Coconut Snowballs

In a large saucepan, combine butter, yolks, andsugar. Stir constantly over medium heat until butteris melted. Add the dates and continue cooking,

stirring constantly or 5 minutes. Mixture willbecome very thick, remove rom heat, and stir invanilla, pued rice cereal, salt, and pecans. Roll intobite-sized balls, about 1 in diameter. Drop into abowl o coconut, toss and roll to coat each cookieentirely. The cookies are done! Keep in an airtightcontainer or up to a week.

Yield: 3 dozen

1 stick unsalted butter2 large egg yolks2/3 cup sugar1 lb. chopped dates1 tsp. vanilla extract tsp. salt

2 cups pued rice cereal1 cup chopped pecansSweetened shreddedcoconut or coating
