overforFredHellekesin2012afterservingashisChambellanProvincial.Therewillbeelectionsatthebeginningoftheyearfor,notonlythisposition,butforallcurrently-servingBaillisandmanyNationalof-icers.ChaînemembershipintheUnitedStateshasincreasedoverlastyearandourregionwasnoexceptionthankstothehardworkofourBaillis,whoorganizedspectacularevents.
Beyondlocalevents,ourregionisactivelyinvolvedatthenationallevel.TheNationalYoungSommeliersCompetitionreturnedtoSantaRosawherewewerejoinedbymanymembersacrosstheUS.OurRegionorganizedapre-MondialedinneratJohnAshrestaurantinSantaRosa,bringingtogether30membersfromHawaiiwiththosefromtheAspenBailliage.JordanPainter,fromKauai,wonourYoungSommeliercompetitionandrepresentedourregionwell,butthecompetitionwasoutstanding.Sooutstanding,thattheNationalwinner,MartinSheehan-StrossoftheSanFranciscoBailliageandMichaelMinaRestaurant,wasnamedthebestYoungSommelierintheWorldattheInternationalCompetitioninVaduz,Lichenstein.
Wearealsoproudoflastyear’scompetitor,ProfessionelduVinChrisRamelb,whocouldnotcompetethisyearsincethereisatwo-yeartermlimit.However,heshowedhisprowessandpotentialbyplacing-irstattheAdvancedSommelierexaminDallas.Asthehighestscoringcandidate,ChrisreceivedtheprestigiousRuddScholarship.Hedemonstratedmasteryineachoftheexam’sthreeevaluationareas,earninghima$5,000scholarshiptowardhisMaster’scourseworkandaninvitationtoattendtheRuddMaster’sRoundTableinNapaValley,atwo-dayintensivetutorialaboutwinetheory,tastingandservice.WeexpecthemaywellbeHawaii’sfourthMasterSommeliersoon,thankstohis
talentandmentoringbyEchansonProvincialPatrickOkubo,M.S.andChuckFuruya,M.S.
Thisyear’sYoungChefcompetitionandawardsdinnerwasorganizedbyCulinaireProvincialGrantSatoandKauai/OahuBailliKathrynNicholson.FivecompetitorsfromOahuandMauidisplayedtheirtalentsattheCulinaryInstituteofthePaci-ic,withIanSagayagavictorious.Hewentontodistinguishhimselfwithabronzemedalatthenationalcompetition,indicatingthathehasabrightfutureintheculinaryindustry.
OneofthegreatpleasuresoftheChaîneissupportingtheseyoungchefsandsommeliers.ThehostoftheYoungChef’scompetitionisawardeda$5,000
scholarshipfromtheChaîneFoundation.Thisyear,KCCselectedKatieJiwonLee,whothankedtheChaîneforheraward:
“IwasveryhappytolearnthatI
wasarecipientoftheChaînedesRôtisseursScholarshipFund.Iamwritingtoexpressmysinceregratitudeforyourgenerous-inancialsupporttowardsmyeducation.
IamcurrentlyastudentintheCulinaryArtsProgramatKapiolaniCommunityCollege.InKorea,IearnedadegreeinArtanddecidedtoapplymyartistictalentintheculinaryarts.WhenIgraduatefromKCC,myfutureplanistoownabakery/pastrystore.Inthemeantime,IwilllearnallthatIcaninmyculinaryclassesandtheculinaryeventsIparticipatein.

Anditisnotjusttheyounggenerationthatismakingusproudinthecompetitiveworld!Inadditiontobeingafull-timeinstructorattheKCCCulinaryInstituteofthePaci-icandorganizingtheYoungChef’scompetition,CulinaireProvincialGrantSatowontheGlobalTasteofKoreaHawaiiRegionalContestinJulyandwentontorepresentHawaiiattheinternationalcompetitionheldinKoreainAugust.ChefSato’shardworkandpassionforcookingshonethroughatthe-inalcompetition,wherehewasnamedchampionforhiseight-coursemenu.
OtherChaîneprofessionalsreceivedprestigioushonors.ConseillerCulinaireProvincialeHonoraireKusumaCooraywontheExcellenceinCookbooksawardforherOceantoPlate:CookingFishwithHawai’i’sKusmaCooray,atthe2015KaPalapalaPo’okelaAwardsCelebrationoftheHawai’iBookPublishersAssociation.Also,Kauai/OahuViceConseillerCulinaireEricLeterchasbeeninvitedtoshowcasehisexpertiseasguestchefonCrystalCruise’sship,TheSymphony,fortheir“FarEastOverture”cruisenextyear.
Asforexcitingupcomingevents,theGrandChapîtrewillbeheldinLasVegasnextmonth,sothatreportwillbeincludedinnextyear’sNewsletter.
ThenextNationalMondialemeetingwillbeatTheNineshotelinPortland,ORfromMay17–21,2017.ExcursionstonearbyWillametteValleyandon-sitetastingswillbeprovided.WeexpectgoodrepresentationfromtheHawaii/Paci-icregion,asusual.IamveryhappytoreportthatthepercentageofMondialemembersintheHawaii/Paci-icIslandsregionisthehighestofallregions,at56%,comparedto41%nationally,thankstotheeffortsofourBaillisencouragingmemberstoalsojoinMondialewhentheyapplyforChaînemembership.Aspecialshout-outtoBailliKathrynNicholsonwith100%participation.
Alsoofinterestonthenationalfront,atwo-dayBoardofDirectorsmeetingwasheldinLosAngelesinJanuary.Themostimportanttopicwastheproposedbylawamendments.ThesewerediscussedinLosAngelesandfollowupphonemeetingsoftheBoardofDirectors.IampleasedtosaythattheBoardoverwhelminglyrecommendedapprovaloftheserevisedamendmentstothemembersoftheNationalCouncil(Baillisandabove).
ChaînerelatedSummerExcursionsAftertheYoungSommeliersCompetition,JudithandIheadedtoColoradotocontinueourusualsummerwithfriends,family,andincreasingnumbersofChaînemembers.Sadly,thiswasthe-irstsummerwithoutChargéedePresseProvincialeHonoraireJulieHonda.WehopeBailliProvincialHonoraireFredHondawillreturntoHonoluluinthenearfuture.
OureffortstorevivetheDenverBailliagepaidoff!AllisonAhrenswasinductedintotheChaîneandelevatedtoBailliintheDenverMileHighchapter.ShehashadnumerousverysuccessfuleventsandherBailliagehasavibrantmembershipof38,anincreaseofmorethan400%inlessthanayear!
Weattendedthekick-offdinnertotheAspenFoodandWineFestivalwithChaînemembersMikeandAidaPaulin,AlanCasupangandLisaGrininger.AfterabriefreturntoBoulder,wewerebackinAspenforBailliBarbiBenton’sannualChaînedinnerattheCaribouClub,whichwascertainlyoneofthebestever,undoubtablycontributingtoitsgrowthto52members,nowwithawaitlist.
Ofcourse,wehopetoseemanyofyouattheGrandChapîtreinLasVegasinOctober.
Andwhataboutnextyear’sGrandChapître?TheBoardhasapprovedreturningtoFrankSinatra’sfavoritetownsometimebetweentheendofSeptemberandthe
beginningofNovember,2017.It’shardtobelieveitwillhavebeentenyearssincethelastGrandChapîtreinChicago,andforthoseofyouwhowerethere,yourememberwhatagreattimewehad.Thisisacertainsell-out,sosendinyourregistrationassoonasyoureceiveitnextsummer.

fromthetheoryexaminthepreviousroundweighedintowardthecumulativescore.Eachcompetitorshinedin
differentareasbutitwasJordanPainterwhocameoutwiththehighestscoreearninghimaspotinhis-irstNationalcompetitioninSantaRosa.
Afterthecompetition,anawardsdinnerwasheldat53bytheSeatocelebratethecompetitors.

(Excerpted from Gastronome article by Judith Kellogg)The Young Chefs competition is always such a celebration of youthful culinary passion and energy. It reminds us that even the world’s best chefs began their culinary journeys fresh and hopeful, with unique stories to tell about what led them down the culinary path. The five competitors who vied for Hawaii/Pacific regional
title on April 16 at The Culinary Institute of the Pacific at Kapiolani Community College each discovered the kitchen calling to them in unique ways.
For the competitors, the long day started at 6:00 a.m. when the group assembled, getting their marching orders from the competition organizer, Culinaire Provincial Grant Sato. The morning’s creations were assessed by an all-star group of judges: Keoni Chang, Corporate Chef for Sullivan Family of Companies; Justin Inagaki, Executive Chef of Hy’s Waikiki; and Jeremy Shigekane, Banquet Chef at the Royal Hawaiian Hotel. Chef David Marcelli served as kitchen judge.
The long day ended with what might be described as a joyous and delicious “chef fest,” coordinated for Chaîne members by Kauai/Oahu Bailli Kathryn Nicholson. So
many chefs at all levels were involved! Each course of the beautiful dinner was designed by a different Culinary Institute of the Pacific instructor, with student chefs busy in the kitchen cooking for one of their own, many no doubt with aspirations to one day compete in this prestigious competition. Last year’s winner, Melanie Tancino came to
cheer on her young colleagues, and Chaîne members were privileged to enjoy the fruits of all this creative culinary energy and to celebrate and honor the up and coming generation.
Ian Sagayaga handily won the competition. He knew he was destined for a culinary career even as a teenager on Maui. His talent was recognized in high school, where he was recruited by a culinary team that won a regional competition and then went on to compete nationally in
Tennessee.
Ian represented our region well, winning the Bronze medal at the National Young Chefs competition in Sarasota. Well done, Ian!

OurholidaydinnerhasbeenscheduledforSaturday,December10,2016atRuth’sChrisSteakHouseintheShopsofWailea.
ItisanhonorandpleasuretoserveastheBaillioftheMauiBailliage.Mauicontinuestobethe‘bestislandintheworldtovisit’forovertwentyyearsinarowandwecontinuetohavesomeofthebestrestaurantsintheUSA,asratedby“OpenTable”.

EachyeartheYoungChefscompetitionbringstogethersomeofthebestyouthfulculinarytalentontheislands.ThewinnercompetesinthenationalChaînecompetition,andthisyearthathonorwenttoIanSakayaga,whothenwentontodistinguishhimselfbywinningthebronzemedalinthenationalcompetition.Howevereachcompetitordeservesrecognitionforajobwelldoneandabrightfuture.Itisaprivilegeforustolearnalittlemoreaboutthemandthepathsthatbroughtthemtotheirpassioninthekitchen.
BrysonSebastian,astudentatLCC,worksatRoy’sinKo’olina.Hisstudypathtookaninterestingdetourfromautomotivetoculinary,bothbeinghandsonendeavors..Intheshortterm,hehopesthathistrainingwillallowhimtravelandhavevariedculinaryexperiences.Buthislong-termplanistohavearestaurantthatfeaturesAsianfusion,andincorporatessomeofhismom’sFilipinorecipes.Thisishis-irstcompetition.
JohnBalais,astudentatLCC,worksatRoy’sinWaikiki.HehadoriginallyplannedtostudyengineeringwhenacousingothimajobatanAlaMoanarestaurant.Oneofhiscousin’swishes,beforehisuntimelydeath,wasthatJohnworktosucceedintheculinary-ield,whichtransformedJohn’sinterestfrompursuingengineeringtoacareerwhere,insteadofworkingwithphysicalstructures,hecouldconstructcreativelyinthekitchen.Hewouldliketotraveltodifferentcountriestolearn,his-irstchoicebeingFrance.Eventually,hewouldliketousehisexperiencetofuseAsianwithothercuisines.
StevieRayWalker,wasastudentintheMauiculinaryprogram,graduatinginMay.ComingtoMauibywayofSeattle,andworkingattheFour
Seasons’Spago,Steviedreamsbig.Hewantstobeacelebritychef.HisoriginalcareergoalwastogetadegreeinaccountingandbecomeaCPA,andhisexactingsidetransferswelltohiscarefulstrategicplanning.HeplanstostudyinEurope,getajobthereorintheU.S.inaMichelinstarredrestaurant,andcontinuetocompeteinculinarycompetitions.Heespeciallylikesdoingpastry,sinceitprovidessolidstructure,butisintriguedbythemore-luidsidesoftheprofession,suchasexploringcreativeplating.
KhanhDang,aKCCgraduate,worksatChefMavro’s-ivediamondrestaurant,soheknowswhatahighbarlookslike.Khanhaspirestoreachthatbarbybecomingoneoftheworld’stop
50chefs.Heseesthepathtothatgoalbeingaspecialtyincontinental,particularlyFrench,-inedining.HehopestohonehisexpertisewithstagesatMichelin-starredrestaurantsbeforetaking
-ineFrenchdiningbacktohisnativeVietnam.Withabackgroundinartandinteriordesign,hecreationsshouldalsolookgood.
IanSagayaga,aKCCgraduate,nowworkingattheSheraton,knewhewantedaculinarycareerevenasateenageronMaui.Histalentwasrecognizedinhighschool,wherehewasrecruitedbyaculinaryteamthatwonaregionalcompetitionandthenwentontocompetenationallyinTennessee.Alwaysahardworkerseekingtolearnmore,hewouldgoovertotheMauiCulinaryAcademyonhisowntolearnasmuchashecould.HewasalsoonKCC’sTeamHawaii.Hetalkswithpassionaboutthedifferencesinteamvsindividualcompetition,wherethereismorepersonalpressuretomakeamenuwithbalanced-lavors.
