club has been in existence for a long time yet seems to be little known. We are a small and friendly club and always happy to welcome new members of any age; under 18s bowl free! Adults pay only £30 for the season, which runs from April through to September.
