Rack of Lamb—a HoLiday favoRiteAn impressive presentation that is easy to prepare, the rack offers an effortless restaurant quality meal at home. Look for crown roasts during the holidays— two racks curved and tied together to resemble a crown.

appetizeRsThere are plenty of budget-friendly cuts of American lamb to create succulent starters and blissful bites—from versatile ground lamb to fall off the bone lamb ribs. American lamb meatballs are an easy crowd-pleasing appetizer that can be prepared in advance for a stress-free feast.

ameRican Lamb Roasts foR tHe HoLidaysPerfect for relaxed entertaining, American lamb roasts make a great holiday meal for sharing with family and friends. Leftover lamb roast meat is perfect for adding to salads, pastas and sandwiches.

For a holiday party, cook two rack roasts at a time. They will fit side by side in most roasting pans and two racks.

tips Let the lamb roast rest

for 10 to 15 minutes until the internal temperature reaches the ideal temperature. A cooling period will allow the meat’s juices to settle and make carving easy.

Serve lamb roasts family style with carved, sliced meat arranged on a large platter with fresh herbs and roasted vegetables.

Roasted Leg of ameRican Lamb witH feta vinaigRette (8 to 10 servings)Prep time: 15 minutes Marinate time: 8 to 12 hours Cook time: 2-1/2 hours

1 American lamb leg, boneless (6 to 7 pounds)1 pint plain Greek yogurt1 Tbsp curry powder4 cloves minced garlic1 tsp kosher salt

Mix yogurt, curry, garlic and salt; rub over lamb. Refrigerate; marinate overnight.

Place lamb on roasting rack in a roasting pan. Roast at 375°F for approximately 2 hours and 20 minutes, or until the internal temperature reaches desired doneness. Remove from oven; let rest for 15 minutes. Slice to desired thickness; top with Feta Vinaigrette. Serve with roasted fingerling potatoes and green beans.

Feta Vinaigrette1/2 cup juice from 2 lemons2 ounces red wine vinegar1/2 bunch parsley, chopped4 ounces extra virgin olive oilSalt and pepper to taste 1/2 pound feta cheese, coarsely crumbled

In a bowl, mix together lemon juice, vinegar, parsley, oil, salt and pepper. Add the cheese.

pecan cRusted Rack of ameRican LambwitH RosemaRy baLsamic sauce (8 servings)Prep time: 15 minutes Cook time: 30 minutes

2 American lamb racks, frenched 2 Tbsp oil1 tsp salt3 Tbsp coarse grain mustard2 cloves minced garlic3/4 cup fresh bread crumbs3/4 cup toasted and chopped pecans4 Tbsp chopped fresh rosemary, divided4 ounces semi-soft goat cheese, crumbled1 cup balsamic vinegar

Rub lamb with oil and salt. Place in a roasting pan, fat side down. Roast at 425°F for 8 minutes; turn and roast an additional 8 minutes. Remove from oven.

Combine mustard, garlic, bread crumbs and 2 tablespoons of the rosemary and cheese. Spread over lamb. Return to oven; cook 15 minutes, until crust is golden brown. Remove from oven; cover with foil to keep warm.

In saucepan, combine vinegar and remaining 2 tablespoons of rosemary; simmer for 6 to 8 minutes or until reduced to half.

Slice lamb into individual chops; drizzle sauce over chops. Serve with roasted butternut squash.
