Mix cheese, baking mix, toma- to, cucumber, sprouts, mayonnaise, egg and salt. Spread cheese mixture evenly over the bread. Bake on ungreased baking sheet until puffy and golden grown ñ about 10 minutes. Garnish with avocado and tomato slices, if desired. Serve immediately. Makes 6 open-face sandwiches. VEGETARIAN PIZZA 2 cups Bisquick baking mix 1/2 cup water 1 can (16-oz.) refried beans 1 can (8-oz.) tomato sauce 1/2 cup chopped onions 1/2 teaspoon Italian seasoning 1/4 teaspoon garlic powder 1 cup grated mozzarella cheese 1 cup grated Cheddar cheese 1 can (2-1/4-oz.) sliced ripe olives, well drained (1/2 cup) 1 jar (2-1/2-oz.) sliced mushrooms, drained 1/4 cup chopped green peppers 1/4 cup grated Parmesan cheese Heat oven to 425 degrees. Lightly grease a 12-inch pizza pan. Mix baking mix and water until soft dough forms; beat vigor- ously for 20 strokes. Pat dough in pan with floured hands, forming 1/2-inch rim. Mix the refried beans, tomato sauce, onions, Italian seasoning and garlic powder and spread over the dough. Top with remaining ingredients. Bake uncovered until crust is brown ñ 18 to 20 minutes. Serve with taco sauce, if desired. Serves 6. LAYERED SPINACH SUPREME 1 cup Bisquick baking mix 1/4 cup milk 2 eggs 1/4 cup finely chopped onions 1 package (10-oz.) frozen chopped spinach, thawed and well drained 1/2 cup grated Parmesan cheese 4 ounces Monterey Jack cheese, cut into Ω-inch cubes 1 carton (12-oz.) creamed cottage cheese 1/2 teaspoon salt 2 cloves garlic, crushed 2 eggs Heat oven to 375 degrees. Grease rectangular baking dish-12x7-1/2x2-inches. Mix baking mix, milk, eggs and the onions and beat vigorously - 20 strokes. Spread in dish. Mix remaining ingredients and spoon evenly over the batter in dish. Bake until set - about 30 minutes. Let stand 5 minutes before cutting. Serves 8. BEER BATTER FISH 1 pound fish fillets or cooked large shrimp 3 or 4 tablespoons Bisquick baking mix 1 cup Bisquick baking mix 1/2 teaspoon salt 1 egg 1/2 cup beer Heat vegetable oil (1-1/2-inches) in a heavy saucepan or deep fat fryer to 350 degrees. Lightly coat fish with 3 to 4 tablespoons baking mix. Mix 1 cup baking mix, salt, egg and beer until smooth. Dip fish into batter, letting excess drip into bowl. Fry until golden brownóabout 2 minutes on each side. Drain on paper towels and serve immediately. Serves 4. YOGURT & DILL BREAD 2 cups Bisquick baking mix 1 carton (8-oz.) unflavored yogurt or sour cream 2 tablespoons instant minced onions 1 tablespoon dill seed Heat oven to 400 degrees. Grease 9-inch pie plate or square pan-8x8x2-inches-set aside. Combine all ingredients and blend until soft dough forms. Bake until wooden pick inserted in center comes out clean - about 20 minutes. Cool for 10 minutes before cutting into wedges or squares. Serves 8. ARTICHOKE & CRAB SPREAD Great with a tossed salad. 1 can (14-oz.) artichoke heart quarters, drained and coarsely chopped 1 package (8-oz.) cream cheese, cut into cubes 1 cup imitation crabmeat 1/2 cup grated Parmesan cheese 4 medium green onions (1/4 cup), sliced 1 tablespoon lemon juice French baguette or rye bread slices Spray inside of a slow cooker or crock pot with cooking spray. Mix all ingredients except the bread in the cooker. Cover and cook on LOW for 2 or 3 hours or until cream cheese is melted. Stir until cheese is smooth. Scrape down side of cooker to help prevent edge of spread from scorching. Serve with bread slices. Spread will hold on LOW heat setting up to 1 hour. Great for appetizers (serving 24) or to serve with meal. APRICOT GLAZED CARROTS 2 pounds baby-cut carrots 1 medium sweet onion (Vidalia)onion, thinly sliced 1/4 teaspoon salt 1/3 cup honey 1/3 cup apricot preserves 2 tablespoons chopped fresh parsley Place the carrots and onions in slow cooker/crock pot and sprinkle with salt. Cover and cook on LOW for 9 or 10 hours. Discard liquid in cooker. Combine the honey and preserves in a small bowl and pour over the carrots in crock pot. Increase heat setting to HIGH, cover, and cook 15 minutes longer or until hot. Sprinkle with parsley before serving. Carrots will hold on LOW for 2 hours. Serves 8 to 10. Rinse with cold water and drain well. Place pasta in a large bowl, add vegetables and toss with the salad dressing to coat well. Cover and refrigerate for at least 2 hours before serving.
