The other day my old buddy Bub and I decided to makesome room in our freezers Between us we came up with apile of frozen trout and salmon filets After frying up a fewwe decided to smoke the rest There are so many brine reci-pes out there that Irsquoll leave that to the individual reader In theshort form mine includes water salt garlic powder onionpowder and Old Bay Irsquove seen all kinds of recipes that call forseveral days of brining but Irsquove found that overnight is plentyWhen it comes to wood for smoking fish I prefer hickoryabove all others At any rate the fish came out nothing shortof delicious I think that propane is the best heat source as itis quick clean and easy

Personally I absolutely love sashimi (straight raw fish) andsushi which is raw fish wrapped in rice When cleaning out afreezer the temptation might arise to give one of the afore-mentioned a try DONrsquoT DO IT If you eat raw freshwaterfish even if it has been frozen you will get parasites mostnotably tapeworms Even saltwater fish can be tricky Theonly safe way to eat this delicious food is to get it from alicensed chef

A lot of hunters might come across some squirrels whenthey give the freezer a spring cleaning Years ago when I wasstill teaching one of my students brought me some squirreljerky It was absolutely delicious When I asked him for therecipe he said that you can use the same recipe you woulduse for any other jerky He was right Give it a try I suspectthat rabbit or groundhog would work just as well

Now we are going to stray just a bit from topic althoughfreezer cleaning out is still involved A couple of years ago Icame across an octopus which is one of my very favoritefoods in the freezer I had purchased it along with somesquid and frog legs on the Strip District of Pittsburgh Some-how it managed to escape my plate I thawed it and grilled itbriefly It was great By the way octopus chowder is also atruly wonderful taste treat You know I think it is sad that alot of people automatically rule out certain foods withoutever trying them just because of what they are Irsquom glad thatI do not subscribe to that school of thought If I did I wouldhave missed out on some truly great eating

By the time you read this it will be only a few days until thefirst day of trout season here in our part of the state Eversince I retired this has become one of my favorite days of thewhole year For whatever reason we always seem to start outat Buffalo Creek I guess it goes back to fishing with my dadwhen I was a kid He loved trout fishing and always likeddoing it close to home Sometimes I do well and sometimesI donrsquot but the traditional nature of it always feels good Youknow I have no quarrel with catch and release anglers butfor my part there is no better breakfast than trout filets homefries and eggs

On another front there has been a disturbing commercialappearing on local television It features a guy pretending tobe a hunter sitting on the tailgate of a pickup truck advocat-ing gun control The ad is sponsored by big city mayors It isobviously intended to drive a wedge between hunters andother gun owners Donrsquot let it happen

Dickrsquos ThoughtsA tough couple of days for Pitt fans First Rushel Shell one

of the top running backs in the country decided he wanted totransfer Shell would have been the number 1 back on a teamthat will run the ball the vast majority of the time is rumoredto be heading west He could end up with either Fraud Gra-ham at ASU or with WVU favorite Rich Fraudriguez at Ari-zona There have been a few red flags around Shell as he wassuspended for game 1 last year and has a bad reputation ofnot wanting to work hard in the off season and at practiceThe loss will hurt Pitt a little but if even half the rumors onShell are true it might be addition by subtraction

After the Shell news rocked Pittsburgh next came the newsthat Steven Adams was leaving the Panthers basketball teamAdams is the first freshman one and done that Pitt has hadThough his numbers were far less than impressive the NBAdrafts players on potential and a 7 footer that can move likeAdams will certainly go in the first round According to re-ports Adams did not want to leave Pitt but he comes from ahuge family in New Zealand and the family can certainly usethe financial security that Adams will get in June The loss ofAdams will certainly hurt the Panthers next year but manyfans complain about the players Jamie Dixon recruits and ifhe keeps bringing in big name talent Adams wonrsquot be the firstone and done Panther

For all who think Steven Adams is making a mistake goingto the pros Remember Mark Blount a former Panther 7 footerwho turned pro after 2 years at Pitt Blount parlayed hisheight into a nice career in the NBA Even though most of youeither donrsquot remember him or never heard of him Blountmade $44 million while playing in around 600 NBA games Itis hard to blame a guy for skipping college for that kind ofmoney

The Pirates stumbled out of the gate losing their first seriesto the Cubs Once again the Pirates bats were as cold as thetemperature at PNC Park Maybe if the Pirates played a littlemore than every other day and for about 5 innings in theirpre- season they might be ready to go when the first pitch isthrown

The Giants recently signed Buster Posey to a 9 year deal for$167 million If Posey plays every game during those 9 yearshe will be paid $114540 per game Parents get those ballsand bats out for the kids

Itrsquos the first days of Apriland by all accounts it has beena good maple sap and syrupseason After a disappointing2012 where all across theMaple syrup region which inthe US includes all of the NewEngland States New YorkPennsylvania Ohio Michiganand Wisconsin productionwas down from previousyears This was due toweather being consideredtoo warm and ended the sea-son in mid-March for manyMaple syrup production in2012 totaled 191 million gal-lons down 32 percent from2011 The number of tapswas estimated to be 977 mil-lion That represents lots oftrees and hard work to gofrom tree to pancake andhave less product to marketAs always Vermont led allstates in production with750000 gallons Pennsylva-nia ranked 5th in 2012 at96000 gallons producedThe average price per gallonwas $3790 Locally syrupshould sell this season over $5000 per gallon In 2013 theseason started in our area inmid-February and for some

trees are expected to producethrough the week end Ac-cording to spokespersons atRiverStone Farm and OldState Farms local area pro-ducers both are havingrecord syrup production sea-sons ldquoIt seemed to be like twoseasons sap running in Febru-ary and into March with a lulland now with the rightweather is finishing strongrdquoobserved Joe Burkett ownerof Old State Farms He ex-pects to boil through theweekend

It may seem ironic thatsomebody who wants to helpothers take the Church moreseriously is using humor to doit but itrsquos the perfect tactic forWeber who incorporatesChristian joy into his life in apalpable way He hopes thatFearing the Stigmata reachesreaders from age 17 to 70that it conveys his devotion tobeing Catholic and that it caninspire others in their ownwalk of faith He said ldquoI thinkthe best way to educate some-one about something isthrough story I can tell youabout living my Catholic lifeor I can show you and Irsquove al-ways been trying to showrdquo

In fact a poll by the Ameri-can Academy of PediatricDentistry reveals that nearlythree quarters of parents(70) wait until their chil-dren are three years old be-fore scheduling a dental ap-pointment Dentists recom-mend that parents scheduletheir childrsquos first dental examby age one or within sixmonths of the eruption of thefirst baby tooth

Simplicity Husqvarna Echo Snapper

The other day my old buddy Bub and I decided to makesome room in our freezers Between us we came up with apile of frozen trout and salmon filets After frying up a fewwe decided to smoke the rest There are so many brine reci-pes out there that Irsquoll leave that to the individual reader In theshort form mine includes water salt garlic powder onionpowder and Old Bay Irsquove seen all kinds of recipes that call forseveral days of brining but Irsquove found that overnight is plentyWhen it comes to wood for smoking fish I prefer hickoryabove all others At any rate the fish came out nothing shortof delicious I think that propane is the best heat source as itis quick clean and easy

Personally I absolutely love sashimi (straight raw fish) andsushi which is raw fish wrapped in rice When cleaning out afreezer the temptation might arise to give one of the afore-mentioned a try DONrsquoT DO IT If you eat raw freshwaterfish even if it has been frozen you will get parasites mostnotably tapeworms Even saltwater fish can be tricky Theonly safe way to eat this delicious food is to get it from alicensed chef

A lot of hunters might come across some squirrels whenthey give the freezer a spring cleaning Years ago when I wasstill teaching one of my students brought me some squirreljerky It was absolutely delicious When I asked him for therecipe he said that you can use the same recipe you woulduse for any other jerky He was right Give it a try I suspectthat rabbit or groundhog would work just as well

Now we are going to stray just a bit from topic althoughfreezer cleaning out is still involved A couple of years ago Icame across an octopus which is one of my very favoritefoods in the freezer I had purchased it along with somesquid and frog legs on the Strip District of Pittsburgh Some-how it managed to escape my plate I thawed it and grilled itbriefly It was great By the way octopus chowder is also atruly wonderful taste treat You know I think it is sad that alot of people automatically rule out certain foods withoutever trying them just because of what they are Irsquom glad thatI do not subscribe to that school of thought If I did I wouldhave missed out on some truly great eating

By the time you read this it will be only a few days until thefirst day of trout season here in our part of the state Eversince I retired this has become one of my favorite days of thewhole year For whatever reason we always seem to start outat Buffalo Creek I guess it goes back to fishing with my dadwhen I was a kid He loved trout fishing and always likeddoing it close to home Sometimes I do well and sometimesI donrsquot but the traditional nature of it always feels good Youknow I have no quarrel with catch and release anglers butfor my part there is no better breakfast than trout filets homefries and eggs

On another front there has been a disturbing commercialappearing on local television It features a guy pretending tobe a hunter sitting on the tailgate of a pickup truck advocat-ing gun control The ad is sponsored by big city mayors It isobviously intended to drive a wedge between hunters andother gun owners Donrsquot let it happen

Dickrsquos ThoughtsA tough couple of days for Pitt fans First Rushel Shell one

of the top running backs in the country decided he wanted totransfer Shell would have been the number 1 back on a teamthat will run the ball the vast majority of the time is rumoredto be heading west He could end up with either Fraud Gra-ham at ASU or with WVU favorite Rich Fraudriguez at Ari-zona There have been a few red flags around Shell as he wassuspended for game 1 last year and has a bad reputation ofnot wanting to work hard in the off season and at practiceThe loss will hurt Pitt a little but if even half the rumors onShell are true it might be addition by subtraction

After the Shell news rocked Pittsburgh next came the newsthat Steven Adams was leaving the Panthers basketball teamAdams is the first freshman one and done that Pitt has hadThough his numbers were far less than impressive the NBAdrafts players on potential and a 7 footer that can move likeAdams will certainly go in the first round According to re-ports Adams did not want to leave Pitt but he comes from ahuge family in New Zealand and the family can certainly usethe financial security that Adams will get in June The loss ofAdams will certainly hurt the Panthers next year but manyfans complain about the players Jamie Dixon recruits and ifhe keeps bringing in big name talent Adams wonrsquot be the firstone and done Panther

For all who think Steven Adams is making a mistake goingto the pros Remember Mark Blount a former Panther 7 footerwho turned pro after 2 years at Pitt Blount parlayed hisheight into a nice career in the NBA Even though most of youeither donrsquot remember him or never heard of him Blountmade $44 million while playing in around 600 NBA games Itis hard to blame a guy for skipping college for that kind ofmoney

The Pirates stumbled out of the gate losing their first seriesto the Cubs Once again the Pirates bats were as cold as thetemperature at PNC Park Maybe if the Pirates played a littlemore than every other day and for about 5 innings in theirpre- season they might be ready to go when the first pitch isthrown

The Giants recently signed Buster Posey to a 9 year deal for$167 million If Posey plays every game during those 9 yearshe will be paid $114540 per game Parents get those ballsand bats out for the kids
