BREAKFAST BAKE Makes 6 servings

Ingredients 1/2 teaspoon olive oil 1/2 lb. (8 oz.) uncooked breakfast sausage 3 English muffins, cut into one-inch cubes 2 tablespoons butter, melted 1/2 medium onion, chopped 1/2 bell pepper, chopped 6 large eggs 1 cup milk 1/4 teaspoon salt 1/4 teaspoon pepper 1 cup shredded cheddar cheese

Directions Preheat oven to 350° F. In a medium skillet, heat olive oil on medium-high heat. Once hot, add sausage, crumbling with a wooden spoon as it cooks. Cook until golden brown, about five minutes. Drain on paper towel. Place English muffin cubes in the bottom of a greased 8” x 8” baking dish. Drizzle with melted butter, then top with cooked sausage, onion, and bell pepper. In a large bowl, whisk eggs, milk, salt, and pepper. Pour over the top of the casserole. Top with shredded cheese. Bake uncovered for 45 to 50 minutes, or until a knife inserted in the center comes out clean. Let stand for ten minutes before serving.

Directions: Preheat oven to 400 degrees F. Stir together crushed pretzels, melted butter, and 3 tablespoons sugar; mix well and press mixture into the bottom of a 9x13-inch baking dish. Bake 8 to 10 minutes, until set. Set aside to cool.In a large mixing bowl, cream together cream cheese and 1 cup sugar. Fold in whipped topping. Spread mixture onto cooled crust, making sure to cover the edges of the crust. Dissolve gelatin in boiling water. Stir in frozen strawberries and allow to set briefly. When mixture is about the consistency of egg whites, pour and spread over cream cheese layer. Refrigerate until set.

The following weekend, starting February 10, you can stroll through Carefree’s Artisan Gifts & Chocolate Festival, with live music and performances, Flagstaff’s downtown Chocolate Walk, or Bisbee’s

Chocolate Tasting event. Never underestimate the power of chocolate. Even the Verde Canyon Railroad will blend its wilderness train ride with rich chocolate pastries and luscious hand-dipped delicacies for Romance on the Rails.

If you’re hoping to dazzle or be dazzled, head to Tucson February 9–12 for the 63rd Annual Gem & Mineral Show at the Convention Center. The world’s largest show of its kind features mineral, gem, and jewelry dealers with their sparkling wares. Arizona has a rich Western heritage, and nothing embraces “Old West” traditions like big-time pro

rodeos and parades. Scottsdale and Tucson have roped two of the nation’s premier events this month.

La Fiesta de los Vaqueros is Tucson’s oldest heritage event. On February 18, 19, and 23–26, over 650 cowboys and cowgirls compete for a cut of the $460,000 purse in six exciting rodeo performances like steer wrestling, saddle bronc and bull riding, roping, and barrel racing. Then, at 9 a.m. on February 25, the Tucson Rodeo Parade steps off in front of 150,000 spectators. It’s billed as the world’s longest non-motorized parade, with 150 western-themed floats and buggies, marching musical groups, and Mexican folk dancers. (TucsonRodeo.com)

Farther north, Scottsdale rolls out the 64th Annual Parada del Sol Parade, Trail’s End Festival, and Pro Rodeo. At 10 a.m. on February 13, thousands will watch as the parade kicks off with 100 entrants, including Arabian horses, roughhousing mountain men, U.S. Marshals Posse, Wild West women, and marching bands. After the parade, Old Town Scottsdale will bustle as the Trail’s End Festival unfolds. This block party has three main stages of live music and dancing, along with Western, Native American, and Hispanic villages, plus a Cowboy Kids’ Zone. SUPER BOWL

BREAKFAST BAKE Makes 6 servings

Ingredients 1/2 teaspoon olive oil 1/2 lb. (8 oz.) uncooked breakfast sausage 3 English muffins, cut into one-inch cubes 2 tablespoons butter, melted 1/2 medium onion, chopped 1/2 bell pepper, chopped 6 large eggs 1 cup milk 1/4 teaspoon salt 1/4 teaspoon pepper 1 cup shredded cheddar cheese

Directions Preheat oven to 350° F. In a medium skillet, heat olive oil on medium-high heat. Once hot, add sausage, crumbling with a wooden spoon as it cooks. Cook until golden brown, about five minutes. Drain on paper towel. Place English muffin cubes in the bottom of a greased 8” x 8” baking dish. Drizzle with melted butter, then top with cooked sausage, onion, and bell pepper. In a large bowl, whisk eggs, milk, salt, and pepper. Pour over the top of the casserole. Top with shredded cheese. Bake uncovered for 45 to 50 minutes, or until a knife inserted in the center comes out clean. Let stand for ten minutes before serving.
