    125g unsalted butter200g HIGHLANDER

    Sweetened Condensed Milk250g malt biscuits, crumbed

    180g coloured marshmallows or Eskimo lollies, cut into pieces

    cup desiccated coconut

    1. Melt the butter in a medium saucepan. Stir in the HIGHLANDER Sweetened Condensed Milk. Remove from the heat and cool slightly. Stir in the coloured marshmallows and malt biscuits.2. Turn out onto a sheet of waxed paper sprinkled with coconut and shape into 2 rolls. Roll in the coconut, then roll up in the paper and twist the ends. Refrigerate for approximately 4hoursoruntilfirm.

    3. Cut into slices for serving. Store in a covered container in the refrigerator.

    POTATO SALAD

    6 eggs, hard boiled6 rashers bacon, cooked2 spring onions, chopped6 potatoes, cooked and quartered400g HIGHLANDER Sweetened Condensed Milk1 cup cider vinegar

    WHAT IS SALAD WITHOUT A DRESSING, AND WHAT IS DRESSING WITHOUT HIGHLANDER ?

    DRESSING

    1. Place the HIGHLANDER Sweetened Condensed Milk, salad oil, vinegar, egg yolks, salt, mustard and cayenne pepper in a bowl and beat well to combine.2. Store in the refrigerator. Makes 1 cups.

    POTATO SALAD

    1. Mix eggs, bacon, spring onions and potatoes in a salad bowl and set aside.2. In a separate bowl, mix HIGHLANDER Sweetened Condensed Milk and vinegar, place in the refrigerator for at least 30 minutes to chill.3. Pour dressing over the salad and toss gently.

    150g plain biscuits, crushed80g unsalted butter, melted

    1 tbsp gelatine cup water

    250g cream cheese400g HIGHLANDER

    Sweetened Condensed Milk cup lemon juice

    BASE

    1. Combine biscuit crumbs and butter, press into sides of a 24cm spring form pan, refrigerate whilepreparingfilling.

    FILLING

    1. Sprinkle gelatine over water. Stand 5 minutes. Heat gently to dissolve gelatine.2. Beat cream cheese with an electric beater, mix in lemon juice and HIGHLANDER Sweetened Condensed Milk, then gelatine. Beat until smooth.3. Pour mixture into biscuit base. Refrigerate for at least 60 minutes or until set. Serve with fresh berries and chocolate curls if desired.

    3. Place extra butter, HIGHLANDER Sweetened Condensed Milk and syrup in a medium saucepan. Stir over low heat until smooth. Pour over base. Bake for 20-25 minutes until golden. Cool. 4. Combine NESTL Royal Dark Chocolate and oil, stir until smooth, pour evenly over slice.

    FILLING

    1. Melt butter, HIGHLANDER Sweetened Condensed Milk and golden syrup in a saucepan over low heat, stirring regularly. Cool and spread over base.2. Removetherestofthebasemixturefromrefrigeratorandcrumbleoverthetopofthefilling. Bake in preheated oven for 45 minutes or until tan colour shows through topping. Leave in pantocoolandthencutintofingers.

    1 tbsp gelatine2 tbsp water

    100g NESTL Snowcap White Compound Buttons, melted

    pkt plain biscuits, crushed100g unsalted butter, melted

    125g NESTL Bakers Dark Compound Chocolate, melted

    JELLY TOPPING

    1 pkt raspberry or strawberry jelly crystals

    1 cup boiling water

    BASE1. Grease and line a 28cm x 18cm deep dish with baking paper.2. In a large bowl, combine crushed biscuits, butter and melted NESTL Bakers Dark Compound Chocolate. Mix well. Press into prepared pan and chill in the fridge until set (10-15 minutes).

    FILLING1. Mix gelatine and water in a small heatproof bowl or jug. Heat uncovered in the microwave for 10 seconds on HIGH (100%). Stir and heat for a further 10 seconds. Stir well and allow to cool slightly.2. Using an electric mixer, beat cream cheese and HIGHLANDER Sweetened Condensed Milk until well combined. Add lemon juice and melted NESTL Snowcap White Compound Buttons. Add cooled gelatine mixture and mix well. Spread over base and allow to chill in fridge until set (1-2 hours).

    JELLY TOPPING1. Ignoring the directions on the packet, combine jelly crystals and boiling water in a heatproof jug. Allow to cool at room temperature. Pour over set cheesecake mixture, return to fridge and allow to set (2-3 hours).

    A TRADITIONAL KIWI FAVOURITE.

    3. Using an electric mixer, beat cream cheese and HIGHLANDER Sweetened Condensed Milk untilthickandcreamy.Addeggs,creamandvanilla,beatuntillightandfluffy.

    4. Pour mixture into prepared pan. Bake 1 hours or until just set; refrigerate until required. Serve with whipped cream, if desired.

    1. Grease the base and sides of a shallow 20cm square pan.2. Combine the HIGHLANDER Sweetened Condensed Milk with the icing sugar, coconut and vanillaessence.Mixwell.Ifnecessary,addanotherhalfcupoficingsugartogiveafirm consistency. Press half the mixture into the base of the pan.3. Colour the remaining mixture with the red colouring. Knead until the colour is evenly distributed.4. Pressthepinkmixtureoverthewhite.Coverandchilluntilfirm.Cutintosquares. Store in a covered container in the refrigerator.

    TOPPING

    400g HIGHLANDER Sweetened Condensed Milk

    1 egg1 tbsp lemon zest

    cup fresh lemon juice2tbspplainflour

    1 tsp baking powder

    BASE

    1cupsplainflour

    cup icing sugar150g unsalted butter, melted

    1. Preheat oven to 180C. Grease and line 18cm x 28cm lamington pan.2. Combinefirst3ingredients,mixwell.Pressmixtureintopan.Bakefor15minutes.

    3. Place HIGHLANDER Sweetened Condensed Milk and egg in a bowl, beat well. Add lemon zestandjuice,extraflourandbakingpowder,beatuntilcombined.Pouroverbase. Return to oven, bake further 25-30 minutes until topping is set.4. Allow to cool in pan, refrigerate. Cut into squares and sprinkle with icing sugar before serving.

    Compound Chocolate1 cups frozen berries

    BASE1. Pulsebiscuitsinafoodprocessoruntilfinelychoppedandpourinmeltedbutter.Combinetogether andpressintoa22cmloosebottompanandplaceinfridgewhilepreparingfilling.

    FILLING1. Beat cream cheese until smooth, add HIGHLANDER Sweetened Condensed Milk and icing sugar and beat until smooth.2. In a heat proof mug sprinkle gelatine over lemon juice and leave for 5 minutes.3. Heat mug in microwave until gelatine has dissolved. Cool slightly then beat into cream cheese mixture with cream.4. Divide mixture into two bowls. Melt NESTL Bakers Dark Compound Chocolate and beat into half of the mixture.5. Place spoonfuls of chocolate mixture and plain mixture randomly over the base. Scatter semi-thawed berries in amongst mixture. With a knife swirl the mixtures together to form a marble effect. Continue until all mixture is used. Sprinkle a few extra berries on top to decorate.6. Refrigerate for at least 60 minutes before serving.

    1. Line base of 27cm x 18cm baking pan with baking paper.2. Combine biscuit crumbs, apricots and coconut in a medium bowl.3. Place HIGHLANDER Sweetened Condensed Milk and butter in a medium saucepan. Stir over medium heat until butter is melted and ingredients are combined.4. Pour onto dry ingredients and mix thoroughly. Press mixture into pan and refrigerate until set.5. Pour melted NESTL Bakers Dark Compound Chocolate evenly over slice, allow to set. Cut into squares to serve.

    lightly packed125g butter

    1 tsp brandy

    1. Combine all ingredients in pan, stir over low heat until butter melts and sugar dissolves.2. Bring to boil, simmer 15 minutes, stirring constantly.3. Remove from heat, beat fudge with wooden spoon 10 minutes until thick and grainy.4. Pour fudge into lined 18cm square cake pan, cool.5. When cold cut fudge into squares.

    INGREDIENTS

    cup chopped sultanas cup Crme de menthe200g plain biscuits, crushed300g NESTL Royal Chocolate, melted2 tbsp golden syrup

    1. Marinate sultanas in Crme de menthe for 10 minutes.2. Place biscuit crumbs in a large bowl and add sultanas, Crme de menthe, melted NESTL Royal Chocolate, golden syrup, HIGHLANDER Sweetened Condensed Milk and icing sugar. Mix with a wooden spoon until combined.3. Using moist hands roll the mixture into small balls and then roll in sifted NESTL Baking Cocoa. Set on a tray in refrigerator for 30 minutes.

    275g strawberry or raspberry jam400g HIGHLANDER Sweetened Condensed Milk2 cups desiccated coconut

    1. Preheat oven to 185C. Grease and line a 32cm x 22cm slice pan.2. Creambutterandsugaruntilpaleandfluffy,addvanillaandsiftoverflourandbaking powder. Mix together to form a soft dough and press into slice pan. Spread over jam in an even layer.3. In a large bowl combine HIGHLANDER Sweetened Condensed Milk and coconut. Dot coconut mixture over jam covering as much as possible.4. Bake for 35-40 minutes until golden and base is cooked. Allow to cool completely before slicing.

    INGREDIENTS

    125g unsalted butter2 tbsp golden syrup400g HIGHLANDER

    Sweetened Condensed Milk1 cup brown sugar

    100g NESTL Snowcap White Compound Buttons

    1. Melt butter in pan. Add golden syrup, HIGHLANDER Sweetened Condensed Milk and brown sugar.2. Stir over low heat until boiling, reduce heat, and simmer 10 minutes, stirring constantly.3. Remove from heat, add NESTL Snowcap White Compound Buttons, mix until smooth.4. Pour into foil lined 7cm x 25cm bar pan, refrigerate until set. Cut into squares.

    THIS CREAMY FUDGE IS THE ULTIMATE

    1. Grease and line a 20cm square pan with baking paper. In a heavy based saucepan add NESTL Royal Chocolate, HIGHLANDER Sweetened Condensed Milk and butter. Stir over medium heat untilcombined,takeoffheat,andcool.

    2. Carefully fold in peanuts and marshmallows, pour into prepared pan. Refrigerate for 2-4 hoursoruntilfirm.Cutintosquaresandserve.

    VARIATIONAdd cup maraschino cherries

    PREPARATION TIME: 10 MINUTES

    COOKING TIME:

    1. Preheat oven 180C/160C fan forced. Grease and line three baking trays with baking paper. 2. Using an electric mixer, beat butter, sugar and HIGHLANDER Sweetened Condensed Milk on highspeeduntilpaleandcreamy.Reducespeedtolow,graduallyaddflourandmixuntilthe dough just comes together. 3. Using a wooden spoon, stir in NESTL Milk CHOC BITS. Roll heaped tablespoons of the mixture into balls and place onto baking trays, allowing a little room for spreading. Flatten gently with a fork. 4. Bakeinbatches,about15minutesoruntillightgolden.Standfiveminutesontraysbefore transferring biscuits to a wire rack to cool.

    1 tsp vanilla essence

    1. Combine all ingredients in a medium saucepan and heat gently until melted and smooth.2. Pour mixture into a lined shallow tray and chill at least 4 hours or overnight.3. Remove from tray and cut into squares. Store in the fridge between baking paper.

    PREPARATION TIME: 5 MINUTES + CHILLING TIME COOKING TIME:

    1. Preheat oven to 160C.2. Combine all ingredients and shape heaped teaspoonfuls into balls and place on a lined baking tray. Flatten each ball with a fork.3. Bake on a middle shelf for 10 minutes or until golden. Once cool, store in an airtight container.

    BASE

    1. Placebiscuitsinfoodprocessor,processuntilfinelycrumbed.Addremainingingredients, mixwell.Pressoverbaseandsidesof20cmroundflanpan.Refrigerateuntilfirm.

    2. Preheat oven to 180C. Beat egg yolks with an electric beater until pale. Add HIGHLANDER Sweetened Condensed Milk, lime juice and zest. Beat until smooth. Pour into crumb crust.

    MERINGUE

    1. Beat egg whites until they form peaks. Add caster sugar, continue to beat. Pile on top of lime mixture.2. Bake in preheated oven for 10-15 minutes or until meringue is golden. Cool, then refrigerate for 60 minutes before serving.

    PASTRY1. Preheat oven to 180C. Lightly grease 2 small patty pans.2. Creambutterandsugartogetherinabowluntillightandfluffy.Addeggandbeatwell.Foldinsiftedflour and baking powder. Knead mixture lightly, shape into a ball and refrigerate for at least 15 minutes.3. Onalightlyflouredboard,rolloutthepastryto5mmthickness.Cutinto7cmcirclesandlinepattypans. Prick the base of each lightly with a fork three times. Bake in preheated oven for 10-12 minutes or until lightbrown.Removeandcoolpastrycasesonawirerack,whencold,fillandice.

    FILLING1. Soften butter and add sifted icing sugar, beat until smooth. Add the HIGHLANDER Sweetened Condensed Milk, lemon juice and zest. Beat well.2. Place2teaspoonsoffillingintoeachcase.

    ICING1. Sift icing sugar into a bowl. Add milk and beat until smooth and spreadable (you may need more icing sugar). Spread half of the top of each tart with icing. Allow to set.2. Add NESTL Baking Cocoa to remaining icing. Beat until smooth. Spread chocolate icing over remaining half of each tart. Allow to set.

    4 Eggs320g Banana, mashed300gSelfraisingflour

    4. Spoon mixture evenly into greased and lined 26cm x 32cm baking pan.5. Stir NESTL HIGHLANDER Sweetened Condensed Milk until smooth, drop tablespoons over banana mixture, swirl through. 6. Bake for 40 to 45 minutes until cooked when tested. If desired, serve with NESTL DOCELLO Caramel Mousse cream.

    1. Grease a 28 x 18cm lamington pan. Line base and sides with baking paper, allowing a 2cm overhang at both long ends. 2. Usingafoodprocessor,processbiscuitsuntilfine.Addbutterandprocessuntilwell combined;pressmixturefirmlyoverthebaseofpreparedpan.Refrigeratewhilemaking fillingoruntilthebaseisfirm.

    3. Combine HIGHLANDER Sweetened Condensed Milk, NESTL Bakers Dark Compound and extra butter in a medium saucepan. Stir over low heat until melted and smooth. Pour half over the biscuit base; arrange NESTL ROLO over chocolate and pour over remaining chocolate mixture; shake pan gently to coat; refrigerate until set. Cut into 32 pieces.
