Culinary Research & InnovationCultivating culinary leaders and food innovation through applied research
The Culinary Research & Innovation program at Red River College provides opportunities for students and chef
instructors to engage in applied research projects with the food industry to bring culinary creativity and skills to
various stages of food product development and commercialization.
Located in Winnipeg’s historic Exchange District, the Paterson GlobalFoods Institute (PGI) is home to the
College’s School of Hospitality and Culinary Arts. In this state-of-the-art teaching facility, students acquire skills in
professional baking and pâtisserie, hotel and restaurant management, and professional culinary arts.
Augmenting the research and innovation process for Manitoba food producers, the College’s Culinary Research
& Innovation initiative complements Manitoba’s existing strengths in food research and development by making
its premier recipe and food service application development, testing and demonstration platform available to the
food production industry.
The College’s Culinary Research & Innovation program supports food production firms by providing the following
services and opportunities:
• Product ideation
• Recipe development
• Food service application testing and development
• Food product consumer research trials
• Clinical trial recipe and meal development
• Food service technology development
Each project is designed to meet the specific needs of the industry partner. Culinary researchers work with the
company to create and improve products with a goal to create new economic opportunities for the companies.

The OpportunityMSPrebiotics Inc. developed a prebiotics supplement to support a healthy gut and wanted to explore
international markets to sell their additive.
The College’s IRAP-funded International Market Intelligence service is geared toward small and medium-sized
enterprises. A team of skilled College students, faculty and staff assessed the international prebiotics market,
developed a report, and presented their findings to the company.
This service helped MSPrebiotics identify potential international markets. Forging this relationship between the
College and MSPrebiotics led to new culinary developments as well:
Culinary Research & InnovationMSPrebiotics conducted clinical research at St. Boniface Hospital to prove the effects of their prebiotic on gut
and heart health.
With the health benefits confirmed, the Culinary Research & Innovation team worked with the supplement to
develop student-generated recipes under the guidance of our Research Chef. The results were delicious.
The resulting recipes were used for MSPrebiotic’s inaugural tradeshows and product launches, and are now
shared along with their supplement.

They also help you to adjust more quickly and provide you with a better understanding of Canadian culture. Other Renting AlternativesOnce you find a suitable place to live, most landlords will ask you to sign a lease. TransportationWinnipeg is the centre of Canada and accessible from any major airport worldwide. The Winnipeg International Airport is centrally located and is a short cab ride to the Red River College campuses and nearby housing.
Winnipeg TransitFull-time Red River College students enrolled in credit courses leading to a recognized degree or diploma are entitled to discounted bus rates. Students pay $80.10 (2018 rate) for a monthly pass, which gives them unlimited use while enrolled at RRC. Student bus passes can be purchased at the College with valid student identification.
