Beau Monde Seasoning Blend Makes 1/3 cup

Beau Monde, a famous blend from Spice Islands® Company, has been around for years and is an excellent all-purpose seasoning. The name is French for “Beautiful World”. My blend adds mushroom powder for a subtle umami taste. A balance of celery, onion and salt with a touch of sweetness, Beau Monde seasoning enhances the flavor of almost any savory dish and is great as a rub for roasted meats. Use to perk up the flavor of beef, pork, poultry, seafood, vegetables, soups and salads. Beau monde is often used with homemade dips, salad dressings and sauces and is the perfect accompaniment to frittatas and deviled eggs.

Ingredients 2 tablespoons onion powder 1 tablespoon confectioners’ sugar 4-1/2 teaspoons salt 2 teaspoons mushroom powder 1-1/2 teaspoons celery powder

Directions 1. In a bowl, add all ingredients and mix until

thoroughly combined. 2. Store in an airtight container in a cool, dark

place (away from heat, light, AND humidity) for up to 6 months.

Cocoa-Coffee Salt Makes 1/3 cup

Rub this salt on your favorite cut of pork, like tenderloin or chops, before grilling or roasting for a dry marinade that enhances the natural sweetness of the meat. It’s also fantastic when added to the braising sauce for short ribs or other slow-cooked beef. Delicious on salt caramel sauce and in cocoa. Create a mole-like flavor on chicken or pork with this salt blend by adding 1/2 tablespoon ancho chili powder, and 1 tablespoon smoked paprika to this blend.

Ingredients 1/4 cup fine salt 1/2 tablespoon unsweetened cocoa powder 2 teaspoons finely ground espresso

Directions 1. Make sure your coffee is ground to a fine

powder with a coffee grinder or high-powdered blender. If you do not have a fine salt, grind that with your appliance as well.

2. Mix all ingredients together. 3. Store in an airtight container in a cool, dark

place (away from heat, light, AND humidity) for up to 6 months.

Holy Trinity Powder Makes approximately 1/4 cup (enough to fill a standard spice shaker)

While this blend is simple, it packs a lot of flavor into your cooking and contains the basics of Cajun cooking. This powder is a delicious base for herb/spice blends, meat rubs, flavored salts, or low-salt blends. It will add depth and richness to any seasoning or dish you choose, especially your sauces.

Ingredients 1/2 cup dried onions, chopped 1/4 cup dried celery, chopped 2 tablespoons dried green bell pepper, chopped

Directions 1. Add ingredients to a mortar and pestle bowl,

high powdered blender, or coffee grinder and grind to a fine powder.

2. Add to a 4-ounce container or spice shaker. Store in a cool, dry place for up to 6 months.

Magic Mushroom Seasoning Blend Makes about 1-1/4 cups

Sprinkle some of this flavorful dust on anything you cook, adding an earthy taste and aroma to your dishes. I especially love this on omelets, steak, and in cream sauces. For dishes that are long-cooking, add this towards the end of the cooking (about 10 minutes before serving) so as not to mute the flavors of your blend.

Magic Mushroom Blend Encrusted Steak

Ingredients 2/3 cup kosher or sea salt 1 tablespoon red pepper flakes 2 teaspoons mushroom powder (made from dried mushroom, your choice) 2 teaspoons dried thyme 1 teaspoon freshly ground black pepper 1/2 teaspoon lemon powder (made from dried, grated lemon peels) Directions 1. If using dried mushrooms measure out

approximately 3 tablespoons into a clean spice grinder. Pulse the dried mushrooms until they are finely ground.

2. Transfer the mushroom powder to a bowl and add the salt, red pepper flakes, thyme, pepper, and lemon powder. Mix thoroughly to incorporate.

3. Store the powder in an airtight container. If stored properly, this will keep for up to 6 months.

“Old Bay” Style Seafood Seasoning Makes 3/4-1 cup

First created in my home state of Maryland, this spicy seasoning is commonly used in the South with seafood dishes and crab/crawfish boils, but it’s great on many of the same dishes you might use Cajun Seasoning in. Try it in seitan and tofu dishes. I oven-bake or dehydrate potato slices with this blend on them to make “Maryland Crab Chips”. There are never any leftovers!

Ingredients 3 tablespoons ground bay leaves OR 4 tablespoon broken bay leaves with center ribs removed 2 tablespoons celery seed 2 tablespoons sea salt 1-1/2 tablespoons mustard powder 1-1/2 tablespoons freshly-ground black pepper 1 tablespoon paprika 1/2 tablespoon ground allspice or cloves 1/2 tablespoon ground ginger 1/2 tablespoon cayenne pepper 2-1/4 teaspoons ground nutmeg 3/4 teaspoon ground mace (optional) 3/4 teaspoon ground cardamom (optional)

Directions 1. Pulverize first THREE ingredients in a blender

or coffee/spice grinder. 2. Add the remaining ingredients and blend

again. 3. For maximum flavor, store away from heat and

light for up to 6 months.

Spicy Bacon, Mushroom, & Cheese Seasoning Blend

Makes 2/3 cup

I created this a few months back because I found my taste buds seemed to need a boost in flavors (I was also on a bacon kick…). This is a MAJOR boost in flavor without adding a lot of extra sodium to one’s diet. The blend of the bacon and cheese does have the salt component thought, so this is not like Mrs. Dash. On a scale of 1 to 10, this rates a “5” in spiciness, medium, but intense flavor! You most certainly are free to add more heat with a red chili powder to taste. Use in recipes in place of the called-for salt—or as a finishing “salt”—on eggs or potatoes, add a pinch to pancake or biscuit batter, season your chicken, pork, or veggies with this smoky umami flavor. Roasted chicken or creamy pasta receive a flavor enhancement, pumping up those dishes with savory, umami taste.

Ingredients 1/4 cup finely grated Parmesan cheese 1/4 cup well-cooked and drained bacon , crumbled or bacon bits 3 tablespoons dried mushroom, pieces 1/2 dried ancho chile or 1/2 heaping tablespoon ancho powder 1-1/2 tablespoons smoked paprika

Use in any savory dish where you want to a bit of Emeril’s “bam!” This is especially good on potato chips or other vegetable chips, to make a dip or to flavor chick pea snacks and popcorn!

Directions 1. If using whole ancho chile, remove stems and

seeds of dried ancho chile before processing. Grind to a powder with a coffee/spice grinder or high-powered blender.

2. Add dried mushrooms and Parmesan cheese to the bowl and grind to a fine powder. Empty into a separate small bowl and set aside.

3. Tear the bacon into pieces and put into grinding bowl; process until you have very small crumbs. Add chile/mushroom/cheese mixture back into grinding bowl.

4. Add the paprika, pulsing a few times until ingredients are combined.

5. Store in an airtight container in the refrigerator for up to 1 month.
