Hash Brown Skillet
(in the Slow Cooker)
1 pound ground turkey sausage, uncooked 1 medium onion, chopped 6 cups frozen diced has brown potatoes (do not thaw) 1 ¾ cups shredded cheddar cheese 1 medium red bell pepper, seeded and chopped 12 eggs 12oz can of evaporated low-fat milk ½ teaspoon ground black pepper ¼ teaspoon salt In a large skillet cook sausage and onion until sausage is browned; drain off the fat.
Coat the inside of the slow cooker with cooking spray. In the cooker combine the sausage mixture, frozen potatoes, cheese and sweet pepper. In a medium bowl whisk together eggs, evaporated milk, salt and pepper. Add to sausage mixture and stir gently to combine.
Cover and cook on low-heat for 6-8 hours. Remove cover and let stand for 15 minutes before serving (any watering out that is present will disappear during standing time). If desired, top with salsa to serve.
Start your day with a Lassi
(a South Indian yoghurt-based drink)
2 cups vanilla low-fat yoghurt
1 cup canned, crushed pineapple in juice, undrained
¼ cup light coconut milk
1/8 to ¼ teaspoon bottled ground fresh ginger
6 ice cubes
Combine all ingredients in a blender; process until well blended. Serves 3.
Sweet Fact!
Candy corn has
been around for more than 100 years. George Renninger, an employee of the Wunderlee Candy Company, invented the popular confection in the 1880’s and Wunderlee became the first company to produce the candy. When the candy corn first appeared, it was popular among farmers because of its agrarian look. The tri-color design was considered revolutionary and the public went crazy for it. Lack of machinery meant that the candy corn was only made seasonally from March to November.
